1 1/2 pounds ground grass-fed beef
1/2 pound ground pork
1/2 cup ketchup
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
2 teaspoons smoked paprika
1/2 teaspoon freshly ground black pepper
6 bacon slices, halved crosswise

Steps:

  • Heat oven to 375°F with rack in middle position. Meanwhile, stir together bread crumbs and milk in a large bowl and set aside. Cook onion, carrot, celery, and garlic in oil with 1 teaspoon salt in a heavy 12-inch skillet over medium heat, covered, stirring occasionally, until tender, 8 to 10 minutes. Remove from heat and cool. Combine beef, pork, ketchup, eggs, Worcestershire sauce, smoked paprika, pepper, 1 teaspoon salt, and cooked vegetables with bread crumbs and mix with your hands until vegetables are well distributed and mixture is cohesive. Form mixture into a 12-inch loaf, about 4 1/2 inches wide, in pan, and lay bacon slices crosswise over it. Roast in oven until an instant-read thermometer inserted into the center registers 160°F, 40 to 45 minutes. If the bacon on top isn't crisp, reset oven to broil and broil the meatloaf, 4 to 5 inches from the heat, until bacon is crisp and browned, 2 to 3 minutes. Let meatloaf rest in pan 10 minutes before transferring to a platter. •Leftover meatloaf keeps, well covered and chilled, 4 days.

Steps:

  • Heat oven to 375°F with rack in middle.

1 sleeve crushed buttery round crackers (such as Ritz®)
⅔ cup ketchup
½ cup chopped onion
2 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
12 slices thick-cut bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
  • Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

1 lb ground beef
2 eggs
1/2 cup diced onion
1/4 cup ketchup
1 teaspoon garlic powder
1 teaspoon onion powder
37 saltine crackers, crushed
1 lb bacon

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl mix ground beef, eggs, diced onions, ketchup, garlic powder, and onion powder. Mixing with your hands is best. Mix it real well.
  • Crush the crackers. I always crush the crackers while still in their sleeve.
  • Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
  • Form into a loaf shape and set to the side.
  • Take the bacon and divide it into even amount.
  • Take 1 half of the bacon and lay side by side long ways.
  • Fold every other bacon strip in half.
  • Lay 1 of the other half of the reserved bacon strips across.
  • Unfold the half folded bacon strip.
  • Fold the other every other bacon strips that were not folded in the previous step.
  • Lay a slice of bacon across and then unfold.
  • Repeat until you run out of room.
  • Start on the other half of the bacon strip until you have made a weave.
  • Pace the loaf shaped beef mixture into the center on your bacon weave.
  • Wap the weave around the beef loaf shaped mixture.
  • Flip the bacon wrapped meat loaf upside down,making the ends of the bacon tuck under the loaf.
  • Place the loaf in the center of the oven on a cookie sheet.
  • It takes about an hour to cook.
  • To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.

1 lb grass-fed ground beef
6 strips smoky bacon
1 tablespoon extra virgin olive oil
2 cloves garlic, minced
½ large white onion, minced
1 ½ tablespoons carrot, shredded
1 teaspoon italian seasoning
3 tablespoons worcestershire sauce
2 tablespoons beef broth
1 tablespoon heaping tomato paste, or marinara sauce
1 ½ teaspoons sea salt
2 teaspoons pepper
2 teaspoons dijon mustard
½ cup italian style breadcrumbs
1 egg
2 tablespoons fresh parsley, chopped
½ cup ketchup
¼ cup brown sugar
¼ teaspoon cayenne powder
⅛ teaspoon paprika
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
salt and pepper, to taste

Steps:

  • Preheat the oven to 350°
  • In a medium saute pan, heat the extra olive oil on med-high. Add garlic, onion, and carrot in oil and cook for 8-10 min or until soft.
  • Add the Italian seasoning, salt, pepper, and tomato paste,
  • Now goes in the Worcestershire sauce, Dijon mustard, and beef broth. Mix well and set aside to cool.
  • In a large bowl mix the grass-fed beef, onion mixture, bread crumbs and egg.
  • Lay out the bacon strips, barely overlapping each other
  • Form the meat into a rectangle loaf to fit the bacon. Now wrap one side with the bacon then the other. You want them to slightly overlap each other.
  • Move to a cooking sheet with a rack. Place seam-side down.
  • Bake for 30 minutes. While the loaf is cooking, whisk all the glaze ingredients in a bowl.
  • After 30 minutes up, turn the oven temp to 450°. Cook for 10 minutes.
  • After 10 minutes, brush on ¾ of the glaze around the whole meatloaf.
  • Bake for 10 - 15 minutes more or until the internal temp is 160°.
  • Let the loaf rest for 10 minutes.
  • Slice, and brush the remaining glaze on top if desired.
  • ENJOY!

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

Another gem from my sister's family cookbook. This looks like a lot of work, but the steps are really simple and go quickly. The presentation of this is gorgeous -- almost like a "Ground Beef Wellington." Experiment with different breads to give it a different touch each time. Terry adapted this from an early food processor cookbook that advised you to grind the meat yourself. That's not necessary, but PLEASE be sure to use the leanest ground beef and pork possible.

1 loaf unsliced French bread (sour dough is great, round loaves are easiest to work with)
1/2 cup low-fat milk
1 bunch fresh parsley
1 tomatoes
2 eggs
1 1/2 teaspoons salt
1 garlic clove, crushed
pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 lb lean ground beef
1/2 lb ground lean pork
1 hot Italian sausage, ground
1 tablespoon butter

Steps:

  • Preheat oven to 350.
  • Slice off a 7-inch circle from the top of the loaf and scoop out enough bread to leave about a 1/2-inch thick shell. Save the top of the crust for a "lid.".
  • In a food processor or blender, process the bread into crumbs. (You'll need one cup. If there's extra, save it for another recipe.).
  • Put 1 cup bread crumbs in a large mixing bowl, add milk, and let stand for 5 minutes.
  • Finely chop parsley and add to bowl.
  • Dice tomato and add to bowl.
  • Add everything else but the butter to the bowl, roll up your sleeves, and mix well.
  • Pack meat mixture into bread shell. Replace top.
  • Rub butter on bread.
  • Wrap bread in foil and bake at 350 for 2 hours.
  • Use a serrated knife to cut loaf into wedges and serve.

sunflower oil , for greasing
85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.
