I love a good cookie - But THESE cookies have made me melt since grade school. I am careful not to make too many when I'm home alone for any length of time. There will be none for anyone else and I am left with "cookie eaters remorse" for DAYS afterwards. This is my favorite *instant gratification* treat. You won't be disappointed... Unless someone gets to them before you do. (Thanks, Grandma D!)

Number Of Ingredients 11

1 cup shortening
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda, dissolved in
1 teaspoon hot water
1 1/2 cups flour
1 teaspoon salt
2 cups oatmeal
1 (12 ounce) bag milk chocolate chips

Steps:

  • Heat oven to 375 degrees.
  • Mix together shortening, brown sugar, granulated sugar, eggs and vanilla extract.
  • Add the baking soda that has been dissolved in hot water.
  • Mix together the flour and salt in a separate bowl, then add to the first mixture.
  • Add the oatmeal and chocolate chips.
  • Drop the dough by teaspoon on to an ungreased baking pan, 2 inches apart.
  • Bake for 8-10 minutes.
  • Remove from baking sheet and allow to cool.
  • ENJOY!

Steps:

  • Preheat oven to 375°.
  • Mix baking soda into applesauce.
  • Cream together the shortening and sugars.
  • Add eggs, milk and applesauce.
  • Sift together the dry ingredients.
  • Add to the sugar mixture.
  • Add oatmeal and chocolate chips.
  • Bake for 13-15 minutes or until lightly golden.

3 eggs
1 cup raisins
1 teaspoon vanilla extract
1 cup butter flavored shortening
1 cup packed brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups quick cooking oats
½ cup chopped walnuts

Steps:

  • Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

1-1/2 cups packed brown sugar
1/2 cup sugar
4 eggs
7 cups quick-cooking oats
2-1/2 cups all-purpose flour
1 package (5.1 ounces) instant vanilla pudding mix
2 teaspoons baking soda

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the cream mixture and mix well. , Drop by heaping tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks to cool.

2 cups sugar
4 large eggs, room temperature
4 teaspoons water
4 cups all-purpose flour
2 teaspoons baking soda

4 cups quick-cooking oats
2 cups chopped raisins
1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. 1 1/2 tsp. baking soda. 1 tsp. vanilla. 2 c. oatmeal. 1/2 tsp. salt. Drop cookies on cookie sheet (size of a walnut). Sprinkle with sugar and cinnamon. Bake in moderate oven at 350 degrees. Add 1 large bag chocolate chips for chocolate chip cookies. Roll for even sized cookies.
