GRANDMA FLORENCE'S APPLESAUCE CAKE

Going to let the first recipe I post be one of my grandmas! She's why I enjoy cooking so much. I remember always looking forward to going to her house because we'd always end up in the kitchen together. This was a holiday favorite and she'd always make two or three so everyone was able to get some. So moist and delicious.

3 c flour
4 tsp baking soda
2/3 c cocoa powder
1/2 tsp salt
2 c sugar
6 Tbsp butter, melted
3 1/2 c applesauce
1/2 tsp ginger
1/2 tsp clove
2 tsp cinnamon
2 c raisins
1 c chopped nuts

Steps:

  • 1. Mix or Sift dry ingredients together.
  • 2. Add melted butter and applesauce.
  • 3. Mix all ingredients together well and pour into a greased bunt pan.
  • 4. Bake at 350 for about one hour or until toothpick comes out clean.

This was made by my grandmother every Holiday. She would make three or four of these at Thanksgiving and Christmas. Her mom, Grandma Florence, made these for her when she was growing up. It has been passed down now to me, the fourth generation. Enjoy.

3 cups flour
4 teaspoons baking soda
2/3 cup cocoa
1/2 teaspoon salt
2 cups sugar
6 tablespoons butter (melted)
3 1/2 cups applesauce
1/2 teaspoon ginger
1/2 teaspoon clove
2 teaspoons cinnamon
2 cups raisins
1 cup nuts

Steps:

  • Mix or sift dry ingredients together.
  • Add butter butter and applesauce.
  • Mix all this together well.
  • Pour into a greased tube pan.
  • Bake at 350 for about an hour or until toothpick comes out clean.

1/2 cup butter
1 teaspoon cinnamon
2 cups sugar
1/2 teaspoon nutmeg
2 eggs
1/4 teaspoon allspice
2 1/2 cups sifted all-purpose flour
1 1/2 cups applesauce
1 1/2 teaspoons baking soda
1/2 cup raisins
1 teaspoon salt
1/2 cup pecans

Steps:

  • Cream butter and sugar till light.
  • Add eggs, beating well after each addition.
  • Sift dry ingredients together and add to creamed mixture alternately with applesauce.
  • Stir in raisins and pecans.
  • Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
  • Bake at 350 F about 45 minutes to till done.
  • Cool in pan.
  • (an additional 1/3 cup raisins can be substituted for the 1/2 cup of pecans, if desired).

Grandma used to bring this cake to picnics and potlucks. It travels well, keeps well, and holds together if you're eating with your fingers. My mother makes it for my father's birthday every year.

1 cup butter
2 cups sugar
2 eggs
1 teaspoon vanilla
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
3 tablespoons cocoa
2 cups applesauce
1 cup raisins
1/2 cup walnuts or 1/2 cup pecans, chopped

Steps:

  • Cream together butter and sugar.
  • Add eggs and vanilla.
  • Dust raisins in cocoa and set aside.
  • Mix in dry ingredients and applesauce.
  • Stir in raisins and nuts.
  • Grease and dust a 9" tube pan or bundt pan with cocoa.
  • Bake at 350 degrees for 70-80 minutes, until cake tests done with a toothpick.
  • Cool slightly before removing from pan.
  • Frost with Glossy Chocolate Icing #90756.

3/4 cup raisins
1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, cloves and nutmeg
1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.
