New Orleans Style Red Gravy (Creole Sauce) image

New Orleans Red Gravy is made with tomatoes, onions, green peppers and Creole spices, and my own little secret touch, this stuff will have your mouth watering.

1-15 ounce can diced tomatoes
1 green bell pepper (diced)
1 medium onion (diced)
1 1/2 cups chicken stock
1 tablespoon Louisiana hot sauce
1 tablespoon Worcestershire sauce
1 teaspoon Cajun seasoning
1/4 teaspoon ground black pepper
2 garlic cloves (minced)
1/4 cup heavy cream
1 tablespoon unsalted butter

Steps:

  • Heat butter in a skillet over medium heat. Add the green pepper and onion and cook until soft.
  • Add the tomatoes and cook for one minute. Add all remaining ingredients except the cream. Bring to a simmer, cover and let cook for 20 minutes.
  • Add the cream and bring back to a simmer. Simmer for 3-5 minutes, until thickened. Remove from heat and serve .

1 28-ounce can whole peeled tomatoes
2 tablespoons extra-virgin olive oil
1/3 red onion, medium-diced
3 cloves garlic, cut into chunks
Pinch of red pepper flakes (optional)
Kosher salt and freshly ground pepper
2 tablespoons torn fresh basil
1 pound penne or spaghetti, cooked until al dente

Steps:

  • Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
  • Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
  • Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

Sauce
1 pound sweet Italian sausage, cut into large chunks
2 pounds beef short ribs or country-style pork ribs, cut into large pieces
2 to 3 tablespoons olive oil
2 6-ounce cans tomato paste (reserve cans) or 1 12-ounce can
Freshly ground black pepper, to taste
1 teaspoon garlic salt
1/2 teaspoon garlic powder
1 large clove garlic, minced
2 28-ounce cans crushed tomatoes (reserve cans)
Marie's Meatballs
1/2 pound ground pork
1/2 pound ground beef
2 eggs, beaten
1 cup Progresso Italian Style breadcrumbs
2 tablespoons minced garlic
1 teaspoon black pepper
1 teaspoon garlic salt
1/2 cup freshly grated Parmesan cheese
2 tablespoons chopped parsley
Olive oil

Steps:

  • Sauce.In a large Dutch oven heat the olive oil over high heat. Brown the sausage and the pork ribs over medium-high heat; don't crowd the pan and do it in batches, if necessary so meats brown well and evenly.
  • When the meat is browned on both sides, move to the side of the pan and lower the heat to medium low. Add the tomato paste. Mash the paste down with a fork so it's a thin layer on the bottom of the pan and add the black pepper, garlic salt and powder and minced garlic. Simmer the paste for 20 minutes, stirring occasionally, making sure that the paste does not burn.
  • Add the crush tomatoes. Stir to combine. Rinse down the sides of the crushed tomato cans adding about 1 4/ to 1/3 can of water to each can and add to sauce. Rinse down the sides of the cans of tomato paste by filling each to the top with water and then add to the pot. Stir well until the sauce and meats are combined.
  • Bring to a slow boil and then immediately lower the heat and simmer very gently for 3 to 4 hours, partially covered. Periodically check the pot, stirring the sauce and adjusting the heat, if necessary. Simmer until the sauce is thick but still creamy, about 3 to 4 hours. If it gets too thick, add small increments of water. Let the sauce cool to room temperature and refrigerate overnight. Reheat the sauce very gently over low heat, adding water if it's too thick.
  • Meatballs. Preheat the oven to 350 degrees.
  • In a large mixing bowl combine the meats using your hands, squeezing through your fingers to combine the meats thoroughly. Add the eggs, breadcrumbs, garlic, black pepper, salt, Parmesan and chopped parsley. Mix together with your hands, squeezing through your fingers. Form into 2- inch balls and place on a lightly oiled baking sheet. Bake in the oven for about 20 minutes until the meatballs are browned but not crusty. Drain on paper towels and add to the simmering sauce. Cook in the sauce for the last 45 minutes of simmering the sauce, adding small amounts of water if the sauce gets too thick. Serve over pasta of your choice such as pappardelle.

Steps:

  • Heat a straight-sided skillet over medium. Swirl in oil; add onion and 1 teaspoon salt. Cook, stirring occasionally, until onion is soft and translucent, 7 to 9 minutes. Stir in garlic and red-pepper flakes; cook 30 seconds. Add tomatoes to skillet; bring to a boil. Reduce heat and simmer, stirring occasionally, until reduced and thickened slightly, about 20 minutes.

