2 (10 ounce) bags frozen cauliflower rice
8 ounces sour cream
4 ounces quesadilla cheese
4 ounces chopped green chilies

Steps:

  • Preheat oven to 350 degrees.
  • Cook cauliflower in microwave per instructions on package.
  • Drain excess water from cauliflower in colander while preparing sour cream mixture.
  • Mix sour cream, chilies and cheese in small saucepan until heated through.
  • Add drained cauliflower and cilantro, if desired.
  • Transfer to a casserole dish and bake uncovered for 30 minutes or until bubbly.
  • Top with additional cilantro, if desired.

Just in time for Christmas! I have NEVER served this in 25 years without raves or requests for the recipe. Note: the sour cream and cheese can be lowfat if you wish.

1 (6 ounce) package dry instant long grain and wild rice mix
1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • Prepare the instant long grain and wild rice mix according to package directions.
  • Spread 1/2 the cooked rice mix over the bottom of the prepared baking dish. In a bowl, mix the sour cream and green chiles. Spread 1/2 the sour cream mixture over rice, and top with 1/2 the cheese. Repeat the layers.
  • Bake 25 minutes in the preheated oven, or until bubbly.

  • Preheat oven to 325 degrees. Butter or grease a 9x9 pan or medium casserole dish and set aside.
  • Melt butter in a medium sauté pan over medium high heat. Add celery and onions and season with 1 tsp salt. Cook for 5-7 minutes or until veggies are tender. Turn down heat to medium and add cream to the pan and stir constantly and reduce by half, until thick and creamy and set aside.
  • In a large bowl combine dried cauliflower rice, ½ cup of each cheese, drained chiles, sour cream, veggie/cream mixture and seasonings and stir till incorporated. Spread mixture evenly in the prepared pan and top with remaining cheese. Bake at 325 for 20-25 minutes or until bubbly…Enjoy!
