Number Of Ingredients 7

1 pound fresh green beans
3 tablespoons butter (divided)
1/2 cup slivered sliced almonds
1-2 tablespoons water or chicken broth
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Juice of 1 lemon (to taste)

Steps:

  • Trim the ends of the green beans and rinse well, set aside.
  • In a large skillet over medium low heat, melt 2 tablespoons of the butter. Add the almonds and cook for 2-3 minutes , stirring, until the nuts and butter become fragrantly nutty and begin to brown.
  • Add the green beans, and the kosher salt and freshly ground black pepper. Add 1 or 2 tablespoon of water or chicken broth to the pan to add more steam to the pan and cover with a lid and simmer until the beans are al denté, 4-5 minutes more, tossing the beans and almonds occasionally so the nuts don't burn.
  • Add the remaining tablespoon of butter with the juice of 1/2 off the lemon, and season with more salt and pepper and toss. Add more lemon juice to taste.

GREEN BEANS WITH BROWN BUTTER AND TOASTED ALMONDS

Green Beans with Brown Butter and Toasted Almonds image

Green Beans with Brown Butter and Toasted Almonds is a nice twist on traditional green beans. The nutty flavor of the brown butter coats the freshly cooked green beans and is tossed with crunchy toasted almonds. This is a nice addition to a holiday table.

Time 25m

Number Of Ingredients 4

1 lb. fresh green beans, ends trimmed {or you can use Haricot Verts which are thin French style green beans and you won't have to trim them}
2 Tablespoons butter
1/3 cup silvered almonds, toasted
Salt and pepper to taste

Steps:

  • Bring a large pot of salted water to a boil over medium high heat.
  • While the pot of water is boiling heat a large skillet over medium high heat. Add the almonds and stir often until golden brown. Set aside.
  • Once the water is boiling add the green beans and boil for 5-6 minutes, or until the green beans are tender to eat. Drain and set aside.
  • In the large skillet that you toasted the almonds in add the butter and heat over medium high heat for two minutes stirring until the butter melts and smells nutty.
  • Turn the heat to low and add the green beans and half of the almonds into the skillet with the butter and gently mix together for 1 minute.
  • Remove from the heat and add salt and pepper to taste. Pour the green beans into a serving dish and garnish with the remaining half of the toasted almonds.

1 (2-ounce) package sliced almonds, found on baking aisle
1 pound green beans, trimmed
1 tablespoon butter
1/2 lemon, juiced
Salt and pepper

Steps:

  • In a medium pan, toast almonds over medium heat. Remove from pan and add 1/2 inch water. Bring water to a boil, add beans and cover pan. Reduce heat. Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat. GREEN BEANS WITH BROWNED BUTTER AND ALMONDS

Green Beans with Browned Butter and Almonds image

Lemon zest, shallots, and red pepper flakes-as well as fragrant toasted almonds-give classic green beans amandine a bold update with plenty of texture. The browned butter amplifies the nuttiness of the almonds, adds a touch of richness, and ties everything together.

Time 30m

Number Of Ingredients 10

1/3 cup (3 oz) slivered almonds (or substitute chopped walnuts or chopped hazelnuts)
3 tablespoons (1 1/2 oz) salted butter
3 medium (3 oz) shallots (peeled and sliced into thin rings)
1/4 to 1/2 teaspoon red pepper flakes
1 cup water
Kosher salt and freshly ground black pepper
2 pounds green beans (trimmed)
1 teaspoon grated lemon zest (plus 2 tablespoons lemon juice (from 1 lemon), preferably organic)
Chopped fresh chives (for garnish (optional))
Toasted walnut oil (for serving (optional))

Steps:

  • In a large Dutch oven over medium, toast the almonds, stirring occasionally, until lightly browned and fragrant, 5 to 6 minutes. Dump about half of the almonds into a small bowl and reserve for garnish.
  • Add the butter to the remaining almonds in the Dutch oven. When melted, add the shallots and pepper flakes, then increase to medium-high and cook, stirring occasionally, until the shallots are lightly browned, 2 to 3 minutes.
  • Add 1 cup water, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, then bring to a boil. Stir in the beans, cover, and cook, stirring occasionally, until tender-crisp, 4 to 6 minutes.
  • Uncover and cook, stirring occasionally, until the moisture evaporates and the beans begin to sizzle, 5 to 7 minutes.
  • Remove from the heat, stir in the lemon zest and juice, then taste and season with salt and pepper. Move to a serving dish and sprinkle with the reserved almonds. Garnish with chopped fresh chives and/or a drizzle of toasted walnut oil, if desired.

PAN-ROASTED GREEN BEANS WITH GOLDEN ALMONDS

Pan-Roasted Green Beans With Golden Almonds image

This simple almond-shallot topping goes with just about any simply cooked vegetable, but it tastes best with green beans. Instead of simply blanching the beans, I char them until they develop a smoky richness.

Provided by Tara Parker-Pope

Time 30m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
8 ounces green and/or wax beans, trimmed
1/4 cup blanched whole almonds, coarsely chopped
3 tablespoons extra-virgin olive oil, plus more as needed
1 large shallot, minced
1 tablespoon fresh flat-leaf parsley leaves, thinly sliced
1 lemon
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a rolling boil and add salt (a teaspoon or so, or to taste). Fill a large bowl with ice and water. Add the green beans to the boiling water and cook until bright green but still firm, about 2 minutes. Drain and transfer to the ice water. When cool, drain again. Pat dry with paper towels until completely dry.
  • Meanwhile, in a small saucepan, combine the almonds and the oil, adding more oil if needed to just cover the almonds. Cook over medium heat until the almonds are golden, about 6 minutes. Remove from the heat and stir in the shallot. It will cook in the residual heat.
  • Coat a large skillet with oil. Heat over medium-high heat until very hot but not smoking. Add the beans and season with salt. Cook, tossing frequently, until charred dark brown in spots and tender-crisp, about 7 minutes.
  • Top with the almond mixture, then the parsley. Grate the zest from a quarter of the lemon directly over the beans, then cut the lemon into wedges for serving. Season with pepper and serve.