5 (28 ounce) cans crushed tomatoes (I use Furmano brand)
2 quarts water
1 -2 lb fresh sweet Italian sausage (hot sausage may be used too, depending on taste preference)
1 -2 lb fresh pork neck bones
1 tablespoon fresh minced garlic
1 tablespoon olive oil
salt & pepper
2 -3 teaspoons garlic powder
2 -3 teaspoons parsley flakes
2 -3 teaspoons crushed basil
2 -3 teaspoons dried oregano

Steps:

  • In a large dutch oven or 8 quart pot. briefly cook garlic and olive oil.
  • Place fresh sausage and neck bones in pot.
  • Add desired amounts of salt and pepper to meats.
  • Add enough of the 2 qts. of water to cover meats in the pot, (not all of the water may be used). Cover and cook on low-medium for at least an hour. Do not allow water to boil; this will toughen meats.
  • Add the crushed tomatoes to the pot and stir. Begin with 4 cans and add the last can according to desired thickness, remembering that sauce will thicken as it cooks.
  • Add spices, again according to taste, and stir. More may be added as sauce cooks.
  • Stir frequently and keep on low to medium heat, making sure sauce never boils. Continue to cook for at least 4 hours; sauce may cook longer if desired.
  • Homemade or store-prepared meatballs may be added to pot.
  • Serve over pasta, raviolis, or as a base to lasagnas and zitis.

5 cans Cento Italian tomatoes (imported from Italy. They can be found in many grocery stores.)
6 cloves garlic
2 teaspoons good virgin olive oil
1/2 lb prosciutto ham, cut in small cubes
5 teaspoons fresh basil

  • Place olive oil in a large soup pot.
  • Add garlic and simmer about one minute, do not let it brown.

2 slices of white bread
1/2 cup milk
1/3 pound ground beef
1/3 pound ground veal
1/3 pound ground pork
1/2 cup minced onions
4 tablespoons olive oil
2 cups chopped onions
Salt
Freshly ground black pepper
2 tablespoons chopped garlic
2 (28 ounce) can of peeled, seeded and chopped tomatoes
1 small can tomato paste
2 cups water
1 pound of dried spaghetti
4 ounces Parmesan Reggiano cheese

Steps:

  • Place the bread in a shallow baking dish. Pour the milk over the bread and let sit for a couple of minutes. In mixing bowl, combine all of the meats together. Season with salt and pepper. Add the minced onions, 1 tablespoon garlic, parsley and bread. Mix well. Season with salt and pepper. Form the mixture into small balls. In a large skillet, heat 2 tablespoons of the oil. When the oil is hot add the meatballs and brown for 4 to 6 minutes. Remove from the pan and drain on paper towels. In a large saucepan, heat the remaining oil. Add the onions. Season with salt and pepper. Cook for 4 to5 minutes or until the onions are soft and clear in color. Add the remaining garlic and tomatoes. Season with salt and pepper. Cook for 30 minutes. Whisk the tomato paste and water together. Add to the tomatoes. Add the meatballs. Bring the liquid to a boil, over high heat. Turn the heat down to medium-low and simmer for 4 hours, stirring occasionally. Reseason with salt and pepper. Bring a pot of salted water to a boil. Add the pasta and cook until tender, about 8 minutes. Remove from the heat and drain. Drizzle the pasta with olive oil. Season the pasta with salt and pepper. Using a box grater, grate the cheese. To serve, mound the pasta in the center of each bowl. Spoon the meat balls and sauce over the pasta. Garnish with the grated cheese.

3 (28 ounce) cans unpeeled crushed tomatoes, or more as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
8 leaves fresh basil, chopped, or more to taste
1 bay leaf, or to taste
½ teaspoon dried oregano
1 ½ cups dry red wine

Steps:

  • Break stale bread into very small pieces and add to a large bowl. Add beef, Parmesan cheese, parsley, and egg. Season with salt and pepper to taste. Mix well and use wet hands to roll mixture into meatballs.
  • Heat about 2 tablespoons olive oil in a skillet over medium heat. Brown meatballs on all sides, about 5 minutes per batch. Transfer meatballs to a platter. Add sausage and pork ribs to the skillet and brown, about 5 minutes per batch. Transfer to the platter with the meatballs.
  • Heat about 2 tablespoons olive oil in an 8- to 10-quart pot over medium heat. Add garlic and cook just until fragrant, about 30 seconds. Add tomato paste and stir to combine. Add onion and cook until soft and translucent, about 5 minutes. Add whole tomatoes and mash using a potato masher. Add crushed tomatoes and tomato puree; cook, stirring frequently.
