TASTY GREEN BEANS
This is an easy yet delicious way to prepare green beans. Slightly crispy and bursting with flavor!

Steps:
- Bring a large pot of water to a boil. Add green beans and cook for 5 minutes. Drain and rinse with cold water.
- Melt margarine in a large saucepan over high heat. Mixing well, add green beans, onions and garlic. Stir in soy sauce. While stirring, add bouillon and water. Reduce heat to low and simmer, stirring occasionally, for 20 minutes. Season with salt and pepper to taste.

Steps:
- 1) Cut off tips of green beans and cut into 1-1/2" pieces on the diagnol
- 2) Blanch green beans in boiling water, drain
- 3) Place tofu into a cotton tea towel (flour sack), twist top and begin to gently squeeze to remove liquid from tofu. Do not squeeze to quickly or with too much pressure as tofu will squeeze thru the towel. You want to keep as a large bundle, continually applying pressure to drain liquid.
- 4) Using a mortar and pestle grind the sesame seeds, remove to small bowl and add miso, sugar and soy sauce. Mix to dissolve sugar and form a loose paste that can coat beans.
- 5) In a large mixing bowl combine green beans and dressing, add tofu breaking up into small crumbles.
- 6) Garnish with additional toasted sesame seeds.

- Wrap the tofu in a couple of sheets of kitchen papers and place it on a cutting board. Place a plate on the top as a weight and leave it for 20-30 minutes.
- In the meantime, cut the carrot into 4-5cm long thin matchsticks. Sprinkle a pinch of salt over the carrot sticks and leave for 10 minutes. Squeeze them to get moisture out.
- Boil water in a saucepan with a pinch of salt and blanch green beans for a minute or two. Transfer the beans to a bowl of cold water to cool them down quickly.

- Gather all the ingredients. To store the leftover tofu, keep it in an airtight container and pour water until it covers the tofu. Keep in the refrigerator (change the water every day) and use it within a few days.
- Do not skip this step. You don’t want to drain the water from tofu completely, but it’s important to remove some moisture so the dressing doesn’t get too wet. Wrap the tofu with paper towels.
- Toast the sesame seeds in a frying pan, shaking the pan frequently, until they are fragrant and started to pop. Transfer to a Japanese mortar (suribachi).
