GRANDMA MARONIS MEATBALLS 100 YEAR OLD RECIPE

Steps:
- Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
- Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
- Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!
GRANDMA'S CHRISTMAS MEATBALLS

Steps:
- Mix ground chuck, evaporated milk, onion soup mix, bread crumbs, and 1 tablespoon Worcestershire sauce together in a bowl. Refrigerate for 1 hour. Form approximately 40 small meatballs and place on a baking sheet.
- Set the oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil meatballs until just browned, 2 to 3 minutes. Turn meatballs over and continue broiling until browned on other side, about 2 minutes more.
- Transfer meatballs to a slow cooker.
- Combine ketchup, brown sugar, port wine, and 1 tablespoon Worcestershire sauce in a saucepan over medium heat. Cook and stir until dissolved, about 2 minutes. Pour over the meatballs in the slow cooker. Cook on High until meatballs are no longer pink in the middle and the sauce is thick, at least 1 hour.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.

This was one of my mother's recipes for Christmas cookies. These moist and crisp cookies are fun and easy to make. These cookies get better over time when the flavors blend together. Enjoy.

Steps:
- Melt butter and sugar carefully.
- Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
- Add milk and salt into well beaten eggs and stir into hot date mixture.
- Boil mixture 2 minutes.
- Add vanilla and nuts.
- Let cool, then add Rice Crispies and stir.
- Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.

- In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. - In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.

GRANDMA'S BALLS
Our grandmothers had some balls-and we don't mean any disrespect! Chicken liver and matzoh are the secret ingredients to this Jewish soul-food ball. The trick is coaxing all the sweet goodness from the onions. Well-browned onions in which the sugars are caramelized are the secret to many a Jewish dish, and here's where low and slow are key. You don't want them blackened or burned-as your grandma would say, "Have a little patience."
Yield Makes about 2 dozen 1 1/2-inch meatballs

- Preheat the oven to 450°F. Drizzle 2 tablespoons of the olive oil into a 9 × 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
- Heat the remaining 3 tablespoons olive oil in a large frying pan over medium-high heat. Add the onions and stir frequently until they are well browned, but not burned, 8 to 10 minutes. Turn down the heat to low and allow the pan to cool for 3 minutes. Add the parsley and ketchup, stirring to incorporate. Transfer the mixture to a small bowl and place in the refrigerator to cool.
- When the onion mixture is completely cool, combine it with the ground beef, chicken liver, matzoh, salt, bread crumbs, and eggs in a large mixing bowl and mix by hand until thoroughly incorporated.
- Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
- Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
- Allow the meatballs to cool for 5 minutes in the baking dish before serving.
GRANDMA MARYELLEN'S CHRISTMAS DATE BALLS
The first time I ever had these I must've eaten half a dozen one after the other! They are a fabulous little ball of wonder and look and even TASTE like Christmas! Steps:
- In dutch oven, or heavy bottomed pot, melt butter over medium heat. Watch, don't brown. Stir in dark brown sugar and dates. Stir til melted a little. Remove from heat and add egg whisking in *QUICKLY* so you don't scramble the egg. Whisk til mixed well. Return to heat and stir constantly til boiling. Boil and stir one minute. Remove from heat, add rest of ingredients, cool til cool enough to handle. Roll into balls. Roll in powdered sugar. Makes 3-4 dozen depending on size. 1 - 1 1/2" balls. Store airtight. Freezes well.
