GREEK TOMATO SALAD
This is a common and colorful side dish for our summer cookouts. It's such a hit that I get complaints if I don't make it. Even the youngsters love this mix of fresh vegetable and light dressing! Regular black olives can be substituted for the Greek olives if you don't care for their flavor.

- Gently mix tomatoes, cucumber, red onion, olives, 1/4 teaspoon chopped basil, and oregano together in a large bowl; top with feta cheese. Pour Greek dressing over salad and season with black pepper. Garnish salad with a sprig of fresh basil.

GREEK-STYLE FISH WITH MARINATED TOMATOES
In summer I want a dish that tampers with the tomato-fish formula as little as possible. So instead of cooking the tomatoes, I marinate them, and instead of braising the fish, I grill or roast it. Neither fish nor tomatoes need much help.

- Heat oven to 450 degrees or prepare grill; heat should be medium-high and rack about 4 inches from fire. Combine tomatoes, 2 tablespoons olive oil, vinegar, chili, oregano, a few slices of garlic, and a sprinkle of salt and pepper in a large bowl; let sit at room temperature for 20 to 30 minutes.
- Meanwhile, using a sharp knife, make three or four diagonal, parallel slashes on each side of fish, just about down to the bone. Sprinkle inside of fish with salt and pepper, then stuff with remaining garlic, a layer of lemon slices and thyme sprigs. Rub outside of fish with remaining 2 tablespoons oil and sprinkle with salt and pepper.
- To roast, put fish in roasting pan and cook for about 20 minutes (cooking time will depend on fish size). If grilling, cook until firm enough to turn, 5 to 8 minutes. Turn and cook second side for 5 to 8 minutes. Whether roasting or grilling, fish is done when exterior is crisp and a thin-bladed knife passes easily through the flesh.
- Taste tomato mixture and adjust seasoning, adding more oil if needed. Serve fish topped with tomatoes and their liquid.

- Cook the eggplant: Preheat the oven to 350 ºF. Prick the eggplant all over with a knife so that steam can vent. Roast the eggplant for ~1 hour, rotating about every 20 minutes, until the eggplant is soft and no resistance is met when pricked with a knife. Set aside to cool, cutting in half will speed the process.
- While the eggplant is roasting, cook the barley. Combine the barley and 1/2 tsp of salt in a pot and cover with plenty of water. Bring to a boil, then lower the heat to a simmer and cook for 20 minutes until the barley is chewy but cooked through. When done, drain and set aside.
- Warm a large skillet over medium heat. Add the oil and shallots, and cook until softened and golden, ~3-5 minutes. Add mushrooms and a pinch of salt and lower heat to medium-low. Cook until golden and caramelized, ~6-9 minutes. Add the thyme and oregano and cook for 1 minute. Then deglaze the plan by adding the red wine vinegar to loosen the caramelized bits stuck to the bottom of the pan. Immediately transfer to a food processor.
- Add the chickpeas (reserving ~1/2 cup of them), 1/2 cup of the roasted eggplant (use the rest for another purpose), the cooked barley, chopped sun dried tomato, garlic, and 1 tsp of salt to the food processor and pulse to combine. When the mixture is mashed and clumping together, taste and adjust seasoning if desired. Then add the remaining 1/2 cup of chickpeas and the vital wheat gluten and pulse to combine. Due to the gluten, the mixture will probably form one large clump.

- Place the sun-dried tomatoes in a medium bowl and soak in enough warm water to cover for 30 minutes. Drain and reserve the liquid.
- In the meantime, clean the octopus: remove its sac-like head and, using a sharp paring knife, remove its beaklike mouth. Place the octopus in a shallow, wide pot.
