1 leg of lamb (2kg)
2 clove garlic, cut into thin slivers
2 teaspoon dried greek oregano, plus extra, to serve
1/4 cup (60ml) extra-virgin olive oil
1 400g tin italian tomatoes, chopped
250 gram risoni pasta
300 millilitre boiling water
50 gram freshly grated pecorino, plus extra for the table
2 tablespoon fresh oregano leaves

Steps:

  • Preheat oven to 220°C (200°C fan-forced).
  • Make small incisions all over lamb and insert a sliver of garlic into each. Season Lamb all over with salt and pepper and dried oregano.
  • Pour oil into a roasting tray and add meat. Add tomatoes and roast 20 minutes. Turn meat, spoon tomatoes over, then cook a further 25 minutes.
  • Bring a saucepan of water to a boil, add salt, and when water boils again, stir in pasta. Cook 3 mins, then drain and refresh under hot water.
  • Pour 300ml boiling water around meat in tray and spoon drained pasta evenly around.
  • Reduce oven temperature to 190 °C (170 °C fan-forced) and continue cooking lamb for a further 45 minutes for rare, or 60 minutes for medium rare.
  • During this time, stir pasta from time to time, and turn meat once. Transfer lamb to a heated serving dish and set aside for 10-15 minutes. Check seasoning of pasta mixture.
  • Spoon pasta around meat, then scatter with cheese, extra dried oregano and fresh oregano leaves. Carve lamb and serve with pasta and extra pecorino.

3 tablespoons olive oil, divided
1 pound ground beef
6 tomatoes, grated
1 sweet yellow onion, grated
½ cup water
3 tablespoons tomato paste
1 tablespoon ground cinnamon
½ teaspoon white sugar
½ teaspoon cayenne pepper
salt and ground black pepper to taste
4 cups shredded Mizithra cheese
1 cup shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Transfer to a large bowl and toss with 2 tablespoons olive oil.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir ground beef until browned, about 10 minutes. Add tomatoes, onion, water, tomato paste, cinnamon, sugar, cayenne, salt, and pepper; stir to combine. Simmer meat sauce over medium-low heat until flavors combine, 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour meat sauce over rotini; mix well. Pour half the pasta mixture into a casserole dish; sprinkle with half the Mizithra cheese and half the mozzarella cheese. Top with remaining pasta mixture; sprinkle remaining Mizithra cheese and mozzarella cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, about 40 minutes.

2 celery stalks, chopped

Steps:

  • Preheat oven to 325°F. Heat oil in large ovenproof pot (wide enough to hold lamb in single layer) over medium-high heat. Sprinkle lamb on all sides with salt and pepper. Add lamb to pot and sauté until brown, turning occasionally, about 10 minutes. Transfer lamb to plate. Add next 10 ingredients to pot. Sauté until vegetables brown, about 20 minutes. Mix in tomato paste. Add wine and all broth; boil until liquid is reduced by half, stirring occasionally, about 10 minutes. Return lamb to pot, arranging in single layer; add any accumulated juices. Bring to boil.
  • Place lamb in oven and cook uncovered until tender, basting and turning occasionally, about 2 hours. Transfer lamb to plate. Skim any fat from top of roasting liquid. Press all liquid and enough of vegetables through sieve set over large bowl to make sauce with gravy consistency. Return gravy to pot; add lamb. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated.) Rewarm lamb over low heat. Transfer to platter and serve.

4 tablespoons olive oil, plus more if needed
5 1/2 pounds boned shoulder of lamb, trimmed of excess fat and cut into cubes about 1 1/2 by 2 1/2 inches
5 medium onions, sliced finely
Salt
4 garlic cloves, minced
2 celery stalks, minced
Leaves from 4 thyme sprigs
1 teaspoon dried oregano
3 bay leaves
2 carrots, peeled, halved lengthways, and then halved across
3 (14.5 ounces) cans diced tomatoes
1 1/4 cups lamb, beef stock or water
1 bottle dry white wine
Freshly ground black pepper
1 pound ditalini or other small tubular pasta
2/3 pound feta cheese
2 to 3 tablespoons finely chopped parsley, oregano or basil leaves

Steps:

