Originally a Scottish recipe. Very little sugar and no white flour. Easy to make and a wonderful addition to breakfast.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
- Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
- Spread a thin layer of oats and whole wheat flour on a flat work surface. Turn out dough and pat to an even thickness. Cut into circles using the rim of a drinking glass. Transfer to the prepared baking sheet.
- Bake in the preheated oven until golden brown, 20 to 30 minutes.

- Preheat oven to 350 degrees. Spread 1/2 cup rolled oats on a rimmed baking sheet and bake until light golden and fragrant, 8 to 10 minutes. Cool then transfer to a food processor; process until finely ground. Add flour, sugar, coarse salt, and pepper; pulse until combined. Add butter, and pulse until mixture resembles coarse meal, about 10 seconds. Add 3 tablespoons cold water and pulse until dough just comes together, adding up to an additional tablespoon as needed.
- Turn dough out onto plastic wrap, shape into a rectangle and wrap in plastic. Chill for 45 minutes. Transfer chilled dough to a sheet of parchment paper. Sprinkle with remaining ¼ cup oats and roll into a 10-by-12-inch rectangle. Using a fluted pastry wheel, cut into thirty-two 2 1/2-by-1 1/2-inch rectangles. Sprinkle with flaky sea salt. If dough becomes soft, chill for 15 minutes.
- Arrange bars an-inch apart on two parchment-lined baking sheets. Bake until golden, 28 to 30 minutes. Transfer to a wire rack to cool.
GRANDMA SNYDER'S OATMEAL CAKE
This is a great cake for any sweet tooth. It is good served hot too.

Steps:
- Pour water over oats, let stand.
- Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
- Pour batter into a 9 x 13 inch pan.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
- To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
- Pour this coconut concoction over the hot cake.
- Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

OATMEAL CAKE

- Preheat the oven to 350°F. Grease a 9x13 inch baking dish with a cooking spray.
- Put the rolled oats in a small bowl and cover with boiling water. Set aside.
- In a large mixing bowl, cream together softened butter with granulated sugar and packed brown sugar using an electric mixer. Then, add eggs and vanilla extract and beat until well combined. Add cooled rolled oats. Beat until combined. Then, add all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg. Beat until combined.
- Pour the batter into the prepared baking dish. Bake in the preheated oven for 30 minutes or until oatmeal cake is set. You can also check the readiness of the oatmeal cake using a toothpick inserted in the center, if it comes out clean - the cake is ready.
- While the oatmeal cake is baking, prepare the topping. In a large bowl, mix together melted butter, flaked coconut, almonds, packed brown sugar, and evaporated milk.
- Remove the oatmeal cake from the oven and spread evenly the coconut topping over the top.
- Switch the oven mode to broil. Broil the oatmeal cake until the top is brown and the coconut is toasted. Let it cool in the pan. Then, slice and enjoy!
SCOTTISH OATCAKES

- Heat the oven to 190C/170C fan/gas 5. Mix together the oats, flour, salt, sugar and bicarbonate of soda. Add the butter, then rub together until it's the consistency of large breadcrumbs.
- Gradually pour in 60-90ml water from a recently boiled kettle, stirring until it forms a thick dough.
- Sprinkle some extra flour on a work surface and roll out the dough to about ½cm thickness. Use a cookie cutter to cut out about 16 rounds (the final number of oatcakes depends on the size of cutter you use).
- Place the oatcakes on a baking tray and bake for 20 mins or until golden.

- Melt the margarine and syrup
- Add sugar to mixture until it is all melted
- Take the saucepan off the heat
- Stir in the oats
- Put them in a non stick baking tin/ grease proof paper - 10 inches by 12 inches
- Put the mixture in the tin - spread it evenly
- Set oven to Gas mark 5 and put in the mixture for 20 minutes
- Take them out and cut it into 24 bars while it is hot
- Leave to cool in tin
- Take it out the tin and eat!!!
GRANDMA NANCY'S OATMEAL CAKE
My Grandma used to bake this cake, only to have the whole thing disappear. She finally found out my Grandpa was taking it to his shop and hiding it in a drawer to snack on as he worked. It looks complicated, but it isnt, and the flavor is worth it. Every time I eat it I think of my grandparents and smile!

- Pour hot water over oatmeal; set aside.
- Cream together sugars and shortening, then add eggs.
- Sift together dry ingredients and add to the wet.
- Stir in oatmeal and vanilla.
- Pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
- Topping: Combine butter, milk and sugar in a small saucepan.
- Bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.
- Spread on cake and broil until brown (WATCH CAREFULLY IT WILL BURN FAST).
