These beautiful homemade BBQ grilled potato wedges are sure to be your next BBQ party hit. Sliced from russet potatoes, and rubbed in a simple seasoning, these couldn't be any easier to make.

4-6 russet potatoes (medium-sized)
½ cup cooking oil
2 tbsp smoked paprika
¼ cup kosher salt
1 tbsp ground black pepper
⅔ cup potato flakes

Steps:

  • Fire up grill to 400°F (205°C). Open vents and close lid until fully preheated.
  • Slice potatoes in half and then into wedge-shaped eighths.
  • Put raw wedges in a large bowl and submerge in hot water. Leave to soak for 10 minutes. Pat down to dry.
  • Put wedges in a large bowl and toss with cooking oil until coated. Add the salt, paprika, and black pepper. Toss until evenly coated. Sprinkle potato flakes over wedges.
  • Wrap baking tray or sheet in aluminum foil. Transfer wedges to tray and spread out evenly.
  • Grill for 15-20 minutes, turning every few minutes. Close lid between turns. Cook until potato skin has turned crispy and golden brown.
  • Remove from grill and serve immediately.

1 ½ pounds large baking potatoes
¼ cup olive oil
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon chili powder
¼ teaspoon ground cumin

Steps:

  • Cut each potato in half lengthwise. Place each half flesh-side down on the cutting board and cut each half lengthwise again to make 4 large wedges. Cut each wedge in half lengthwise again for a total of 8 wedges per potato.
  • Bring a large pot of salted water to a boil. Add potato wedges and boil for about 10 minutes. Drain in a colander.
  • Whisk olive oil, salt, pepper, onion powder, chili powder, and cumin together in a bowl until smooth. Add wedges and gently toss to coat.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill wedges for 4 minutes. Flip and grill for 4 minutes more.

While we still use the charcoal grill, the extra space allotted to us on the gas grill has made us really branch out with different sides. I created this one knowing we could put the potatoes directly on the grill and not have to make a foil packet to make it fit!

¼ cup olive oil
1 large clove garlic, peeled and crushed
2 tablespoons chopped fresh rosemary, or more to taste
2 tablespoons chopped fresh thyme, or more to taste
4 Idaho potatoes, each cut into 8 wedges
1 teaspoon garlic salt
freshly ground black pepper to taste

Steps:

  • Combine olive oil, crushed garlic, chopped rosemary, and chopped thyme in a covered container; let stand for 2 hours or longer.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Put potatoes in a large saucepan and pour in enough salted water to cover; bring to a boil; cook over medium-high heat until mostly tender, 8 to 9 minutes. Drain potatoes and transfer to a bowl.
  • Remove garlic from the olive oil mixture and discard. Pour oil over potatoes, sprinkle with garlic salt and black pepper, and toss to coat.
  • Place potatoes skin-side down on the grill over direct heat; reserve remaining oil. Grill for 10 minutes; move potatoes to indirect heat until completely cooked, 5 to 10 minutes. Transfer to a serving bowl and drizzle remaining oil over potatoes.

5 large russet potatoes, scrubbed and cut lengthwise into 1 1/2-inch wedges
Coarse salt
Extra-virgin olive oil, for brushing
Sea salt and freshly ground pepper

Steps:

  • Place potatoes in a large pot, and add enough cold water to cover by 2 inches. Generously season water with coarse salt. Bring to a boil, reduce heat, and simmer until a paring knife pierces through potatoes with some resistance, about 5 minutes. Drain in a colander, and pat potatoes dry with a kitchen towel.

To solve that dilemma, this recipe grills thick potato wedge-style "fries" in a rectangular grill basket so that they can be made alongside their protein counterparts.

2 russet potatoes (about 1 1/4 pounds)
3 tablespoons vegetable oil
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/4 teaspoon paprika
Kosher salt and freshly ground black pepper
Ketchup, for serving

Steps:

  • Prepare a grill for medium heat.
  • Poke a few holes all over the potatoes and place them onto a microwave-safe plate. Microwave until they are just tender and a paring knife can easily be inserted but gets a bit stuck before hitting the middle, about 4 minutes. Let cool slightly, about 5 minutes.
  • Cut each of the potatoes into 8 long wedges so that you have 16 total wedges and transfer to a large bowl. Add the vegetable oil, garlic salt, onion powder, paprika, 2 teaspoons kosher salt and a few grinds of pepper and toss with your hands so that the potatoes are evenly covered.
  • Place an 11.5-inch-by-13.5-inch rectangular open grill basket onto the grill. Transfer the potatoes to the basket, making sure they are in an even layer and that a cut-side of each potato is touching the bottom. Cover the grill and cook, flipping the potatoes halfway through, until golden brown and can easily be cut with a fork, 20 to 25 minutes. 2 large russet potatoes, baked
4 tablespoons butter, melted
salt and pepper
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
1 cup sour cream
2 tablespoons prepared horseradish
3 tablespoons sliced green onions
1/2 cup chopped tomato
chopped chives, for garnish

Steps:

  • Cut potatoes in half.
  • Preheat grill to medium heat.
  • Scoop out the pulp, leaving a 1/4-inch thick shell for the toppings. Cut the potatoes into quarter wedges, brush all over with butter and season with salt and pepper.
  • Place on grill and cook until crisp, about 10 minutes. During the last few minutes of grilling, remove potatoes and place on a cookie sheet. Top the potatoes with cheese and bacon and place back on top of grill.
  • While potatoes are grilling, combine the sour cream and horseradish in a small bowl and mix well.
  • Place potatoes on serving plates and top with the green onions, chopped tomatoes and the sour cream horseradish sauce. Sprinkle with chopped chives, for garnish.

4 teaspoons barbecue seasoning (recipe follows)

  • Barbeque rub:.
  • Stir together all the ingredients in a bowl. If stored in an airtight container in a cool, dry place, this seasoning will last for up to 6 months. Makes 2 1/2 cups.
  • Potato wedges:.
  • Preheat the grill to medium heat.
  • Put the potatoes into a large pot of cold salted water and bring to a boil. Reduce the heat, and simmer for about 15 minutes, until the potatoes are just slightly tender but not cooked all the way through. Drain the potatoes, and dry well. Slice them into thick wedges, six wedges per potato.
  • Whisk together the olive oil, barbecue rub, salt and pepper in a large bowl. Toss the potato wedges with the oil and seasoning. Grill the wedges, turning, for about 10-15 minutes, or until golden brown and crisp all over. Season with more salt and pepper before serving.

  • Be careful not to overboil your potatoes! Leaving some resistance in the boiled potatoes is a good idea; you don't want them to fall apart on the grill.
