This Grilled Caprese Sandwich captures all the fresh flavors of summer. You only need a handful of ingredients and 15 minutes, making it perfect for your next camping trip!

2-3 ripe tomatoes
1 tablespoon oil
2 6-inch baguettes (sliced in half lengthwise)
4 oz mozzarella cheese (sliced into rounds)
1/3 cup prepared pesto (or a handful of fresh basil leaves)
Salt + pepper

Steps:

  • Slice the tomatoes into thick rounds and brush with oil. Place onto your grill grate and cook 5 minutes per side, until charred in spots and warmed through. Grill the cut sides of the baguettes if desired.
  • To assemble, spread pesto onto the cut sides of the baguettes, then layer the cheese, tomatoes, and basil if using. Sprinkle with salt and pepper & enjoy!

2 slices sourdough bread
1-2 Tablespoons butter
1-2 Tablespoons basil pesto
1 tomato (, sliced)
2 slices mozzarella cheese (, about 1/4 inch thick)

Steps:

  • Warm a skillet or frying pan over medium-heat. Butter both sides of your bread and then grill one side.
  • Once it has lightly browned, flip bread over to brown other side. Turn the heat to low. Then spread the pesto on the grilled side and the cheese on top.
  • Allow cheese to melt a little, then place tomatoes on top of the cheese followed by the top piece of bread. Turn the heat off if browning too fast and allow sandwich to sit in the skillet until melted.

8 slices fresh whole milk mozzarella cheese
2 roma tomatoes, sliced
2 tablespoons fresh basil, minced
2 tablespoons balsamic vinegar
salt and pepper
1/4 cup olive oil
3 tablespoons fresh parmesan cheese, shredded
1/4 teaspoon garlic powder

Steps:

  • On four slices of bread layer the mozzerella cheese and tomatoes.
  • Sprinkle with basil, vinegar, salt and pepper.
  • Top with remaining slices of bread.
  • In a small bowl combine oil, parmesan cheese and garlic powder.
  • Brush over both sides of each sandwich and either place on a grill over medium heat, or cook in a skillet until golden brown.

  • Heat a large griddle or skillet over medium heat.
