SWEET AND SPICY GREEN OLIVE PIZZA
This pizza is literally perfect for any taste buds. Want something sweet and salty? Check. How about something with heat? Also check. Just want a really good pizza? This sweet and spicy green olive pizza hits the spot.

Steps:
- Preheat oven to 500°F for at least 1 hour before baking. If using a pizza peel, allow the peel to heat up in the oven for at least 30 minutes before baking on it.
- Stretch out your dough onto a pizza peel dusted with flour. If you don't have a peel, you can use a baking sheet lined with parchment paper. Sprinkle the crust with the bagel seasoning, if using
- Spread a thin layer of the Colavita crushed tomatoes on top of the dough.
- Place the torn pieces of mozzarella cheese on top of the crushed tomatoes.
- Add slices of salami (about 6 per pizza) and dollops of the green olive paté.
- Drizzle with 1 tbsp Colavita olive oil and sprinkle with sea salt and slices of jalapeno.
- Slide your pizza from the peel onto the stone in the oven (or place the baking sheet in oven) and bake for 8-10 minutes (individual ovens will vary, so keep an eye on your pie!), until the crust is golden brown.
- Remove from the oven and slide onto a cutting board.
- Drizzle with Maple UnTapped (about 1 tbsp per pizza), slice and serve. Note: 1/4 cup maple syrup = 2 Maple UnTapped packets

- Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
- Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

- Heat it up:Set up a grill with heat source, coals or gas, on one side over medium-high. Clean and lightly oil hot grill.
- Stretch it:On a lightly floured work surface, stretch or roll 1 piece Basic Grilled Pizza Dough or 4 ounces store-bought dough into a 10-inch-long oval or other desired shape. Brush one side lightly with Herb Oil or olive oil and season with salt and pepper.
- Grill it:Using your hands, place dough, oiled side down, directly over heat source. Brush dough with herb oil or olive oil and cook until underside is lightly charred and bubbles form all over top, 1 to 2 minutes. With tongs, flip dough and cook until lightly charred, 1 to 2 minutes. Slide dough to cooler side of grill.
- Top it:Top with sausage, olives, rosemary, and mozzarella; cover grill. Cook until cheese melts and toppings are heated through, 2 to 5 minutes.

- Mix water with yeast and sugar in a large mixing bowl, set aside for 5 minutes to let it bloom.
- Add the garlic, oil, salt and herbs.
- Add about 1 1/2-2 cups flour, mix well.
- Pour onto a floured board, add remaining flour as needed,.
- knead for about 5 minutes (this dough is really soft).
- Cover with the mixing bowl.
- let rise about 20-30 minutes or until doubled in bulk.
