Steps:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 5-10 minutes, breaking meat into crumbles; drain. , Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low for 8 hours or until the vegetables are tender.

SPICED GROUND BEEF. FOR STUFFING VEGETABLES
A quick and easy spicey stuffing for vegetables. I use peppers, zucchini tomatoes etc. Also this can be baked in the oven with eggs as a good supper dish. Just break the eggs over the meat and cook till eggs are set.

Steps:
- Heat the oil in a pot and add the cumin and mustard seeds, when they start to splutter, add the onions. Fry for 4 minutes.
- Add the ginger and garlic, fry for 1 minute.
- Reduce heat to medium and add the ground beef. Stir fry till the meat is crumbly and the liquid has evaporated.
- Reduce heat to low, add all the remaining ingredient. Stir well. Cover pot with a lid and cook for 10 minutes.
- Stuff vegetables, and bake in oven till veg is done.
- Garnish with chopped coriander leaves.
GROUND BEEF STUFFING CASSEROLE
I don't remember where this came from. If you like stuffing, this is a great version and a meal in itself. A lean beef is better in this.

Steps:
- Mix onion, celery, poultry seasoning and bread cubes.
- Add one can of the soup and the milk.
- Set aside.
- In a large bowl mix the ground beef and the mustard and Worcestershire.
- Add the bread mixture.
- Mix thoroughly.
- Spread into a 9x13 pan.
- Spread the other can of cream of mushroom soup over the top.
- Bake at 375 for about 1 hour (maybe a little less).
- If this starts to get brown on top or looks too dry, cover with foil.

A citrus, spicy version of a traditional ground beef stew I grew up eating. It's refreshing and very filling. Can be served over rice, egg noodles, or mashed potatoes.

Steps:
- Crumble ground beef into a stockpot set over medium-high heat; add Italian seasoning, salt, and pepper. Cook and stir until beef is crumbly, evenly browned, and no longer pink, 7 to 10 minutes. Drain and discard any excess grease except 1 tablespoon of drippings.
- Stir carrots, celery, onion, and garlic into the ground beef and drippings; cook and stir until vegetables are soft, about 5 minutes. Add potatoes, diced tomatoes, chopped tomatoes, peas, corn, green beans, adobo seasoning, rosemary, thyme, and marjoram; stir until evenly mixed. Add beer, water, and beef base; stir well. Stir in cilantro, lemon juice, and bay leaf. Pour 1/4 cup more water over the mixture if needed to moisten mixture, replenishing as needed while cooking.
- Bring soup to a simmer. Cover and cook, stirring regularly, until potatoes are tender, about 1 hour.
