Slices of grilled brioche bread make a simple dessert with warm berries and whipped cream.

Number Of Ingredients 9

Ingredients

3 tablespoons sugar
2 tablespoons bourbon
2 tablespoons water
5 ounces blueberries (1 cup)
5 ounces strawberries, hulled and quartered (1 cup)
5 ounces raspberries (1 cup)
2 tablespoons unsalted butter, room temperature
4 slices brioche (1/2-inch thick)
1/4 cup whipped cream

Steps:

Heat a grill to medium-high. In a large cast-iron skillet, combine sugar, bourbon, and water. Place on grill and cook, stirring, until sugar dissolves. Add blueberries and strawberries and cook until fruit is warmed through, about 2 minutes. Remove from heat and stir in raspberries. Let stand 5 minutes.
Butter both sides of each brioche slice. Grill, turning quickly, until golden brown, about 10 seconds per side. Serve brioche topped with fruit mixture and whipped cream.

8 ounces Granny Smith apples, cheeks removed, sliced 1/4-inch, cored
Vegetable oil
1/4 cup sugar, plus more for sprinkling
2 tablespoons brandy
2 tablespoons unsalted butter
1 teaspoon vanilla extract
Pinch salt
1/2 cup apple cider, or more as needed
One 12-ounce loaf brioche, cut into thick slices
1 quart vanilla bean ice cream, for serving

Steps:

Preheat a grill pan over medium-high heat.
Toss the apples with some vegetable oil and add to the grill. Grill the apples on all sides, about 3 minutes. Once the apples are grilled, remove from the pan and roughly chop. Add the chopped apples to a saucepan and turn the heat to medium-low. Add the sugar, brandy, butter, vanilla extract and salt. Once the butter has melted, add the apple cider. Stir to combine the ingredients and continue to cook until the apples melt into a thickened sauce, thinning with apple cider as needed, about 10 minutes.
Brush the brioche with some oil and sprinkle with sugar. Place onto the grill pan and toast on both sides. Remove from the grill and slice diagonally.
Transfer to shallow serving bowls. Serve immediately with the apple caramel sauce and a generous scoop of vanilla ice cream.

1 cup milk
2 eggs
½ cup white sugar
1 teaspoon vanilla extract
½ teaspoon sea salt
12 ounces brioche bread, cut into 3/4-inch cubes
1 pint blackberries, halved
4 ounces cream cheese, chilled and diced
aluminum foil (such as Reynolds Wrap®)
1 tablespoon unsalted butter, melted

Steps:

Preheat an outdoor grill for medium-high heat, approximately 375 degrees F (190 degrees C).
Whisk milk, eggs, sugar, vanilla extract, and salt together in a large bowl. Fold in bread cubes, blackberries, and cream cheese. Set aside until liquid is absorbed, about 15 minutes.
Place a layer of heavy duty aluminum foil or 2 layers of regular aluminum foil on a flat surface. Brush aluminum foil with melted butter.
Arrange bread mixture in the center of the aluminum foil. Bring short ends together; fold over twice to seal. Bring sides in, leaving room for steam to form; fold over twice to seal.
Grill over indirect heat until bread pudding is puffed, liquid is absorbed, and edges are toasty, about 35 minutes.
Remove package from the grill; open carefully using tongs or mitts. Cool for 10 minutes.

4 mini croissants, sliced in 1/2
1/2 cup marshmallow cream
4 thin squares good-quality bittersweet chocolate
Coarse sea salt

Steps:

Over a heated, medium-low grill, toast the croissants for 1 minute. Remove from the grill and spread 2 tablespoons marshmallow cream and 1 chocolate square onto each croissant. Sprinkle with coarse salt and place the top slice of the croissant back to make a sandwich. Place the toasts back on the grill. Close the grill cover and allow the chocolate to melt, about 30 to 45 seconds.
Remove the toasts from the grill and serve warm.
