AFRICAN STEWED SPINACH
This is spinach cooked the African way with ethnic flavours. It makes a great side dish.

Steps:
- Pour oil into a pot and heat on medium heat then saute the onions until translucent. Add in tomatoes and fry until acidity is all gone. Be sure to stir from time to time so the tomatoes don't burn.
- Add crayfish into the pot and stir. This will bring out a lovely aroma from the crayfish.
- Scatter in the Maggi, sprinkle in salt, add smoked turkey and dried fish or whatever meat/fish you are using. If it is too dry at this point, add a tablespoon of water and stir.
- Add in the spinach and mix well with the other ingredients until well incorporated. Let is sit on the fire for 5 minutes, as you stir lightly from time to time.
- Serve warm with boiled plantains, cassava (yuca roots), yams or even rice.

Posted for ZWT. I haven't made this yet so the yield and time to make are a guess. Use collard greens, kale, mustard greens, swiss chard or spinach.

Steps:
- Heat oil in large skillet over medium-high heat. Saute onions and garlic until soft, add cayenne pepper and reduce heat.
- Add greens to pot. Cover and cook over medium heat for several minutes. Stir greens often but otherwise keep pot covered.
- Add broth, cover and cook over low heat until greens are tender (10-20 minutes longer) Season to taste and serve hot.

Steps:
- Blend tomatoes, red bell pepper, habanero pepper and half of the onion together using a food processor.
- Chop up the other half of the onion and set aside.
- If using fresh spinach, chop it up, wash and squeeze, and leave in a colander. If using frozen spinach, microwave for a few minutes.
- Wash and drain the mushrooms.
- Heat palm oil in a pot on medium heat, add in your onions and stir for about 2 minutes.
- Add in your blended tomato and pepper mix and stir for about a minute.
- Add the bouillon powder, crayfish, black pepper, cayenne pepper and salt, and cook on medium heat for 5 minutes.
- If using fresh spinach, add stock or water and bring to a boil.
- Add the goat meat, mushroom, and any other meat you desire and let boil for another 5 minutes.
- Add the spinach and stir intermittently for about 5 minutes.
- Add more salt or spices if desired.
- Garnish with red pepper flakes, if you want it spicier and enjoy!

- Remove mustard green leaves from the stem. Then wash, rinse and chop into large chunks. Repeat until all mustard greens have been removed from its stem. Discard stem and reserve chopped leaves.
- Heat up a medium or large dutch oven. Then add chopped bacon, cook for about 5-6 minutes or until brown.
- Add about 1 tablespoon oil - there should be about 2 -3 tablespoons grease in the pot. Add onions, garlic , chopped smoked turkey , and sauté for about 3-5 minutes.

- Fill up a large bowl or kitchen sink with cold water and thoroughly rinse turnip greens. (About 2-3 times) Remove large, tough vein and slice greens. Then bring a large pot of water to boil. Add greens and cook for 7-10 minutes until just tender.
- Pad dry chicken thighs with a paper towel and transfer into a bowl. Add in all dried spices, maggi, salt and canola oil. Thoroughly rub chicken until completely coated. Let marinate for 15-20 minutes.
- Bring 2 and a half cups of water to a gentle simmer in a medium sauce pot. In a separate bowl, mix 2 cups of cornmeal with about 2 cups of room temp water. Carefully add into simmering water. Reduce heat to medium and use a strong wooden spoon to stir occasionally. Cook for about 7 minutes; it will thicken. Then add in 1/3 cup of warm water, cover and cook for another 5-7 minutes. Use dominant hand and mix thoroughly, breaking any chunks until smooth.
