Ingredients

2 pounds ground beef
1 medium onion, chopped
1 garlic clove, minced
2 cans (8 ounces each) tomato sauce
1 can (16 ounces) chili beans, undrained
1 can (16 ounces) kidney beans, rinsed and drained
2 medium jalapeno peppers, seeded and chopped
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 package (9-1/4 ounces) corn chips
1 cup shredded cheddar cheese
1 cup sour cream

Steps:

In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomato sauce, beans and jalapeno peppers. Bring to a boil. Add salt and cayenne. Reduce heat; cover and simmer for 20 minutes. , To serve, spoon beef mixture over chips; sprinkle with cheese. Garnish with sour cream.

This recipe was always a must have at every Sunday School party. Not my recipe, but an automatic favorite. Thanks Mike for always making it! You can adjust the jalapeno peppers to taste. The amount of cheese was missing from my recipe so I guessed on the amount I usually put in.

1 bunch green onion, finely chopped
1 (1 1/4 ounce) packet taco seasoning mix
1/2 cup pickled jalapeno pepper, diced
1 (4 1/2 ounce) can chopped black olives
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
2 cups colby-monterey jack cheese, grated

Steps:

Preheat oven to 350 degrees. Combine all ingredients. Pour into a large baking dish (9x13) and cook until cheese is melted about 30 minutes.

1 (8 ounce) package cream cheese
1 (8 ounce) carton sour cream
1 (30 ounce) can refried beans
1 (1.25 ounce) package dry taco seasoning mix
1 jalapeno pepper, diced, or more to taste
2 cups shredded Mexican cheese blend

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

1 pound bulk hot Italian sausage
1 medium onion, finely chopped
4 garlic cloves, minced
1/2 cup dry white wine or chicken broth
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon dried thyme
1 package (8 ounces) cream cheese, softened
1 package (6 ounces) fresh baby spinach, coarsely chopped
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup chopped seeded tomatoes
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese
Assorted crackers or toasted French bread baguette slices

Steps:

Preheat oven to 375°. In a large skillet, cook sausage, onion and garlic over medium heat until sausage is no longer pink, breaking up sausage into crumbles; drain. Stir in wine, oregano, salt and thyme. Bring to a boil; cook until liquid is almost evaporated., Add cream cheese; stir until melted. Stir in spinach, beans and tomatoes; cook and stir until spinach is wilted. Transfer to a greased 8-in. square baking dish; if using an ovenproof skillet, leave in skillet. Sprinkle with cheeses., Bake until bubbly, 20-25 minutes. Serve with crackers.

1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon ground cumin
1/3 cup mayonnaise (not Miracle Whip)
1/4 teaspoon chopped garlic
1 -2 tablespoon chopped jalapeno
1 1/2 cups monterey jack cheese, shredded (and divided)
finely diced tomatoes (optional)

Steps:

Mix all ingredients, but just 1 cup of shredded cheese.
Transfer to oven-proof dish and top with remaining 1/2 cup cheese.
Bake uncovered at 350 degrees F for 15 minutes or until bubbly.
Serve with your choice of chips.
Enjoy with a cold drink.

Ingredients

3 tablespoons corn oil
1 1/4 cups fresh corn kernels or frozen, thawed
1 16-ounce can black beans, rinsed, drained
1 15-ounce can Great Northern white beans, drained
1 cup chopped red bell pepper
3/4 cup chopped red onion
2 tablespoons fresh lime juice
3 large garlic cloves, pressed
1 large jalapeño chili, seeded, minced
1 tablespoon minced fresh oregano or 1 teaspoon dried
1 tablespoon chili powder
1 1/2 teaspoons ground cumin

Steps:

Heat 1 tablespoon oil in heavy large skillet over high heat. Add corn and sauté until brown, about 3 minutes. Transfer to large bowl. Add 2 tablespoons oil and all remaining ingredients. Season generously with salt and pepper. (Can be made 2 days ahead. Cover and chill. Bring to room temperature before serving.)
