This paprika roasted chicken gets a smoky-sweet kick from smoked paprika (pimentón) and a glaze of lemon juice and honey. It's an easy recipe you can pull off on a weeknight or lazy weekend.

1 teaspoon garlic powder
1 1/2 teaspoons salt

1 whole 4-5 pound roasting chicken
4 Tbsp honey
2 Tbsp lemon juice

Steps:

  • Preheat the oven: Preheat the oven to 325°F.
  • Dry the chicken: Pat the chicken dry thoroughly with paper towels.

4 pounds frozen chicken wings
1 tablespoon paprika
1 teaspoon chili powder
1 teaspoon onion powder
¼ teaspoon cayenne pepper
⅛ teaspoon salt
⅛ teaspoon ground black pepper
hickory wood chips
1 (18 ounce) bottle barbeque sauce, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chicken wings on a baking sheet.
  • Bake in the preheated oven for 1 hour.
  • Combine paprika, chili powder, onion powder, cayenne pepper, salt, and black pepper in a small bowl. Coat baked chicken wings with the dry rub. Place wings in the smoker with the hickory wood chips.
  • Smoke chicken for 1 hour at 225 degrees F (110 degrees C).
  • Transfer smoked wings to a large bowl and toss with barbeque sauce.

This recipe is from the July 1999 issue of Gourmet Magazine. These wings with a Spanish influence need to marinate for at least 8 hours. Gourmet suggests putting them in the refrigerator before you go to bed so they'll be ready for roasting the next day.

3 lbs chicken wings (12 to 14 large wings)
3 garlic cloves
3/4 cup dry red wine
1/4 cup water
1 teaspoon sweet spanish smoked paprika
1 1/2 tablespoons sherry wine vinegar
2 teaspoons sugar
2 teaspoons salt
1/3 cup mayonnaise
1 teaspoon medium-dry sherry
1/4 teaspoon sweet spanish smoked paprika

Steps:

  • Cut off wing tips, reserving for another use, and halve the wings at the joint.
  • Put wings in a large sealable plastic bag.
  • Finely shop the garlic and add to the bag with the red wine, water, 1 teaspoons paprika, vinegar, sugar and salt. Seal bag, pressing out excess air.
  • Marinate wings in bag placed in a large bowl in the refrigerator, turning bag once, at least 8 hours and preferrably overnight.
  • Preheat oven to 400°F.
  • Arrange wings in a large shallow baking pan large enough to hold them in one layer. Pour marinade over them. Roast wings in the middle of the oven for 30 minutes. Turn wings over and continue to roast them until the marinade is reduced to a glaze and the wings are golden brown, about 25 to 30 minutes more.
  • Make mayonnaise while wings are cooking:.
  • In a bowl whisk togehther all mayonnaise ingredients.
  • Serve wings with mayonnaise.

1/2 cup Hickory House Dry Rub, recipe follows
1 cup Blue Cheese Dressing, recipe follows
2 tablespoons dehydrated brown sugar
2 tablespoons paprika
2 teaspoons ground cumin
2 teaspoons dehydrated garlic
1 teaspoon citric acid
1 teaspoon ground celery seed
1 teaspoon dried dill
1 teaspoon dry mustard
1 teaspoon ground black pepper
1 teaspoon red chile flakes
1 teaspoon cayenne pepper
1 teaspoon ground white pepper
1 cup mayonnaise
3/4 cup sour cream
1/2 cup buttermilk
2 tablespoons minced garlic
1 1/2 teaspoons kosher salt
1/4 teaspoon ground white pepper
3/4 cup blue cheese

Steps:

  • Preheat a smoker for cooking with hickory wood at 240 degrees F.
  • Wash and pat dry the wings. Dry-rub the wings with the Hickory House Dry Rub. Place the wings evenly on a smoker rack. Smoke in the smoker until they are golden brown, about 45 minutes. Arrange on a platter and serve with the Blue Cheese Dressing.
  • Combine the brown sugar, paprika, cumin, dehydrated garlic, citric acid, celery seed, dill, mustard, black pepper, chile flakes, cayenne and white pepper in a bowl.
  • Combine the mayonnaise, sour cream, buttermilk, garlic, salt and white pepper in a bowl and stir to mix well. Fold in the blue cheese.

1/4 cup fresh lemon juice (from 2 lemons)
1 tablespoon ground pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons coarse salt
2 teaspoons dried thyme
1/2 teaspoon cayenne pepper
1/4 cup (1/2 stick) unsalted butter, melted
Blue cheese or ranch dressing, or barbecue sauce, for dipping

Steps:

  • Preheat oven to 500 degrees. Line a large rimmed baking sheet with foil. In a large bowl, toss chicken wings with lemon juice. Add pepper, garlic and onion powders, and salt. Add thyme, crushing it between your fingers as you go. Add cayenne and melted butter. Stir mixture thoroughly, then arrange wings in one layer on baking sheet.
  • Cook 20 minutes, then rotate sheet and flip wings. Cook until wings are browned and cooked through, 10 minutes. Serve with desired dipping sauce.

  • Preheat oven to 425 degrees.
  • Line baking pan with foil, spray with nonstick spray and add butter.

  • Add in chicken wings to bag, shake well.
  • Place all wings in the pan with butter and toss together.

Steps:

  • Cut off wing tips, reserving for another use, and halve wings at joint. Put wings in a large sealable plastic bag.
