4 Thick slices of country bread
1 Tbsp. unsalted butter, melted or olive oil
4-ounces of Blue cheese - thinly sliced
1 large Bosc or Bartlett pear - thinly sliced
1 cup fresh arugula
Optional: 2 tsp. Dijon mustard

Steps:

  • Brush one side of each slice of bread with butter or olive oil.
  • Form sandwiches with buttered-side out. Spread a thin layer of Dijon mustard on one side onto each sandwich, then add a few slices of pear and pile on some fresh arugula.
  • Top with a thin slice of blue cheese and close the sandwiches.
  • Heat a large nonstick skillet over low heat. Spray lightly with cooking spray. Grill the sandwiches, on low heat until the bread is golden brown, crispy, and the cheese is melted, about 2 to 3 minutes per side.
  • Remove and cut sandwiches in half or diagonally and serve immediately.

12 fresh thyme leaves, or to taste
1 pinch cracked black pepper
6 slices pear (such as Bosc)

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

  • Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. 1/2 teaspoon mayonnaise
1 teaspoon brown sugar
1/2 teaspoon honey
1 pinch cinnamon
1 pinch nutmeg
1 fresh pear, cored, skinned, and thinly sliced
4 ounces thinly shaved ham, sliced
4 slices baby swiss cheese
4 pieces rye bread or 4 pieces whole grain wheat bread
1 tablespoon soft butter

Steps:

  • Combine the first six ingredients and spread onto one side of each of the four slices of bread.
  • To assemble the two sandwiches: On top of 2 slices of bread, with the mustard-mayo combination side up, layer the ingredients as follows: cheese, ham, pear, cheese - and then top with the remaining slices of bread, with the mustard-mayonnaise side down.
  • Next, thinly butter the outsides of both sandwiches.
