YUMMY, EASY CHOCOLATE BANANA CAKE
So easy, so good! Only 3 ingredients. This recipe was a happy mistake. I misread a recipe and discovered this fantastic treat! It has a different texture than a regular cake. Sort of a cross between cake and brownies, it has a lovely chewiness. Lovely hot out of the oven alone or with ice cream, or when cool topped with whipped cream.

- Mix in banana and vanilla.
- Mix flour with remaining dry ingredients.

- Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

- Mix instant coffee with water set aside for later. Sift flour, cocoa powder, baking soda and baking powder together taking care that all the components are well combined and evenly distributed. In the bowl of a stand mixer, mix the butter and shortening with paddle attachment on 2nd speed until combined. Add sugar, sour cream, vanilla extract, coffee mixture, and salt starting on 1st seed and gradually moving to 2nd speed until light and fluffy (approximately 8 minutes). At 1 1/2 speed add the whole eggs, in small amounts, until smooth and fully incorporated. Add dry ingredients and banana puree in staggering steps to the mixer and blend until well combined.
- Pour into greased sheet pans or 4 (4 by 13-inch round cake pans and bake for 30 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.

GRANDMA'S CHOCOLATE CAKE

This cake is great for a German chocolate icing, but I have used all types of icings, which all complement the cake nicely. This cake always pleases the crowd when I make it. - Beat butter until fluffy, gradually add sugar, beating well. Add eggs, one at a time, beating until blended after each. Add rum. Beat till blended.
- Combine flour, cocoa, powder, soda, salt and nutmeg. Add to sugar mixture alternately with hot water, beginning and ending with dry things. Beat at low until blended after each addition; stir in extracts.
- Pour into 2 greased and floured 9-inch round cakepans. Bake at 350 for 27 minutes. It will test not quite done. Cool in pans on rack 10 min; Remove from pans and then cool completely on them.
- Spread 1 cup frosting between layers; frost top and sides with rest. Cover and chill 8 hours. Store in fridge.
- Frosting: Beat cream until foamy. Gradually add powdered sugar, cocoa and extracts, beating until blended. Add rum; beat until thick and smooth.

- Bowl 1- Dry (optional sifting) Mix together flour, baking powder, baking soda, and salt. Bowl 2- Messy Soften bananas until only slightly lumpy Bowl 2½ - yogurt, sour cream, sour milk, or buttermilk Have the yogurt, sour cream, sour milk, or buttermilk ready to go in the ½ cup's cup or in a small bowl. Bowl 3- Wet Combine butter and sugar until fluffy. Add the eggs, and beat after each one. Melt chocolate (w/ tad of butter, nonstick solution) and swirl in. Next add vanilla. (required smelling and tasting of the teaspoon after adding) All Together Now In Bowl 3 add Bowls 1 - 2½ alternating after each add-in/stir decide which bowl goes first yourself or depending on consistency. Baking Try to pour the pans evenly and shake slightly for leveling. Use hot-pan holders and when checking try not to slam oven door. Wait to frost after room temperature.
