- Update 6/23/10: For a creamier dressing, add all ingredients except oil to a blender. Pulse several times to mix ingredients. With blender running on high, slowly pour oil into blender until mixture is creamy. Refrigerate.

ABSOLUTELY FABULOUS GREEK/HOUSE DRESSING
This is the 'secret' Greek dressing recipe from the pizzeria that I work at. The recipe makes almost a gallon but can be scaled down easily. It can be used for picnics and travels very well, since it doesn't need to be refrigerated. This is the best dressing I have ever tasted, people offer to buy it constantly, but if we sold it we wouldn't be able to make enough to use in the restaurant!

- Stir Greek seasoning and water together in a small bowl; let stand until seasoning is moistened, about 5 minutes.
- Crush the garlic clove with the side of a knife; sprinkle kosher salt over garlic and mash garlic and salt together into a paste with the edge of the knife.
- Whisk garlic mixture, olive oil, wine vinegar, lemon juice, lemon zest, Dijon mustard, pepper, and sugar into Greek seasoning mixture until combined.

GRECIAN SALAD DRESSING
I first found this recipe on Allrecipes quite sometime ago and it has become a staple in our house. This makes a lot of dressing but in our house it goes quite quickly. If you find the vinegar a bit strong, you may want to scale it back to 1 1/2 quarts. Great for greek salads or any kind of dinner salad. We also use this as a topping for fresh tomatoes in the summertime.

GREEK SALAD DRESSING
Steps:
- Combine the ingredients: In a half-pint or larger screw-top jar, add the garlic, olive oil, red wine vinegar, lemon juice, oregano, salt, red pepper flakes, honey, if using, and Dijon mustard. Screw on the lid tightly.
- Shake, shake, shake: Shake it vigorously for about 1 minute until the honey and mustard dissolve and the dressing has emulsified into a slightly creamy and uniform mixture.
- Taste and serve: Taste the dressing for seasoning, adding more salt as needed. Use right away or store in the fridge for up to 5 days. It will separate as it sits-give it a good shake before serving and it will be as good as new. The olive oil may solidify in the fridge, but don't panic. Warm the mixture slightly, either by letting it sit out on the counter for several minutes or by heating it for 10 seconds in the microwave, and it will turn liquid again. Did you love this recipe? ANDREA'S GRANDMOTHER'S GREEK DRESSING
This recipe is the salad dressing made by my boss Andrea's Greek grandmother... it's absolutely delicious and I serve it in the antique cut-glass cruet that my co-workers gave to me in a goodie basket for my marriage to Ed. CREAMY GREEK SALAD DRESSING
A couple of my favorite Greek restaraunts of all time serve their salads with a creamy Greek dressing. I assumed it was a common occurance until I started searching for recipes so I could duplicate it at home. I'm so happy to have finally found one on this site (Recipe #59898)! All the non-creamy dressings are too tart for me (and believe me, I've tried several)...this one hits the spot!! The credit for this recipe should be given to evelyn/athens...mine is only a slight modification of hers. (Mine includes homemade buttermilk and less feta.)

- In a small bowl, combine the milk and vinegar or lemon juice. Let sit for 5 minutes. (This process will produce buttermilk. Alternatively, you can just use 1/2 c "real" buttermilk, but I use this method because I never have the real stuff on hand.).
- Meanwhile, combine the remaining ingredients in a blender or food processor.
- With the blade running, slowly pour in the buttermilk and blend just until thickened (if you over-blend, it will curdle).
- Cover tightly and chill well before serving so the flavors have a chance to meld.
- Dressing will keep for about 4 days (though it may need another whirl in the blender / food processor if it separates).
