1 head cauliflower, broken into florets
¼ teaspoon salt
1 egg, beaten
1 cup all-purpose flour
1 cup milk
1 tablespoon vegetable oil

Steps:

  • Heat frying oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Toss cauliflower florets with salt in a bowl. Stir egg and vegetable oil together in a bowl; whisk flour and milk into egg mixture until batter is smooth. Working in batches, drop several pieces of cauliflower into batter and stir to coat.
  • Working in batches, fry battered cauliflower pieces in preheated oil until they rise to the top of the oil and float, 2 to 4 minutes. Carefully turn pieces over and continue frying until golden brown, about 2 minutes more.

1 large cauliflower

Steps:

  • Cut away the thick stem at the base of the cauliflower and remove the green leaves.
  • Break the florets off the center core and cut the core into 1" cubes.
  • Wash the florets and cubes under cold running water.
  • In a 3 to 4 quart enameled or stainless steel saucepan, bring 1 quart of water and the salt to a boil over high heat.
  • Drop in the cauliflower and cook briskly, uncovered, for 10 minutes, or until the pieces are tender but still somewhat resistant to the point of a small, sharp knife.
  • Drain in a sieve or colander.
  • In a heavy 10" to 12" skillet with a deep frying thermometer, or in an electric skillet, heat 1" or 2" of oil until it reaches a temperature of 375 degrees Fahrenheit.
  • Pat the cauliflower completely dry with paper towels.
  • Fry a dozen or so pieces at a time in the hot oil for about 15 minutes, or until golden brown on all sides.
  • As they brown, remove them with a slotted spoon and drain on paper towels.
  • Serve hot or at room temperature covered with taratoor.

1 tablespoon milk
1/4 teaspoon salt

This is a dish that sounds odd but has long been one of my faveorites. The grandma in question is my great grandmother who apparently came up with the recipe (and published in just about every church cookbook I have found) but my memories are of my nana making it for me every time I was at her place for an evening meal. I have tried this with low fat mayo and with splenda and it works just fine for me that way but I am going to give the original recipe.

2 -3 slices bacon
1 tablespoon sugar
1 tablespoon mayonnaise

Steps:

  • Cut up cauliflower and cook until it is tender but still has a bite. Then drain very well and set aside.
  • Fry bacon until crisp but not burnt, crumble and put into heated pan.
  • Add sugar and mayonnaise and stir until the mixture turns smooth and nearly translucent.
  • Add cauliflower to pan and gently mix until cauliflower is coated in mixture.

This recipe originally came from my Cajun great grandmother. She didn't speak any English, but her cooking always received that universally understood "Mmmm!" I have modernized the recipe, by using purchased crab-boil and Cajun seasoning, instead of her multitude of mixed spices. (Prep. and cook times are a "guesstimate").

1 head cauliflower
3 ounces crab boil seasoning (net-bag kind)
1/2 tablespoon salt
4 eggs (well beaten)
1/3 cup lemon juice
4 cups dry breadcrumbs
1 1/2 tablespoons cajun seasoning (Tony Chachere's or Emeril's Essence)
24 ounces cooking oil

Steps:

  • Wash head of cauliflower.
  • Place cauliflower in a large pot with enough water to cover.
  • Add the bag of crab-boil, and the salt to the water.
  • Bring to a boil; cook for about 8-10 minutes, or until cauliflower becomes "fork tender".
  • When cauliflower becomes tender, remove from heat and allow cauliflower to "soak" in the spice for about 3-5 minutes (the longer it soaks, the spicier it gets).
  • Remove cauliflower from the water and drain.
  • Cut cauliflower into florets.
  • Place breadcrumbs in a large bowl and mix in the Cajun seasoning.
  • Mix together the beaten eggs and the 1/3 cup lemon juice.
  • Heat enough oil to deep fry the cauliflower to 350°F.
  • Coat each floret in the egg mixture, and then dredge in the breadcrumbs.
  • Deep fry until breadcrumbs turn golden brown, about 2-3 minutes.
  • Drain well on paper towels.
  • Serve with your favorite dipping sauces if desired.
