CHEDDAR AND APPLE GRILLED CHEESE SANDWICHES
The classic combination of tart apples and savory Cheddar transform a basic grilled cheese into a sophisticated sandwich.

- Put 2 slices of bread on a cutting board or work surface. Top each with two slices of cheese, the apple slices, a third slice of cheese and another piece of bread. Press down lightly.
- Heat 1 tablespoon butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Flip with a spatula and add the remaining tablespoon of butter to the pan. Cook until the other side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?

My mother taught me this recipe, and it has become one of my favorite quick meals. I find that Granny Smith apples work best, as well as a crunchy seed bread.

- Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

- In an 8-inch nonstick skillet over medium heat, cook the bacon until crisp, about 5 minutes. Tear in half and set aside.
- Into the same skillet, add the brown sugar, onions and 1 tablespoon of the butter. Cook, stirring as needed, until the onions are golden, about 5 minutes. Transfer to a plate and set aside.
- Build the grilled cheese by spreading one piece of bread with the mayonnaise. Sprinkle half of the grated cheese on top, followed by the onions. Place the apple slices and bacon on top of the onions, then add the rest of the cheese. Spread the other slice of bread with the mustard and put it mustard-side down on top of the cheese. Spread the outside of the top bread slice with 1 tablespoon butter.
- Transfer the sandwich to the skillet over medium-low heat, butter-side down. Spread the top of the sandwich with the remaining tablespoon butter. Toast each side of the sandwich until golden on the outside and the cheese is melted, 3 to 4 minutes per side. Cut in half and serve.
GRILLED CHEDDAR AND APPLE BUTTER SANDWICH
This is an adopted recipe that I found to be a nice twist on the traditional grilled cheese. The original chef's comments are as follows: "For some reason, I put a jar of apple butter in my grocery cart today (childhood nostalgia?)...I can't imagine I'm the only one in the world to come up with this, but I dreamt it up today, and I didn't see it on Zaar...so here it is! My 13-month-old daughter ate it right up and literally screamed for more! I used mild Tillamook cheddar cheese, but I think a sharp white cheddar would be amazing, too. Take care to toast it *s l o w l y* neglected (burnt) grilled sandwiches that are "scraped off" and presented scraped-side-down on the plate, are a dirty trick IMHO."

- The sandwich is assembled in a cold, non stick skillet.
- Butter one side of first slice of bread and place butter-side-down in skillet.
- Place one slice of cheese on bread, then 1 Tablespoon apple butter in the center of the cheese.
- Top apple butter with second slice of cheese.
- Butter one side of second piece of bread and place butter-side-up on last slice of cheese.
- Turn on heat to medium/low heat.
- Toast each side*s l o w l y* and carefully to achieve a gooey inside and toasty-golden outside.
- Eat and repeat!

- Red Onion Mayo.
- Preheat oven to 375 degrees F.
- On a small rimmed baking sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally. Remove from oven and let cool. Transfer to a food processor and buzz until finely chopped. Add the mayo and pulse until smooth and combined.
- Sandwich.
- Preheat a seasoned grill pan or griddle over medium heat. Assemble this sandwich just as you would a traditional grilled cheese sandwich: spread 1 slice of bread with some Red Onion Mayo, then top with 2 slices Cheddar, the bacon, the apple slices, then 2 more slices of Cheddar, finishing with another mayo-slathered slice of bread. Butter the outsides of the bread and transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.
