ROSETTA'S GREEN BEAN AND POTATO SALAD

Steps:
- Put the potatoes in a large pot; add water to cover by 2 inches. Cover the pot and bring to boil over medium-high heat. Cook until the potatoes are cooked through, about 30 minutes. Drain and let cool slightly.
- Meanwhile, bring another large saucepan of water to a boil; salt generously. Blanch the green beans until crisp-tender, 2 to 3 minutes. Drain and then shock in an ice water bath to stop cooking.
- When cool enough to handle, cut the potatoes into 1 1/2-inch chunks and place in a large serving bowl. Add the green beans, red onions and tomatoes and toss together. In a small bowl, whisk together the vinegar, olive oil and dried basil. Pour about three-quarters of the dressing over the salad and toss to combine. (The potatoes should break up a bit and coat the salad.) Add salt and pepper to taste. Serve at room temperature, garnished with torn basil.
GREEK GREEN BEAN SALAD WITH FETA AND TOMATOES
This cold green bean salad is made with feta cheese and tomatoes and is one of my favorite salads for a picnic or a barbeque. I make this amount for 2 or 3 people, but you can easily double or quadruple the recipe.

- Bring a pot of lightly salted water to a boil and cook beans until they are soft, 10 to 15 minutes. Drain well. Combine green beans and tomatoes in a large bowl
- Stir together olive oil, white balsamic vinegar, salt, and pepper in a small bowl. Add shallot, parsley, and garlic. Pour dressing over beans and tomatoes and mix. Mix in crumbled feta cheese. Allow to sit for 20 minutes before serving.

Steps:
- Cut salami into 2 inch by 1/4 inch thick sticks, put into mixing bowl.
- Trim tips and ends from green beans. Cut into pieces about 3 inches long. Steam for 10 mins or until beans are tender. Drain. Combine beans with the salami in bowl. Add the sliced green onion.
- Cut tomatoes into wedges and add to the green bean mixture in bowl.
- For the dressing, put the mustard and vinegar into a small mixing bowl. Add salt & pepper. Slowly whisk in the olive oil until mixture is creamy.
- Pour dressing over salami & vegetables. Turn over gently with spatula until all pieces are coated.
- Cover and refrigerate for two hours or more.
- NOTE: Recipe can be doubled or halved.

SANDY D'AMATO'S SAUTEED GREEN BEANS WITH SHALLOTS AND NUTMEG
Found this in the local paper as one of the best recipes of 2007. Wanted to save to try when I get shallots from my CSA this summer. Prep time is an estimate.

Steps:
- Remove stem ends from beans, put beans in a bowl and cover with water. Set aside until water comes to room temperature.
- Drain beans, then cook in a gallon of boiling salted water until done, 3 to 5 minutes depending on thickness. Beans are done when they still have a slight raw flavor but are crisp and bright green.
- As soon as beans are done, remove from pot and shock in ice water. Drain, and if desired, refrigerate until ready to use.
- To prepare: Place beans and remaining ingredients in a large saute pan and place over medium-high heat.
- Saute, stirring occasionally, until water is evaporated and butter coats beans and cooks shallots, about 2 minutes.
- Continue sauteing 1 to 2 minutes (possibly longer if beans are cold from the refrigerator) or until beans are heated through. Adjust seasoning to taste ans serve.
GREEN PAPAYA SALAD (SOM TAM MALAKOR)
This papaya salad is light and refreshing. I can easily eat a giant bowl of it and be completely satisfied. And as an extra bonus, this salad is pretty healthy. I sometimes add extra chiles because I enjoy a lot of heat. That's what is great about this recipe, it is easily customized to suit individual tastes.

- Preheat the oven to 350 degrees F (175 degrees C). Place peanuts on a baking sheet.
- Toast in the preheated oven until fragrant and browned, 7 to 8 minutes. Let cool for 5 minutes.
- Grind roasted peanuts, Thai chilies, garlic, dried shrimp, and sugar in a mortar and pestle or food processor. Stir in lime juice and fish sauce to make dressing.
- Toss papaya, tomatoes, green beans, and carrot with dressing. Season with salt and pepper.

PASTA SALAD

- Make the dressing: Combine vinegar, garlic, oregano and a big pinch each salt and pepper in a large bowl. Whisk in oil; taste and add more salt, pepper or vinegar as needed. Set aside.
- Prepare the pasta: Bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions until the pasta is al dente. Drain well, transfer to the large bowl, and toss with the dressing while still warm.
- Add tomatoes, mozzarella, salami, olives, cucumber and onion to the bowl and toss well; fold in herbs. Taste and season with more salt, pepper and vinegar, if you like.
- Drizzle with olive oil and top with cracked black pepper just before serving.

- Bring a medium sized pan of salted water to a boil. Add the whole green beans and cook until “crisp tender” about 3 minutes, depending on size. Don’t overcook! Drain and let cool.
- In a small mason jar with tight fitting lid, combine dijon mustard, vinegar, shallots and garlic. Secure lid tightly and shake to combine. Slow stir the olive oil in a small whisk- or put lid back on and shake again!
- Add the tomato wedges and cooled green beans to a serving bowl. Pour dressing over and toss to combine. Season generously with salt and pepper. Sprinkle with basil and stir! Salad can be served cold or at room temperature.
