Granola and Applesauce Morning Muffins image

Try these hearty, granola-topped muffins as an alternative to traditional blueberry or bran muffins for breakfast or a snack. Stir a generous pinch of ground cinnamon or freshly grated nutmeg to the batter, if you like.

Number Of Ingredients 12

1 1/2 cup granola
1 cup all-purpose flour
2/3 cup whole wheat flour
2 tablespoons golden flaxseed (ground if desired)
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cup unsweetened applesauce
1/2 cup milk or non-dairy beverage
1/4 cup brown sugar
5 tablespoons canola oil
2 eggs
Granola or rolled oats for topping

Steps:

  • Preheat the oven to 400°F.
  • Oil a standard 12-cup muffing tin or line it with paper muffin cups.
  • Combine granola, flour, whole wheat flour, flaxseed, baking powder and baking soda in a large bowl.
  • In another bowl, whisk together applesauce, milk, sugar, oil and eggs.
  • Add applesauce mixture to dry ingredients and mix just until combined.
  • Pour batter into muffin tins and fill them 3/4 full.
  • Sprinkle extra granola or rolled oats on top and bake until a toothpick inserted in the center of a muffin comes out clean, 18 to 20 minutes.
  • Let cool slightly in pan before removing muffins to a cooling rack.

1 1/2 cups granola (I used Kind granola Healthy Grains Vanilla Blueberry Clusters)
1 cup all purpose flour
2/3 cup whole wheat flour
2 tablespoons golden flax seed
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cup unsweetened applesauce
1/2 cup milk or non-dairy substitute
1/4 cup brown sugar
2 eggs
rolled oats for topping

Steps:

  • Preheat oven to 400 degrees F. Prepare muffin tins with paper muffin cups (makes about 18 muffins)
  • Pour granola into a large mixing bowl. Break up any large pieces of granola-- I like to firmly pat on the granola with the bottom of a metal measuring cup. Add the all purpose flour, whole wheat flour, flax seed, baking powder and baking soda.
  • In a separate smaller bowl mix the applesauce, milk, sugar, and eggs (please note original Whole Foods recipe calls for oil but it is omitted in this recipe)
  • Add the wet ingredients to the dry and stir until just combined. Fill muffin tins 2/3 full. I use a 1/4 cup measuring cup to fill each muffin cup evenly. Sprinkle oats on top.
  • Bake for 20 -22 minutes.
  • Cool on a wire rack before serving.

1 cup vegetable oil, plus extra for the pan (see Cook's Note)
3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

Another from Nigella Lawson's Feast cookbook. You can use granola or muesli interchangeably here. There was more batter than I usually get for a 12 muffin recipe so I kept filling up the cups more and filled them nearly to the top with some batter still left over but not much. The muffins did not rise much so I guess this was the right thing to do. These are tasty little treats that are also good for you. Enjoy!
