GREEN CHILE EGG CASSEROLE

This green chile egg casserole is a favorite for brunch or morning pot lucks! It has a great mexican flavors without being spicy, so it is friendly for adults and children alike.

6 oz monterey jack cheese (grated)
8 oz sharp cheddar cheese (grated)
7 oz canned mild chopped green chiles
2 tbsp flour
1/2 cup milk
8 eggs
Salt & pepper to taste

Steps:

  • Preheat the oven to 350˚F.
  • Mix the cheeses and then sprinkle 1 cup of the cheese (about 2/3) in the bottom of a casserole dish. Then dollop the green chiles evenly over the cheese.
  • Place the flour in the bottom of a bowl and use a whisk to slowly mix in a little of the milk to make a paste, then continue to pour the milk in while whisking until it is all smoothly combined. Then add the eggs into the milk, season with salt and pepper, and use the whisk to combine well. Pour the mixture into the casserole dish over the cheese and chiles.
  • Top the casserole with remaining cheese and then bake on the middle rack of the oven for 25-35 minutes or until eggs are set in the middle.
  • Remove from oven and let sit for 5 minutes then serve hot. Enjoy!

Number Of Ingredients 9

1 tablespoon olive oil
1/4 small white onion, diced fine
1/2 pound ground beef (preferably grassfed)
1 (4oz) can Chopped Green Chiles
1 teaspoon kosher salt
1/2 teaspoon coarse black pepper
1/2 teaspoon cumin
10 large eggs
1/4 cup unsweetened, full fat coconut milk (shake well to combine)

Steps:

  • Preheat oven to 375 degrees. Heat a large skillet over medium-high heat with 1 tablespoon oil, add the ground beef and onions and brown the meat, while breaking it up with a spoon, until cooked through and no longer pink, about 5-7 minutes. Add the chopped green chiles, kosher salt, pepper, and cumin and toss to coat evenly. Evenly distribute the meat mixture into a greased muffin tin (or lined with muffin liners). In a bowl, combine the eggs and coconut milk and whisk until well combined and frothy. Now, pour the egg mixture over the beef until it is almost full in each muffin cup. Bake for 20 minutes.

1 (16 ounce) package large egg roll wrappers (such as Nasoya®)
2 (7 ounce) cans whole fire-roasted mild green chiles (such as La Victoria®), or more to taste
1 pound shredded pepper Jack cheese
1 ½ cups canola oil for frying

Steps:

  • Place eggroll wraps on a work surface. Place 1 whole green chile diagonally on the wrap. Add about 2 tablespoons pepper Jack cheese, or enough to cover chile. Fold bottom corner over filling. Roll snugly halfway to cover filling. Fold in both sides snugly against filling to look like an envelope; moisten edges of last flap with a moistened finger. Roll wrap up and seal top corner using water again to moisten edges to make them stick. Lay flap-side down until ready to cook. Repeat with remaining ingredients.
  • Heat canola oil in a deep saucepan over medium heat to 350°F. Lower eggrolls with the flap side down carefully into the hot oil in batches. Fry until golden, turning occasionally, 2 to 3 minutes. Transfer to a plate lined with paper towels to drain. Repeat with remaining eggrolls.

2 large sweet onions, halved and thinly sliced
4 tablespoons packed brown sugar, divided
1 tablespoon paprika
1-1/2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon pepper
1 boneless beef chuck roast (about 3 pounds)
2 tablespoons canola oil
1 can (28 ounces) green enchilada sauce
Mashed potatoes, optional

Steps:

  • Place onions and 3 tablespoons brown sugar in a 5- or 6-qt. slow cooker. Combine remaining brown sugar and the next 6 ingredients; coat beef with mixture., In a large skillet, heat oil over medium-high heat; brown beef, 1-2 minutes on each side. Transfer to slow cooker; pour enchilada sauce over beef. Cook, covered, on low until beef is tender, 7-9 hours. Remove beef; shred meat with 2 forks. Return to slow cooker; heat through. If desired, serve over potatoes.

3 lb boneless beef chuck, trimmed and cut into 1 1/2-inch pieces
1/2 teaspoon black pepper
2 teaspoons salt
2 tablespoons vegetable oil
2 large white onions, chopped (4 to 5 cups)
3 garlic cloves, finely chopped (about 1 tablespoon)
1 tablespoon ground cumin
1 (28-oz) can whole tomatoes in juice
2 to 2 1/2 cups water
1 lb fresh New Mexico green chiles or Anaheim chiles (8 to 10), roasted and peeled
Accompaniments: cooked pinto beans and rice

Steps:

  • Pat beef dry and season with pepper and 1 teaspoon salt.
  • Heat oil in a 10- to 11-inch-wide (5- to 7-quart) heavy pot over moderately high heat until hot but not smoking, then cook beef in 2 or 3 batches, turning occasionally, until browned, 6 to 8 minutes per batch. Transfer as browned to a bowl using a slotted spoon.
  • Add onion and garlic to fat in pot and cook over moderately high heat, stirring and scraping up brown bits, until softened, about 8 minutes. Add cumin and remaining teaspoon salt and cook, stirring, 2 minutes. Return beef (with any juices accumulated in bowl) to pot and stir in tomatoes with juice and enough water to cover meat, then bring to a simmer.
  • Discard seeds, ribs, and stems from chiles, then cut lengthwise into 1/3-inch-wide strips. Add chiles to stew and gently simmer, uncovered, stirring occasionally to break up tomatoes, until meat is very tender, about 3 hours.
