GRILLED CITRUS AND HERB CHICKEN
This grilled citrus and herb chicken is juicy, tender, and flavored with the best marinade. A super easy dish that's ready in no time!

Steps:
- Place the olive oil, garlic, lemon and orange zest, lemon and orange juice, basil, oregano and thyme in a resealable plastic bag. Seal and shake to combine.
- Place the chicken in the bag, seal and shake until chicken is coated with the marinade.
- Refrigerate for at least 30 minutes or up to 4 hours.
- Preheat the grill or a grill pan over medium high heat.
- Remove the chicken from the marinade and season both sides generously with salt and pepper.
- Grill for 4-5 minutes on each side or until chicken is cooked through.
- Remove from grill and let the chicken rest for 5 minutes. Sprinkle with parsley and serve, with lemon wedges if desired.

- Preheat grill for medium heat and lightly oil the grate.
- Rinse chicken breasts, pat dry with paper towels, and pierce several times with a fork. Place chicken breasts into a large resealable plastic bag and pour in olive oil. Seal and shake bag to coat chicken with olive oil; add rosemary, thyme, oregano, garlic, salt, and black pepper to the bag, seal, and shake again to coat chicken with herbs.
- Grill chicken breasts on the preheated grill until the juices run clear and an instant-read meat thermometer inserted into the thickest part of the meat reads at least 160 degrees F (70 degrees C, about 10 minutes per side.

GRILLED MEDITERRANEAN-INSPIRED CITRUS CHICKEN THIGHS

Steps:
- Whisk olive oil, lemon juice, garlic, thyme, and pepper together in a bowl and pour into a resealable plastic bag. Add chicken thighs, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 30 minutes to 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove chicken thighs from the marinade and shake off excess. Discard the remaining marinade.
- Cook until chicken is no longer pink in the center and the juices run clear, 4 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Place herbs, garlic, ginger, lemon and lime juice, yogurt, olive oil, paprika, salt and pepper in a blender and blend until smooth.
- Place chicken in a resealable zip top bag and add marinade. Seal the bag and ensure all the chicken is coated in the marinade. Refrigerate the chicken for at least two hours or overnight.
- Pre-heat your bbq to medium heat and oil the grills. Using tongs, remove chicken from marinade and place on the grill skin side down. Grill for four to five minutes or until the skin has nicely crisped. Turn the chicken and continue to grill for an additional eight to ten minutes, flipping every few minutes. To ensure your chicken is properly cooked insert a meat thermometer into the thickest part of the thigh. The chicken is done when it reaches 165°F.
