GRILLED APPLE CRISP

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Add the apples to a 10- to 12-inch cast-iron skillet, filling it almost to the top. Combine the flour, oats, sugars, cinnamon and salt in a large bowl. Cut the butter into small cubes and add to the flour mixture. Using your hands, press the butter into the dry ingredients until it forms a course crumble. Sprinkle evenly over the apples.
- Place the skillet over indirect heat, cover the grill and cook until the apples are completely tender when pierced with a knife and the crumble is golden brown and crispy, 30 to 40 minutes. Serve warm or at room temperature.
- (Alternatively, you can bake this in an 8-inch square cake pan in a 350 degrees F oven for 45 minutes to 1 hour.)

- Place the apple slices on a double thickness of heavy-duty foil (about 24x12 in.). In a small bowl, combine the oats, brown sugar, flour, cinnamon, nutmeg and cloves; cut in butter until mixture is crumbly. Sprinkle over apples. , Fold foil around apple mixture and seal tightly. Grill, covered, over medium heat for 20-25 minutes or until apples are tender. Open foil carefully to allow steam to escape. Serve warm with ice cream if desired.

BAKED APPLE WITH CRISP TOPPING

- Preheat oven to 350 degrees F.
- Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

LOOPY'S BAKED APPLE CRISP
I created this recipe myself, and it's the first one I'm submitting to the site. The cream cheese mixture turns almost into a caramel sauce when baked, not 'cream-cheesy' at all. This is delicious by itself, or it would be great served with vanilla ice cream or maybe pancakes or waffles, which would also turn this recipe's yield into 4 to 6 servings.

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking dish with cooking spray.
- Stir cream cheese, brown sugar, maple syrup, walnuts, cinnamon, vanilla extract, nutmeg, and allspice together in a bowl until well mixed.
- Place apples, cut-side up, into baking dish, supporting them with pieces from the core underneath if needed. Spoon 1 1/2 teaspoons butter into each cored apple and top each with 1/2 the cream cheese mixture, filling the hole and covering the entire top of apple.
- Bake in the preheated oven until apples are slightly softened, about 35 minutes. Sprinkle apples with granola, pressing granola into filling. Continue baking until apples are cooked through and granola is browned, about 10 more minutes.

- Preheat oven to 350 degrees F. Spray 2-quart casserole dish with nonstick cooking spray. In large bowl, toss apple slices with granulated sugar, lemon juice and 2 teaspoons cinnamon. Spoon into prepared dish. Spread applesauce evenly over apple mixture.
- In medium bowl, combine oats, brown sugar, flour, evaporated milk, dry milk powder and remaining 2 teaspoons cinnamon. Spread over applesauce.

BEK'S BAKED APPLE CRISP
This recipe is my own version, modeled after my own apple pie. Usually, this is made using ingredient amounts that basically include a pinch and a dash, a squeeze and a scosh. Finally, I made myself slow down and kind of measure everything out so that I could post it here. These are, of course, approximate. I've written this to make four individual crisps, the way we eat it, but if you want to make one big crisp, just add 10 minutes to the baking time. I don't use nuts, but if you want to add some nuts such as pecans to the topping, just replace about a 1/4 cup of the oats with them. Also, I'm not a huge fan of very sweet desserts - this even pushes the limits for me. If you prefer sweeter desserts, increase the sugars in the filling to your taste.

- Preheat the oven to 375°F Butter 4 individual casserole dishes. (If you choose to make one large crisp, you'll increase baking time by about 10 minutes.) I often forget the butter. No biggie.
- I love to cook, but hate doing dishes, so I make this all in one pot. In a medium pot (NO HEAT!) combine apples and lemon juice and toss well to coat. Add in the rest of the filling ingredients, brown sugar, white sugar, flour, cinnamon, nutmeg, and cloves. Stir well to combine, breaking up any lumps of sugar or flour.
- Pour equal amounts of apple mixture into the four casseroles. They should be about half full. Set aside.
- In the same pan (see? one less bowl to wash!) melt the butter over medium lo heat. Once butter is melted, turn off heat.
- Add in remaining topping ingredients: oats, flour, brown sugar, cinnamon, salt, and nuts if you're using them. Stir to combine well, again, breaking up any obvious lumps of sugar or flour.
- **The topping should not be "wet", but if it seems TOO dry, and the butter does not seem to have coated all of the oats, then add in an additional tablespoon of butter. It won't hurt anything.
- Pour mixture equally over the apples in each dish. They should be almost full, but not overflowing.
- Place the dishes on a cookie sheet, just in case the filling does overflow. Bake for 30 minutes (40 if you're making one big crisp).
- Allow to cool, serve with milk, whipped cream, or vanilla ice cream.
