When my two daughters were young, their great-grandma made them coconut cookies with oats. Thankfully, she shared the recipe. —Debra Dorn, Dunnellon, Florida

Number Of Ingredients 11

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

1 cup brown sugar
1/2 cup butter
2 cups rolled oats
1/2 cup unsweetened dried shredded coconut
1/2 teaspoon vanilla
1 teaspoon baking powder

Steps:

  • Preheat oven to 325 degrees F. In a medium saucepan, melt butter, add brown sugar, and bring to a boil, stirring occasionally. Remove from heat and stir in vanilla. Add oatmeal and coconut, mix. Let mixture cool then mix in baking powder. Press into greased square baking pan. Bake 1/2 hour. Cut into squares while still hot.

Number Of Ingredients 10

1 c butter, room temperature
1 c white sugar
1 c brown sugar, firmly packed
2 large eggs, well-beaten
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 1/2 c all-purpose flour
3 c quick oatmeal
2 c coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)

Steps:

  • 1. Cream together butter, white sugar, and brown sugar in a large bowl.
  • 2. Add beaten eggs and vanilla.
  • 3. In a separate bowl mix together salt, baking soda, flour, oatmeal, and coconut.
  • 4. Add the dry ingredients to the butter mixture and mix until combined.
  • 5. At this time you can fold in the optional nuts, chocolate chips, raisins, or dates.
  • 6. Use a cookie scoop, drop dough onto a baking sheet (making sure not to overcrowd the pan) and bake immediately. Or, form the dough into 2" rolls in plastic and refrigerate until chilled then slice.
  • 7. Bake at 375 for 10-12 minutes.

These are my absolute favourite cookies. The only thing I don't like about them is how fast they disappear! I have listed the original recipe but I usually change it up a bit. I like to use whole-wheat flour, reduce the sugar to 1/2 cup white and 1/2 cup brown. I like to add ground flaxseed, nuts and/or sunflower seeds. And I always use craisins (dried, sweetened cranberries) instead of raisins or chocolate. Mmmm... delicious and nutritious.

1 cup butter or 1 cup margarine
1 cup sugar
1/2 cup brown sugar
1 egg
1 cup flour
1 cup oatmeal
1/4 cup wheat germ
3/4 cup coconut
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups raisins or 1 1/2 cups chocolate chips

Steps:

  • Cream together sugar, butter, brown sugar and egg.
  • Add flour, oatmeal, wheat germ, coconut, baking powder, and baking soda and mix well.
  • Add raisins or chocolate chips.
  • Drop dough by the tsp full onto lightly greased cookie sheet.
  • Flatten with a floured fork.
  • Bake at 350 degrees for 12 to 15 minutes.

  • Add flour, oats, wheat germ, coconut, baking powder and baking soda. Mix well.
  • Stir in raisins.
  • Drop by teaspoonfuls onto lightly greased baking sheets. Flatten slightly with floured fork.
  • Bake at 350° for 12-15 minutes or until golden.
