With crisp greens, grilled apples and creamy vanilla yogurt, this salad is sure to be a hit.

2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
3 large apples, cored and cut into 1/2-inch slices
4 cups baby spring field greens
2 containers (5.3 oz each) Greek vanilla yogurt
2 tablespoons chopped walnuts, toasted
Additional ground cinnamon, if desired

Steps:

  • Heat gas or charcoal grill.
  • In large bowl, mix melted butter and 1/2 teaspoon cinnamon. Add apple slices; stir until apples are well coated.
  • Place apples on grill over medium heat. Cover grill; cook apples 5 minutes. Turn apples; grill 3 to 5 minutes longer or until apples are desired tenderness.
  • Divide greens evenly among 4 serving plates. Divide apples evenly over greens. Top each with half a container (about 1/4 cup) yogurt. Sprinkle with walnuts and additional cinnamon.

1/2 cup warm water (110 degrees)
1/2 teaspoon active dry yeast
1 tablespoon extra-virgin olive oil, plus more for bowl and brushing
1 1/3 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt, plus more to taste

Steps:

  • Heat a grill or grill pan until hot. Place water in a medium bowl, and sprinkle yeast on top; stir to dissolve. Let sit until foamy, about 5 minutes. Add olive oil, flour, and salt; combine. Turn dough out onto a well-floured surface, and knead until smooth and elastic, 1 to 2 minutes. Place in a lightly oiled bowl, cover with plastic wrap, and let stand in a warm place for 30 minutes.
  • Turn dough out onto a lightly floured surface. Divide into 4 equal pieces, and roll out each into a 1/8-inch-thick round. Lightly brush both sides of each round with olive oil, and place the rounds directly on the hot grill. Grill the flatbread until golden brown, about 2 minutes per side. Remove from grill, and season with salt.

2/3 ounces wet yeast
5 cups warm water
3 pounds 6 ounces flour
1 tablespoon plus 1 teaspoon salt
1/2 cup minced shallots
1/4 cup sumac
3/4 cup toasted sesame seeds
1/2 cup chopped Italian parsley leaves
1/2 bunch chopped fresh thyme leaves
1 1/2 cup extra-virgin olive oil
1 quart goat yogurt, drained in cheesecloth for at least 4 hours or overnight, refrigerated
1 tablespoon toasted, ground cumin seeds
1/2 tablespoon chopped garlic
1/4 cup chopped mint leaves
1/4 cup chopped cilantro leaves
1/6 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Mix yeast with water. Add flour and salt. Mix for 15 minutes. Add more flour if dough seems wet. Should clean sides of bowl but be semi-sticky.
  • Proof in an oiled container for approximately 1 hour. Roll into 3-ounce balls on a semolina sprinkled sheet pan. Cover and refrigerate.
  • Mix zatar ingredients to combine. Set aside at room temperature.
  • Put drained goat yogurt in a mixing bowl and add the remaining sauce ingredients.
  • Preheat as grill to medium heat.
  • When ready to grill, take a ball of dough and with your hands or a rolling pin, stretch the dough to about an 8-inch circle. Brush lightly with olive oil and grill on medium fire until it starts to puff. Flip and cook on other side for about 1 minute more. Place on a kitchen towel and cover until all doughs are cooked.
  • Take the warm flatbread, drizzle with 1 to 2 tablespoons of zatar, drizzle with yogurt sauce and roll up taco or wrap style. For a more substantial meal, add your favorite grilled meat and top with any combination of your favorite items, like: chopped romaine, sliced red onion, cucumbers, tomatoes, mint, cilantro and/or feta cheese

200g Greek yogurt
½ tsp ground cinnamon (optional)
2 green cardamom pods, pods bashed and seeds finely ground (optional)
1 tsp ground cumin
1 tsp ground turmeric
pinch of chilli flakes, or to taste
2 garlic cloves, crushed
1 lemon, zested and halved
640g pack diced chicken thighs
1 cucumber, peeled, ½ coarsely grated, ½ finely chopped
1 Little Gem lettuce, thinly sliced
4 flatbreads
hot sauce, to serve (optional)

