Easy and light pasta with tomatoes and garlic. Cooked chicken breast chunks or shrimp can also be added to sauce for a great main dish!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.
- Pour olive oil in a large deep skillet over high-heat. Saute onions and garlic until lightly browned. Reduce heat to medium-high and add tomatoes, vinegar and chicken broth; simmer for about 8 minutes.
- Stir in red pepper, black pepper, basil and cooked pasta, tossing thoroughly with sauce. Simmer for about 5 more minutes and serve topped with grated cheese.

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender., Drain pasta; serve with chicken mixture. Sprinkle with additional cheese.

- Cook Angel Hair Pasta according to instructions on package.
- Flour chicken breast halves and pan fry in one tablespoon Extra Virgin Olive Oil about 7 minutes per side until golden brown. In a sauce pan heat 1/3 cup extra virgin olive oil over medium heat. Add chopped onion and cook until translucent, add garlic and cook for one minute more. Add the tomatoes with sweet onion and 1T balsamic vinegar, bring to a boil and boil to reduce about 5 minutes. Put angel hair pasta in a large bowl and toss with tomato sauce and fresh chopped basil. Divide pasta between two plates reserving some of the tomato sauce. Plate one chicken breast half on each plate and top chicken and pasta with remaining tomato sauce and a small amount of Italian cheese blend and garnish with basil leaves.

HEAVENLY ANGEL HAIR PASTA

- Combine the tomatoes, spinach, garlic, lime zest and juice in a bowl. Stir in the Tabasco sauce and olive oil, cover and set aside for 20-30 minutes.
- Bring a large pan of lightly salted water to a boil and cook pasta until done, about 10 minutes(less for al dente).
- Drain the pasta and return to clean pan. Add the tomato mixture and toss well. Season with salt and pepper to taste. Add the Parmesan cheese to taste, toss again, and serve in warm bowls, with extra Parmesan on top, if desired. Enjoy!
- Note:.
- You could substitute young sorrel leaves or rocket for the spinach, and lemon juice and rind for the lime.

- In a large saucepan, under low heat, mix olive oil and chopped garlic, stirring constantly until garlic start browning.
- Turn off the heat, add angle hair, toss. Add salt, if necessary, and black pepper to taste.
- Serve with grilled chicken strips and lots of grated mozzarella and parmesan cheese on top.
- Notes:.
- Use extra virgin olive oil.
- When heating the olive oil with garlic be very careful so you don't burn the garlic.
