I don't like fish with dark meat, but I loved this recipe. My fishing guide gave it to me. Hope you like it. Kingfish is also known as King Mackerel.

2 pounds whole kingfish, gutted and washed
2 cups Italian-style salad dressing

Steps:

  • Cover fish with water, refrigerate and let stand for 2 days. Change water every six hours.
  • Two to twelve hours before fish is to be cooked, drain water and cover fish with salad dressing.
  • Heat a grill to medium heat. Remove fish from marinade and place skin side down on grill. Cook until meat is tender and flaky, about 20 minutes.

A classic recipe from the north coast village of Cumana in Trinidad.

4-inch thick Kingfish or salmon steaks
6 Tbsp Creole Marinade
1 tsp turmeric, ground
½ tsp salt
½ cup coconut milk

Steps:

  • 1. Wash, then pat dry fish.2. Marinate fish in Creole Marinade, turmeric, salt and half the coconut milk in a bowl for 2 hours.3. Remove fish from the marinade and add remaining coconut milk to the bowl, mix well.4. Grill the fish on hot coals, basting often with the remaining marinade.5. The fish will cook in 5-7 minutes, depending on the heat of the grill.6.

2 medium mackerel, filleted, skin on
5 garlic cloves, smashed
4 ounces butter
Salt
Pepper
1 or 2 limes

Steps:

  • Preheat an outdoor grill to medium heat and oil the grates with a brush or towel.
  • In a small saucepan, melt the butter and add the smashed garlic.
  • Make 3 deep cuts on each side of the fish. Season fillets generously with salt and pepper. Place flesh side-down and cook for 2 to 3 minutes. Flip fish over and cook for an additional 2 to 3 minutes. Remove from grill and brush with some of the garlic butter (about 2 tablespoons).
  • Squeeze 1/2 of a lime over each fillet and serve immediately.
