GRILLED POTATO SALAD WITH BACON VINAIGRETTE



Grilled Potato Salad with Bacon Vinaigrette image

1/2 pound bacon (about 8 strips)
1 tablespoon whole-grain mustard
1 tablespoon light brown sugar
1 teaspoon sherry vinegar
1/2 lemon
Freshly ground black pepper
1 pound mini Yukon gold potatoes, halved
5 scallions
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons roughly chopped flat leaf parsley
Flaky sea salt

Steps:

  • For the dressing: Put the bacon into a large nonstick skillet over medium heat and line a plate with paper towels. Cook the bacon, turning occasionally, until golden brown and crispy, 10 to 12 minutes. Transfer the bacon to the lined plate and transfer the bacon fat to a small mixing bowl. Add the mustard, sugar and vinegar to the warm fat and squeeze in the juice from the lemon half. Whisk to combine and season with black pepper. Set aside in a warm place.
  • For the potatoes: Preheat the grill over medium heat.
  • Place the potatoes in an even layer in a microwave-safe baking dish. Pour in 1/4 cup water and cover tightly with plastic wrap. Steam the potatoes in the microwave on high power until just slightly tender, about 3 minutes. Remove the potatoes and discard any water that remains.
  • Place the potatoes in a large mixing bowl with the whole scallions. Drizzle with the olive oil and sprinkle with the salt and pepper. Toss the vegetables to evenly coat in the oil.
  • Place the potatoes on the grill, cut-side down. Grill the potatoes until tender and caramelized, 7 minutes on each side. Meanwhile, place the scallions on the coolest area of the grill and cook, watching them closely to prevent charring, 1 to 2 minutes on each side. Remove the scallions from the grill and set aside. Remove the potatoes from the grill and place in a large mixing bowl.
  • Cut the grilled scallions into 1-inch pieces and place in the bowl with the potatoes. Crumble the cooked bacon into the bowl. Add the parsley and some sea salt and drizzle generously with the warm bacon dressing, then toss to coat.

½ cup extra-virgin olive oil
1 tablespoon apple cider vinegar

6 slices cooked bacon, chopped
4 green onions, chopped
2 tablespoons minced fresh parsley

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place potatoes in a bowl; add 2 tablespoons olive oil and toss to coat.
  • Cook on preheated grill until tender, about 30 minutes. Cool potatoes, 10 to 15 minutes; cut into quarters.

8 cloves garlic, roasted, peeled and chopped
3 tablespoons red wine vinegar
1 tablespoon honey
Salt and freshly ground black pepper
1/2 cup olive oil
1/2 cup pitted and coarsely chopped kalamata olives
2 tablespoons chopped parsley leaves
2 1/2 pounds red new potatoes, par-cooked and sliced in 1/2 or into rounds
Canola oil
Parsley sprig, for garnish

Steps:

  • Whisk the garlic, vinegar, honey, and salt and pepper, to taste, in a bowl until smooth. While whisking, add the oil until the mixture has emulsified. Pour into a large serving bowl and stir in the olives and parsley.
  • Heat the grill to high. Brush both sides of the potatoes with canola oil and season with salt and pepper, to taste. Grill until lightly golden brown on both sides and cooked through. Coarsely chop the potatoes and add them to the dressing. Toss to coat and serve.

This past weekend I went on a camping trip and my assignment was to bring the potato salad. I wanted it to be absolutely perfect so I started messing around with recipes the week before and threw out a few batches before I came up with this. The roasted potatoes enhance the flavor of the garlic and bacon and makes this a great tasting combination. This is best made at least a day ahead so that the bacon flavor can really combine and penetrate the potatoes. Everyone absolutely loved it and I hope you do to.

5 tablespoons olive oil
6 garlic cloves, minced
5 lbs russet potatoes, washed and diced with skin on roughly the same size
1 teaspoon salt
1/2 teaspoon pepper
1 cup mayonnaise
2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
2 teaspoons parsley flakes, if desired (optional)
6 slices bacon, cooked till crisp and crumbled
2 celery ribs, washed and cut in half and diced
1/2 red onion, finely chopped

Steps:

  • Heat oven to 375 degrees.
  • Mix the oil, garlic cloves, salt, pepper in a large bowl.
  • Add potatoes a few handfuls at a time tossing to coat with each addition.
  • Spread out onto a baking sheet that has been sprayed with pan coat and bake for 45 minutes, sitrring every 15 minutes. Take out of the oven and let cool on the baking sheet.
  • Meanwhile in a small bowl with a wire whisk or fork combine the mayonaisse, white wine vinegar, dijon mustard, and parsley flakes if using.
  • In the larger bowl add the cooled potato cubes, bacon, celery, and red onion. Add the dressing and toss the potatoes to coat. Check to make sure there is enough salt and pepper and adjust to your tastes.
  • Best if refrigerated overnight.

5 medium potatoes
2 teaspoons lemon juice
3 green onions, chopped
2 stalks celery, chopped
8 slices bacon, cooked and crumbled
1/2 cup mayonnaise
1/4 cup white vinegar
2 teaspoons sugar
1 teaspoon dry ground mustard
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Boil unpeeled potatoes until almost tender but not crumbling. Cook and crumble bacon; chop onions and celery. Cut potatoes into thick slices.
  • In large bowl, gently mix together potatoes, lemon juice, onions and celery.
  • In separate bowl, combine remaining ingredients. Pour over potatoes and mix well.
  • Turn mixture into aluminum foil pan (8x8). Cover with foil and grill on medium heat for 20 minutes. Be careful of steam when you remove the foil to serve.

4 medium (4-1/8" long)s green onions, thinly sliced

Steps:

  • Heat barbecue to medium heat.
  • Spoon each variety of potato onto separate large sheet of heavy-duty foil. Drizzle with oil; toss potatoes until evenly coated with oil. Fold foil to make 3 packets.
  • Grill Yukon gold and red potato packets 10 min. Add sweet potato packet to barbecue and grill all for another 10 min. Turn all packets over; grill 10 min. more or until potatoes are tender.
