PACIFIC RIM CUCUMBER SALAD
A cool summertime salad with ingredients from the Pacific rim. The salad has fresh herbs and a rice vinegar dressing. This salad can be served as an appetizer or a side dish. Use a mandolin to thin-slice cucumbers, radishes, and onion.

Steps:
- Stir rice vinegar, sugar, and bay leaf together in a small saucepan over medium heat; bring to a boil. Whisk the boiling mixture until the sugar dissolves completely; remove from heat. Discard the bay leaf. Season with salt and pepper. Set aside to cool.
- Spread cucumber and radish slices onto a layer of paper towels. Sprinkle sea salt over the cucumber and radish slices. Set aside for 10 minutes. Rinse under cold running water and pat dry with paper towel.
- Toss cucumber, radish, sweet onion, tomatoes, chives, cilantro, garlic, and white pepper together in a large bowl. Drizzle rice vinegar dressing over the salad; toss to coat.

PACIFIC RIM CHICKEN

- Prepare broiler, if using.
- To make marinade, combine onion and ginger with soy sauce, sherry, cumin, cinnamon and pepper flakes.
- Wash and dry chicken and combine with marinade, turning to coat meat well. Reserve marinade.
- Prepare stove-top grill, if using. 5. Broil or grill chicken 10 to 15 minutes, until it is cooked through but still tender; turn occasionally.
- Wash and break up frisee and bok choy; wash, stem and slice mushrooms.
- Add vinegar to the remaining marinade and place in skillet with frisee, bok choy and mushrooms. Cook quickly, just a couple of minutes, until greens are wilted.
- Serve the chicken on a bed of the greens and mushrooms.

- Put potatoes in a steamer basket; set in a saucepan over 1 inch boiling water.
- Cover tightly and steam until tender when pierced with a fork, about 20 minutes.
- Spray broiler rack with nonstick spray and preheat broiler.
- Broil chicken breasts 5 inches from heat, turning frequently, until cooked through, about 10 minutes.
- Cool 5 minutes and chop coarsely.
- Cool the potatoes for 5 minutes, then cut in half.
- Place in large serving bowl with chicken.
- Add in bean sprouts, peas, radishes, and bell pepper, toss gently.
- Whisk the vinegar, oil, ginger, soy sauce, and sugar in small bowl.
- Pour over the veggies, toss again and serve at once or refrigerate for up to 1 day.
- 5 Points per serving (2 cups).

- In a small bowl, combine the pineapple juice, soy sauce, horseradish, parsley, 3 teaspoons sesame oil, honey and pepper. Pour 2/3 cup marinade into a large resealable plastic bag; add salmon and green onions. Seal bag and turn to coat; refrigerate for 1 to 1-1/2 hours, turning occasionally. Add remaining sesame oil to remaining marinade. Cover and refrigerate for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, skin side down, covered, over medium heat or broil 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork, basting frequently with reserved marinade.

- Preheat oven to 400ºF.
- Place a large baking sheet in the oven to get nice and hot.
- Toss cut potatoes, EVOO, five-spice powder and grill seasoning together in a large bowl.
- Carefully take the hot baking sheet out of the oven, transfer the potatoes to it and put it back in the oven. Cook until crispy and cooked through making sure to toss around a few times, about 40 minutes.
- While the potatoes are cooking, mix the hoisin sauce and ketchup together in a small bowl and serve alongside the fries as a dipping sauce. Serve the Pacific Rim Potatoes alongside Hula Joes.
