EVEN THOSE who aren't fond of spinach will find this dish very tasty, because the spinach flavor is mellowed by the cheese and eggs. Those who enjoy spinach (like me) love this dish. 3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 cups milk
8 ounces process cheese (Velveeta), shredded
1 package (10 ounces) frozen chopped spinach, thawed and drained
1-1/2 cups soft bread crumbs
3 eggs, lightly beaten
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper

Steps:

  • In a medium saucepan over low heat, melt butter; blend in flour until smooth. Cook and stir for 1-2 minutes. Gradually stir in milk; stirring constantly, cook until mixture is thickened. Stir in cheese until melted. Add spinach, bread crumbs, eggs and seasonings; mix well. , Spoon into an ungreased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 45-50 minutes or until lightly browned.

2 boxes (9 oz each) frozen spinach, thawed, squeezed to drain
1 cup Original Bisquick™ mix
1 cup shredded mozzarella cheese (4 oz)
1 package (4 oz) crumbled tomato-basil feta cheese (1 cup)
1/3 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
1 3/4 cups milk

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Cook and drain pasta as directed on pack- age, using minimum cook time. Meanwhile, in 8-inch nonstick skillet, cook mushrooms and onion over medium heat about 5 minutes, stir-ring frequently, until softened.
  • In large bowl, stir together cooked pasta and spinach. Stir in mushroom mixture. Spread in baking dish. In another bowl, stir remaining ingredients until blended. Pour over pasta mixture.
  • Bake uncovered 35 to 40 minutes or until top is golden brown. Let stand 5 minutes before serving.

4 cups 4% cottage cheese
1 carton (15 ounces) ricotta cheese
1/3 cup all-purpose flour

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
1/2 cup finely chopped green onions

1/2 cup crumbled feta cheese
1/2 cup grated Edam cheese
1/4 cup crumbled Roquefort cheese
2 tablespoons chopped fresh dill
2 tablespoons fresh breadcrumbs
1 large egg yolk
3 tablespoons olive oil
2 10-ounce packages ready-to-use spinach, coarsely chopped

Steps:

  • Preheat oven to 350°F. Lightly butter 11 x 7 x 2-inch baking dish. Mix first 7 ingredients in large bowl.
  • Heat oil in large pot over medium-high heat. Add spinach; sauté until wilted and juices evaporate, about 3 minutes. Transfer spinach to strainer; drain well. Arrange spinach over bottom of prepared dish. Sprinkle with cheese mixture. Bake until heated through, about 20 minutes.
  • Preheat broiler. Broil spinach and cheese until cheese is golden on top, watching closely, about 2 minutes.

A woman in my mother's group (MOPS) brings this to our morning breakfasts. It is always eagerly received. She got it out of a Southern Living Holiday Cookbook. Good find! She uses a 12-inch tart pan when she brings it to us.

15 ounces refrigerated pie crusts
1 (3 ounce) package shredded parmesan cheese
10 ounces frozen chopped spinach, thawed
4 large eggs
1 1/2 cups whipping cream
1/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
3 tablespoons diced sweet onions
7 ounces roasted red peppers, drained and chopped
1 cup crumbled feta cheese

Steps:

  • Roll both pie crusts together to fit 11 inch tart pan or quiche pan. Top with parchment paper and add pie weights.
  • Bake at 400 for 12 min or until lightly browned.
  • Quickly remove weights and parchment paper, sprinkle with Parmesan cheese and let cool.
  • Drain chopped spinach well by pressing between paper towels.
  • Stir together spinach, eggs, cream, salt and pepper.
  • Sprinkle Mozzarella, cheddar cheese, and onion into prepared crust.
  • Add spinach mixture.
  • Top with red bell pepper and sprinkle with feta cheese.
  • Bake at 350 for about 40 minutes, until set. Cover loosely with aluminum foil, and let stand 30 minute.

1 large sweet white onion, finely chopped
1/2 cup feta cheese, crumbled
1/2 cup provolone cheese, grated
1/4 cup blue cheese, crumbled
2 tablespoons dill, chopped fresh
1/4 teaspoon nutmeg, ground
2 tablespoons breadcrumbs, fresh
1 egg yolk
3 tablespoons olive oil
2 (10 ounce) packages Baby Spinach, fresh ready-to-use
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 350°C (175°C).
  • Lightly butter a 12-inch oval gratin pan or an 11 x 7-inch baking dish.
  • Mix onion, feta cheese, provolone cheese, blue cheese, dill, nutmeg, bread crumbs, egg yolk and nutmeg in a small bowl. Set aside.
  • In a large pot or Dutch oven, heat olive oil over medium-high heat.
  • Add spinach and saute until wilted and juices evaporate, about 3 minutes. Transfer to strainer; drain well. Shake strainer up and down to remove as much liquid as possible.
  • Arrange spinach in prepared baking dish. It will make a thin layer.
  • Top with onion mixture.
  • Sprinkle with Parmesan.
  • Bake until heated through, about 20 minutes.
  • Heat broiler. Broil spinach, about 6 inches from broiler element, until cheese is golden brown on top, watching closely to prevent burning, about 2 minutes.
