GRILLED CHEESY GARLIC BREAD

Steps:
- Preheat grill to low-medium heat.
- In a small bowl, combine olive oil, garlic, red pepper flakes, basil and salt. Brush both sides of the bread with the olive oil and garlic mixture.
- Place the bread on the grill and grill both sides, until golden and crisp; about 5 minutes. Sprinkle the top with cheese and place in the broiler until bubbly and golden, if inside. If outside, cover the grill and cook until the cheese is melted and bubbly. Serve immediately.
GRILLED CHEESY GARLIC BREAD
This takes only minutes to make and is perfect to throw on the grill just before serving dinner. I like to make this with different cheeses, such as Parmesan or Gruyere, or whatever I happen to have on hand. Keep an eye on it constantly, as it tends to burn easily!

- Preheat an outdoor grill for high heat and lightly oil the grate.
- Combine butter and garlic in a bowl and mix thoroughly. Spread butter mixture over 1 side of each bread and place on a baking sheet. Sprinkle with salt and pepper.
- Reduce grill heat to low and place bread, butter-side down, onto grill. Cook until grill marks appear, about 2 minutes, moving bread around every 15 to 20 seconds and watching for flare-ups.
- Turn bread over and sprinkle evenly with mozzarella cheese. Close grill and cook until cheese is melted, 1 to 2 minutes more. Transfer to a baking sheet, cut each bread into quarters, and serve warm.

- Slice bread lengthwise into 2 pieces. Heat grill.
- In blender or food processor, pule butter, tomatoes, pesto, garlic, salt, & pepper until smooth. Scrape into a bowl, stir in 1 cup Provolone.
- Grill bread, cut sides down, about 1 minute, until toasted. Spread butter mixture over cut sides of bread; sprinkle with remaining cheese.
- Grill, cut sides up, over indirect heat on covered grill, 8-10 minutes, until topping is melted. Remove from grill and slice.

GRILLED MUSSELS AND CHEESY GRILLED COUNTRY BREAD

- Preheat grill to medium high. Cut country loaf into slices. Place on grill to toast one side.
- Meanwhile, cover bottom of a large straight sided and heat proof skillet with foil to protect from soot. Place pan on the grill and add all ingredients, except butter, parsley, bacon and black pepper, stirring to mix. Remove bread slices to a cookie sheet, toasted side up and grate some gruyere cheese over the slices. Return bread slices to the grill to toast the other side and melt the cheese.
- While bread slices are toasting, tint skillet loosely with foil and cover the grill, until bread slices are toasted (about 1 minute depending on grill heat. Be sure to check so bread doesn't burn).
- Open grill and remove bread slices to cookie sheet and set aside. Close grill and allow muscles to continue cooking about another 3 minutes. Remove the foil and if some have not opened, give the pot a stir and cook another 1-2 minutes.
- Remove skillet from grill and remove and discard any muscles that have not opened. Scoop remaining mussels into a large serving bowl. Return skillet with liquid to the grill, and let simmer 1-2 minutes to combine flavors. Remove from heat, swirl in butter, and pour liquid over muscles in bowl.
- Sprinkle with black pepper, crumbled bacon (if using) and parsley. Serve with toasted country bread.

GINA'S CHEESY FLAT BREAD

- Preheat the oven to 400 degrees F.
- In a large bowl fold together the goat cheese, cream cheese, garlic and herbs. Season with a pinch of salt and pepper.
- Line a sheet tray with parchment paper and lightly flour a work surface. With a rolling pin, roll the dough into an oval shape that fits a half sheet tray and lay out on the parchment paper.
- Spread dough with the goat cheese mixture, leaving a 1/2-inch edge. Arrange the red onion in a row, overlapping slightly. Repeat with the zucchini.
- Brush the red onion, zucchini, and crust with olive oil. Sprinkle with red pepper flakes, salt and pepper, to taste, and the Parmesan. Bake in the oven for 25 minutes.
- Remove from oven and using a pizza cutter, slice into thin strips for serving.

GRILLED CHEESY OLIVE BREAD

- Prepare a medium-high grill or preheat the broiler.
- Combine the pepper Jack cheese, olives, butter, cream cheese, and garlic powder in a food processor and pulse until smooth. Slather the cheese mixture over the cut halves of bread and sandwich the halves together.
- Wrap the loaf in aluminum foil and place on the grill or, if broiling, under the broiler. Grill or broil, 4 inches from the heat, turning once, for 10 to 15 minutes total, or until the edges of the bread are crisp and golden and the cheese mixture is melted. Slice the bread and serve hot.
CHEESY BAKED OR GRILLED FRENCH BREAD
This is very easy, cheesy, full of flavor and a great make ahead bread loaf for a dinner party, BBQ or just family. I love the hint of goat cheese for a little tang or for a little kick; but you could substitute gorgonzola or blue cheese; or even parmesan or romano too. There are many possibilities, but these are my favorite. But A few minutes on the grill or in the oven and it's done.

- Filling -- In a small bowl, mix the butter, cheeses, scallions, garlic, parsley, and salt. Mix well.
- Bread -- Cut slices approximately 1" apart across the bread. Don't cut all the way through and spread the butter filling in each one of the slices (on both sides of the bread). Wrap in heavy duty foil.
- Bake or Grill -- Wrapped in the foil, bake in the oven at 400 degrees or on the grill (not on direct heat) for 5 minutes top side down first. then flip and continue to cook another 5 minutes. Now, open up foil from the top and cook another 5 minutes to finish melting the cheese and lightly toast the top of the bread. Note, cooking in the oven can take a few more minutes and grilling times can really differ depending on your grill.
