GRANDMA'S SUGAR COOKIES
This is one of my great-grandmother's recipes that I received years ago from one of my great-aunts. We bake these cookies for holidays and other special occasions. -Kristy Deloach, Baton Rouge, Louisiana

Yield 6 dozen 2-1/2-inch cookies or 1-1/2 dozen 4-1/4-inch cookies.

Steps:
- In a large bowl, cream the sugar, butter, vanilla and salt. Add eggs and mix well. Combine the flour, baking powder and baking soda; add to creamed mixture. Chill until firm, about 1 hour., On a floured surface, roll dough to 1/4-in. thickness. Cut shapes with cookie cutters; place on greased baking sheets. Bake at 375° for 7-12 minutes (depending on size) or until light golden brown. Remove to wire racks to cool completely., In a large bowl, combine the confectioners' sugar, extract and enough milk to achieve desired consistency. Tint with food coloring. Decorate cookies as desired.

THUMBPRINT COOKIES I
I usually make these around Christmas.

Steps:
- Preheat oven to 300 degrees F. Grease cookie sheets.
- Separate egg, reserving egg white. Cream butter or margarine, sugar, and egg yolk.
- Add vanilla, flour and salt, mixing well.
- Shape dough into balls. Roll in egg white, then walnuts. Place on cookie sheets about 2 inches apart. Bake for 5 minutes.
- Remove cookies from oven. With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 8 minutes.

BIRDS' NESTS IV
Steps:
- Separate the eggs. Chop the nuts fine.
- Cream together 1 cup softened butter and sugar. Add the yolks, and beat well. Add the flour, and mix well.
- Make small balls out of dough. Roll balls in egg white, and then in the nuts. Place balls on greased cookie sheets, and press center of cookie with thumb. Bake at 350 degrees F (175 degrees C) for 8 minutes. Press center of cookie again, bake until lightly browned 4 to 6 minutes. Cool cookies on racks.
- To make frosting, begin by blending the water, shortening, vanilla, and 1/4 cup softened butter or margarine together thoroughly. Slowly add confectioners' sugar, and mix until smooth and creamy. More water may be needed to make desired consistency.

- Cream together sugars, eggs, peanut butter, vanilla and butter until smooth.
- Combine oatmeal, flour and baking soda.
- Add to butter mixture.
- Mix well.
- Mix in remaining ingrediants.
- Roll into balls, place on greased cookie sheets and flatten with a fork.
- Bake at 350 Degrees farenheit.

Steps:
- Mix together sugar, margarine, peanut butter, and rice krispies together and form into balls. (As large/small as you want them. I make them smaller than a golf ball.).
- In a double boiler, melt the chocolate bar and chips together and add paraffin wax, may add more wax if needed.
- Once chocolate is melted, dip the balls in chocolate and place on wax paper to cool.
- After the balls settle, store them away. We keep them in the refrigerator or freezer during the holidays.

GRANDMA BETTY'S LASAGNA RECIPE

Steps:
- Brown meat slowly. Spoon off excess fat. Add next six ingredients. Simmer uncovered till thick, about 45 minutes stirring occasionally. Cook noodles, rince in cold water. Combine ricotta, eggs, salt, pepper, parsley, parmesan. Place half noodles in 13x9x2 inch baking dish; spread on half of the cheese-egg mixture, half mozzarella, half meat sauce. Repeat layers. Bake inmoderate oven 375 for 30 - 45 minutes. Let stand 10-15 minutes before cutting in squares.
