Calling all chocolate lovers and novice bakers: This one's for you. These chocolate drop cookies are straight from grandma's recipe box, but they definitely don't require her wealth of baking expertise to make yourself. Drop cookies, made from soft dough and dropped onto a baking sheet in balls, are a simple, old-fashioned treat that are prime for personalization. If you like nuts, add them in. Prefer mint chocolate chips to semi-sweet chips? Feel free to substitute. No matter what you add, you're sure to end up with a soft, cake-like cookie that packs on the chocolate flavor. Plus, once you pile on the chocolate icing, it's nearly impossible to have just one.To drop the cookies on your baking sheet, try using a tablespoon cookie scoop. Not only will it help keep your fingers clean, but it will also make sure your cookies come out even.

1/2 cup shortening
1 egg
1 cup sugar
3/4 cup buttermilk
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 cup cocoa
1 3/4 cups flour
1/2 teaspoon salt
1-2 cups semi-sweet chocolate chips
1 cup nuts (optional)
1/4 cup butter, softened
2 ounces cream cheese, softened
1 teaspoon vanilla
2 tablespoons cocoa
1 1/4 cups powdered sugar
1 tablespoon milk

Steps:

  • Make the Cookies: Mix shortening, sugar, and egg thoroughly. Stir in buttermilk and vanilla. Sift in dry ingredients and stir. Stir in chocolate chips and nuts if desired. Drop cookies onto prepared baking sheets using a tablespoon cookie scoop. Space cookies 2 inches apart. Bake for 8-10 minutes at 375°.
  • Make the Frosting: Cream together cream cheese and butter. Add vanilla and cocoa. Beat until smooth. Add powdered sugar, and mix until smooth. Add milk, adding more if needed for desired consistency. Spread frosting over cookies once completely cooled.

1 cup (2 sticks) salted butter, softened, plus more for greasing the baking sheets
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
2 cups old-fashioned (rolled) oats
1 cup Granola, recipe follows
1/2 cup chopped dried apricots
1/2 cup chocolate chips
6 cups old-fashioned (rolled) oats
1/4 cup vegetable oil
3 tablespoons salted butter, melted, plus more for greasing the baking sheet
1 teaspoon kosher salt
1 cup packed brown sugar
1/4 cup honey
2 tablespoons molasses
1 tablespoon vanilla extract
1/2 cup finely chopped pecans
1/2 cup shelled sunflower seeds
1/4 cup roughly chopped almonds

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric stand mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs 1 at a time, scraping the bowl after each.
  • Mix together the flour, salt and baking soda in a medium bowl. Add it to the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats, Granola, apricots and chocolate chips until just combined.
  • Use your preferred-size cookie scoop (or a regular spoon) to drop portions of dough onto lightly greased baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, just cook a little longer!
  • Let the cookies cool slightly on the baking sheets, then transfer them to a plate for serving.
  • Preheat the oven to 325 degrees F.
  • In a bowl, toss the oats with the oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 12 minutes, shaking the pans twice during the cooking time and making sure the oats don't burn. Set aside to cool a bit.
  • In a medium saucepan, combine the brown sugar, honey and molasses. Stir the mixture until combined, then heat over medium heat, stirring, until barely bubbling. Stir in the vanilla extract.
  • Toss together the toasted oats, pecans, sunflower seeds and almonds in a large bowl. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
  • Thoroughly grease a baking sheet or line it with greased foil. Spread the mixture onto the baking sheet and bake until golden, about 30 minutes. Let cool, then use a fork to make clusters. Store in a jar until ready to use.

1 cup raisins
1 teaspoon all-purpose flour
¼ cup sugar
1 teaspoon vanilla extract
½ teaspoon lemon juice
1 cup boiling water
2 ¾ cups all-purpose flour
¾ cup sugar
¾ teaspoon salt
½ cup shortening, melted
½ cup molasses
1 teaspoon vanilla extract
1 teaspoon baking soda
⅓ cup boiling water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss raisins and 1 teaspoon flour together in a saucepan until raisins are coated in flour. Stir 1/4 cup sugar, 1 teaspoon vanilla extract, and lemon juice into raisins. Pour 1 cup boiling water over raisin mixture; bring mixture to a boil. Cook, stirring constantly, until raisins start to break down and mixture thickens, 5 to 10 minutes. Remove from heat and cool to room temperature.
  • Stir 2 3/4 cups flour, 3/4 cup sugar, and salt together in a bowl.
  • Whisk melted shortening and molasses together in another bowl; stir in remaining vanilla extract. Dissolve baking soda in 1/3 cup boiling water. Stir soda water into molasses mixture until mixture foams and is well-combined. Stir flour mixture and molasses mixture together in a large bowl until a stiff dough forms.
  • Divide dough into 2 balls; 1 dough ball for the bottom cookie rounds and 1 ball for the top cookie rounds. Cover 1 dough ball with a damp paper towel; roll remaining dough ball out to 1/8-inch thickness. Cut dough into rounds using the top of a glass or a round cookie cutter. Place these bottom rounds 2-inches apart on a baking sheet. Top each dough round with 1 tablespoon of raisin filling mixture.
  • Roll out remaining dough ball to 1/8-inch thickness and cut into rounds using the same cutter. Moisten fingers slightly with water and carefully work each top round from the center outwards until each is about 1/4-inch larger around than the bottom round. Working from one edge, place top round over bottom round and filling, pressing firmly to seal the cookie. Lightly press down tops of cookies to settle filling in the pocket.
  • Bake in the preheated oven until cookie is set, 10 to 12 minutes. Cool briefly on the baking sheet before transferring to a wire rack to cool completely.

GREAT GRANDMA'S SOUR CREAM DROP COOKIES

This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.
