Homemade soup noodles.

1 egg, beaten
½ teaspoon salt
2 tablespoons milk
1 cup sifted all-purpose flour
½ teaspoon baking powder

Steps:

  • Combine egg, salt, milk. Add flour. (For thicker noodles add baking powder to flour before mixing.) Separate into two balls.
  • Roll out dough, and let stand for 20 minutes.
  • Cut into strips and spread to dry--dust with a little flour. Let dry for approximately 2 hours.
  • Drop into hot soup--cook for about 10 minutes.

My grandma used to make this whenever we visited, and made it for my mom when she was a child at least once a week! Quick, easy, and delicious! It's nice to make during the summer, because it is all cooked on top of the stove!

1 lb ground beef
1/2 cup onion, chopped
2 (14 1/2 ounce) cans whole tomatoes
2 (15 1/2 ounce) cans kidney beans
8 ounces egg noodles, cooked (about half of a package)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder (to taste)
1/2 teaspoon seasoning salt

Steps:

  • In a frying pan, brown burger with onions. Drain grease.
  • Add tomatoes and kidney beans, including juice.
  • Add seasonings and simmer 15 minutes.
  • Add noodles, stir.
  • Simmer for 20 minutes. Top with parmesean cheese if wanted. Makes a large dish!

1 large egg, beaten
2 tablespoons milk
½ teaspoon salt
1 cup sifted all-purpose flour, or more as needed

Steps:

  • Combine egg, milk, and salt in a bowl. Add sifted flour and stir until a dough forms, adding more flour as needed, a little at a time, for the dough to come together. Separate into two balls.
  • Sprinkle a work surface with flour and roll out each piece of dough as thin as you like. Let rolled dough rest for 20 minutes.
  • Cut into strips and spread to dry, dusting with a bit of flour so the noodles don't stick together. Let dry for approximately 2 hours.
  • Cook noodles in boiling salted water, or hot soup, until tender, about 10 minutes.
