1 cup tomatoes
3 green onions, sliced
16 ounces refried beans
1 package taco seasoning
1 cup sour cream
1 cup guacamole
1 cup salsa
1 cup lettuce
1 cup Mexican blend cheese

Steps:

  • Mix the taco seasoning with the sour cream and set aside.
  • Refried beans, sour cream/taco seasoning mix, guacamole, salsa, lettuce, and cheese.
  • Top with optional toppings as desired: olives, tomatoes, and green onions.

Mexican 7 Layer Dip is an easy dip to make for parties. Layers Tex-Mex flavors come together in to make a simple cold dip to serve with tortilla chips.

32 ounces Refried beans
2 tablespoons Taco seasoning
2 cups Guacamole
2 cups Sour cream
2 cups Cheese (shredded)
3 cups Tomatoes (diced)
2.25 ounces Black olives (sliced)
1/4 cup Green onions (finely chopped)

Steps:

  • In a bowl combine the refried beans and taco seasoning. Stir until smooth.
  • Spread the refried beans in the bottom of a 13" x 9 " casserole dish.
  • Top with a layer of guacamole.
  • Spread a layer of sour cream over the guacamole.
  • Add a layer of cheese over the sour cream.
  • Next a layer of fresh tomatoes.
  • Top with black olives and green onions.
  • Cover and refrigerate for at least 1 hour before serving.

Graveyard 7-Layer Mexican Dip turns a traditional 7-Layer Dip into a fun, Halloween Party Appetizer dip with tortilla chips as tombstones. Celebrate Halloween or Día de Los Muertos with this delicious Mexican dip!

1 (16-ounce) can refried beans
4-1/2 ounces (1/2 package) Ranchero® Beef Chorizo
2 cups prepared guacamole
1 (12-ounce) package Cacique® Cilantro Lime Mexican Style Sour Cream
1 cup chopped tomatoes or pico de gallo
1 (2.25-ounce) can sliced black olives
1/2 (10-ounce) package Cacique® Cotija Cheese
1/2 cup chopped Cilantro

Steps:

  • Cook your favorite Cacique® Chorizo per package instructions.
  • In a bowl, mix together 1/2 a package of cooked Cacique® Beef, Soy, or Pork Chorizo with a 16-ounce can refried beans.
  • Spread the refried bean - chorizo mixture on the bottom of a 9x13 pan.
  • Spread the prepared guacamole over the top of the refried beans - chorizo layer. Use store-bought guacamole or make your own guacamole.
  • Squeeze a bottle of Cacique® Cilantro Lime Mexican Style Sour Cream (or your favorite Cacique® Mexican Style Sour Cream) over the top of the guacamole layer.
  • Fourth Layer: Sprinkle chopped tomatoes or your favorite Pico De Gallo over the top.
  • Sprinkle a can of drained, sliced black olives over the top.
  • Sprinkle your favorite Cacique® cheese, such as the Cacique® Cotija Part-Ski Milk Cheese that I used.
  • Sprinkle chopped cilantro evenly over the top of the dip.
  • For tombstones, just before serving, stand up rectangular shaped tortilla chips vertically into the dip to look like tombstones.Either serve immediately or refrigerate (prior to adding chips) until you are ready to serve.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.