Steps:

  • In a bowl, combine half the yogurt with the spices, half the garlic, the lemon zest and ½ tsp salt. Tip in the chicken and stir well to coat. Cover and leave to marinate in the fridge for at least 30 mins or overnight.
  • Mix the grated cucumber and the remaining garlic into the remaining yogurt, then season with a pinch each of salt and pepper. Set aside in the fridge.
  • Mix the finely chopped cucumber and lettuce together, then squeeze over one of the lemon halves and season with a good pinch of salt. Cut the remaining lemon half into quarters. Heat the grill to high or a large griddle pan over a high heat.
  • Thread the marinated chicken pieces onto metal skewers, put on a tray and cook under a hot grill or in the griddle pan for 10-12 mins, turning often to ensure it cooks evenly and is charred in places. Warm the flatbreads under the grill or in a toaster.
  • Serve the chicken in the flatbreads with the chopped salad and cucumber yogurt. Drizzle with hot sauce before serving, if you like.

1 tablespoon fresh lemon juice
kosher salt, freshly ground black pepper

1/2 cup tomato paste
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cumin
2 tablespoons hot spanish paprika
1 1/2 lbs ground beef
1/4 cup extra virgin olive oil
1 medium red onion, thinly sliced
all-purpose flour (for dusting)
1 lb prepared pizza dough, cut in half, room temperature
cornmeal (for dusting)
2 Persian cucumbers, thinly sliced
cilantro leaf (for serving)
vegetable oil (for brushing)

Steps:

  • Prepare a grill for medium-high heat; thoroughly clean grates and brush with oil. Whisk yogurt and lemon juice in a medium bowl; season with salt and pepper. Set aside until ready to assemble.
  • Mix garlic, tomato paste, cinnamon, cumin, paprika, and 2 1/2 teaspoons salt in a large bowl. Mix in beef and 2 tablespoons olive oil until completely combined. Heat remaining 2 tablespoons oil in a large cast iron skillet on the grill or stove over medium high. Cook beef mixture, stirring occasionally and breaking up large clumps, until browned and cooked through, 12-14 minutes. Add onion and cook until just beginning to soften, about 2 minutes; remove from heat and set aside until ready to assemble.
  • Increase grill to high heat. On a clean work surface lightly dusted with flour, stretch or roll each piece of dough into a 12- x 10-inch oval and transfer to a pizza peel or cookie sheet dusted with cornmeal. (If dough springs back, cover and let rest 10 minutes, then stretch again, resting as needed). Transfer both pieces of prepared dough to grill over direct heat. Cook until first side is charred and dough is dry and stiff, about 2 minutes. Turn and cook just until second side is charred and cooked through, about 2 minutes. Transfer to baking sheet and let cool slightly. Top with cooked beef mixture, dividing evenly. Dollop with yogurt mixture and top with cucumber and cilantro.

2 cucumbers, peeled, halved lengthwise, seeded, cut into 1/4-inch slices
1 cup plain yogurt
1/2 small garlic clove, minced
1 teaspoon dried dill or 1 tablespoon chopped fresh dill
1 1/2 lbs salmon fillets, cut into 4 pieces
1 tablespoon olive oil
salt, to taste
pepper, to taste

Steps:

  • In a medium bowl, combine cucumbers, yogurt, garlic and dill and mix well. Cover and refrigerate at least 15 minutes or up to 6 hours.
  • Preheat gas grill to medium-high. Rub salmon with olive oil and sprinkle with salt and pepper. Oil grill and cook salmon, skin side down, 4 to 5 minutes. Use a wide spatula to flip salmon; grill until just opaque, another 4 to 5 minutes.
  • Season cucumber salad with salt and pepper and serve alongside salmon.