  • Preheat the oven to 325 degrees F.
  • Into the largest saucepan or casserole you have that will go into the oven, pour 3 tablespoons of the oil. Brown the meat in batches over high heat and remove with a slotted spoon to a plate nearby. You may need more oil as you do this. The onions will certainly need it, so pour the remaining oil or add more, add the onions, sprinkling a little salt over them and cook then until soft and translucent. Add the garlic, celery, thyme, and oregano. After a couple of minutes or so, when the smell of garlic wafts up, remove half the mixture. Add the meat to the mixture in the pan, cover with the remaining half, add the bay leaves, carrots, tomatoes, stock and wine. I use a big but flattish casserole and this amount of liquid covers the meat, but if you find you need more liquid, add water- you want a lot of liquid, because you will, eventually, be cooking some pasta in it. Bring to a boil, remove scum, and let bubble for about 3 minutes. Then cover, transfer to the oven, and bake for about 2 to 2 1/2 hours, or cook on a very low heat. The meat should be tender and yielding. Remove the carrots (and eat, cook's treat) and bay leaves, too, if you want, and season, to taste, with the salt and pepper.
  • Of course you can proceed to the final stage now, but I am presuming you're not going to. In which case, let the stew cool and keep it in the refrigerator until you want it. Skim the fat off the top, and do remember to take it out of the refrigerator a good 1 to 2 hours before you cook it again. You can reheat this in the oven, but because the pasta will be put in on the stove, I tend to heat it there. Make sure the stew is piping hot. Meanwhile, bring a large pot of water to a boil. When it boils, add the salt and then pasta. Cook this until it's nearly but not quite cooked; it should have a couple of minutes still to go.
  • Then drain the pasta and add it quickly to the bubbling juices in the casserole, making sure first that there are enough bubbling juices. You don't want the meat to be drowned, but you want enough for the pasta to be covered. The pasta will absorb some of the liquid as it finishes cooking, of course.
  • In a couple of minutes, the pasta should be cooked. Crumble some feta and put in a bowl with the chopped parsley, oregano, or basil. Stir to combine and then leave the spoon with it, so that people can sprinkle the herb-spiked cheese over the stew as they wish. Ladle the stew into shallow soup bowls.

2 medium red onions, finely chopped
2 carrots, sliced (1 cm thick)
1 tin of chopped (tinned) tomatoes (400g / 14oz)
2 tbsps tomato paste
1 tsp sugar
1 glass of red wine
1 bay leaf
1/2 cup of olive oil
250g orzo pasta (9 ounces) ( kritharaki / manestra )
100g grated kefalotyri or feta cheese (5 ounces)

Steps:

  • To prepare this lamb giouvetsi recipe, start by cutting the lamb into chunks. Wipe the lamb with paper towels. Heat 1/2 of a cup of olive oil into a pan, add the chopped onions and carrots and sauté for 5 minutes in medium-low heat. Turn up the heat and add the lamb; brown the meat on all sides until crusty.
  • Stir in the tomato paste and pour in the red wine. Wait for the wine to evaporate. Add the tinned tomatoes, a glass of water, the nay leaf, sugar and a good pinch of salt and pepper.
  • Turn the heat down and simmer with the lid on for at least 45 minutes.
  • In the meantime into another pan heat 3 tbsps of olive oil and the orzo pasta. Sauté, until golden.
  • Place the orzo pasta along with the meat and sauce in an oven tray (remove the bay leaf) and mix with a spatula. Cover the tray with some aluminum foil and bake in preheated oven at 180C for 30 minutes. Remove the aluminum foil, add a glass of water if needed, and put back in the oven for another 15 minutes. Sprinkle with some grated hard yellow cheese (kefalotyri) and enjoy!

1 pound gemelli, or other short pasta
2 tablespoons olive oil
1 pound peeled and deveined medium shrimp
2 garlic cloves, minced
1 1/4 cups plain low-fat yogurt
1 tablespoon fresh lemon juice
1/2 cup loosely packed fresh mint, coarsely chopped
1/3 cup Kalamata olives, pitted and coarsely chopped

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; drain.

500g lamb mince
2 tins tomatoes
1 onion, finely diced
4 cloves garlic, crushed
1/2 aubergine, 1cm cubes
2 tbsps dried oregano
150g mushrooms, quartered
250ml red wine
1 tbspn caster sugar
1 tbspn tomato puree
500g spaghetti
200g feta cheese, crumbled
1/2 tsp cinnamon
grated nutmeg

Steps:

  • Whizz together the garlic, onion, mushrooms, aubergine and 1 tbsp oregano then cook slowly for 10 minutes.
  • Add the minced lamb and brown over a medium heat.
  • Onto the mince, sprinkle the cinnamon and grate some nutmeg (to your own taste). Stir.
  • Add the wine and let it simmer for 2-3 minutes.
  • Add the chopped tomatoes, caster sugar, tomato puree and stir. Season and bring to the boil.
  • Cook over a low heat for at least 30 mins then serve with the spaghetti and crumble the feta on top.

1 tbsp olive oil
1 large onion, chopped
2 garlic cloves, crushed
500g lean lamb mince
1 tsp ground cinnamon
1 beef or lamb stock cube
2 x 400g cans chopped tomatoes
1 tbsp dried oregano
400g macaroni
250g tub ricotta
50g parmesan, grated
50ml milk
garlic bread, to serve (optional)

Steps:

  • Heat the oil in a large pan, add the onion and cook for 10 mins until soft. Add the garlic and cook for 1 min more, then tip in the lamb mince, turn up the heat and brown, breaking up the mince with a wooden spoon.
  • Once the lamb is browned, add the cinnamon, crumbled stock cube, tomatoes and oregano. Stir well and simmer for 15 mins, covered, then for 15 mins, uncovered, until the sauce has thickened and the tomatoes have cooked down.
  • Meanwhile, cook the macaroni following pack instructions. Drain well. Heat oven to 200C/180C fan/gas 6.
  • Mix together the ricotta, most of the parmesan and the milk with plenty of seasoning, and stir into the macaroni. Tip the mince into a large baking dish, top with the macaroni mixture, and scatter over the remaining parmesan. Bake for 30 mins until golden and bubbling. Serve hot with garlic bread, if you like.

8 ounces thin spaghetti
4 lamb chops
1 garlic clove
1 green pepper
1 red onion
8 -12 ounces feta cheese
10 ounces diced tomatoes
2 ounces olives, sliced works best
4 tablespoons olive oil
8 ounces Greek salad dressing (oil based dressings work best)

Steps:

  • Cook Spaghetti as directed to desired firmness. Drain and set aside.
  • While noodles are cooking, chop garlic clove, slice Green Pepper and Red Onion, and preheat olive oil enough to cover bottom of a frying pan. Drop half of the garlic into preheated oil, and add your lamb. If all 4 chops cannot be cooked at once, don't worry. Just cook as many as your pan can hold at one time. When chops have been thoroughly browned on both sides, set aside and let set 5 minutes.
  • In another pan, cook veggies and remaining garlic lightly with olive oil until tender. Once cooked, remove from heat.
  • When Chops have sat, cut into thin slices. Depending on what cut you have cooked, you may have some bones to negotiate. Make sure you have removed all bones and tough fat.
  • Lightly grease a large casserole or lasagna pan; preheat oven to 400.
  • Spread half the noodles evenly across pan. Then, layer 1/2 your veggies, lamb, tomatoes and olives, and roughly 1/3 of your feta.
  • Cover with remaining noodles.
  • Cover that with all remaining veggies, lamb and olives and tomatoes, while covering everything with the remaining feta. Lightly stripe with dressing.
  • Bake until feta turns golden brown. Likely 11-15 minutes, but varies, so keep an eye on it.
  • Once cooked, remove from oven and add more salad dressing, to taste.
  • Serve and enjoy!

1/2 pound ground lamb
1 large onion, chopped

3 lbs boneless lamb shoulder
3 tablespoons olive oil, for pan browning
6 cups canned / fresh chicken broth
1/2 cup olive oil
2 cups orzo pasta
1 1/2 cups peeled/chopped yellow onions
3 cloves garlic
2 large ripe tomatoes, chopped
2 teaspoons dried dill
1/4 cup chopped parsley
1 lemon, juice of

Steps:

  • In a stove-top Dutch oven brown the boneless lamb shoulder in the olive oil.
  • Salt and pepper to taste.
  • Add enough stock to come halfway up the side of the meat and simmer, covered, until very tender, about two hours.
  • Remove the meat from the pot and set aside, covered, to keep warm.
  • Remove the fat from the stock in the pan and add more stock if necessary to make up four cups.
  • Remove the stock from the pan and set aside.
  • Heat the Dutch oven again and add half cup olive oil.
  • Add the orzo pasta and toss for a minute.
  • Add the chopped onion and garlic sautee until the onion is clear.
  • Stir in the tomatoes, dillweed and parsley.
  • Return the meat to the pot along with the 4 cups of stock.
  • Cover and simmer until the broth is absorbed and the pasta is tender, about 30 minutes.
  • NOTE: if the dish is too wet when the pasta is tender continue to cook for a few more minutes with the lid off to reduce the sauce.
