Upgrade your dinner with this grilled pollock recipe that features a marinade made of lemon juice, Dijon mustard, and dill.

20 oz thawed, if necessary pollock fillets
cooking spray
for garnish, optional lemon wedges
4 tsp Dijon mustard
¼ tsp ground black pepper
2 tbsp olive oil
1 minced garlic clove
¼ tsp sea salt
¼ tsp granulated sugar
⅓ cup fresh, minced dill
¼ cup fresh lemon juice

Steps:

  • Mix the marinade ingredients in a bowl.
  • Brush the marinade all over each pollock filet.
  • Place the pollock filets in a baking dish. Then, seal it with cling film.
  • Next, transfer the sealed baking dish to a chilled area and allow the fish to marinate for about 20 minutes.
  • Preheat the grill.
  • When done marinating, drain the excess marinade.
  • Then, coat the grill rack with cooking spray.
  • Place the fish filets on the grill rack and cook each side for 4 minutes or until the fish flakes fall off easily with a fork.
  • Serve with fresh dill and lemon wedges. Enjoy!

This wonderful recipe will make your mouth water when you sink your teeth into the lemon butter spiced fillets. Use any type of fish!

½ cup butter
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
  • Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
  • Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve.

Number Of Ingredients 7

4 (6-to 7-ounces) pieces pollock fillet
1/2 cup mayonnaise
2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
1 tablespoon finely chopped shallot
1 1/2 teaspoons anchovy paste
2 teaspoons chopped thyme

Steps:

  • Preheat broiler. Oil broiler pan.
  • Put fish, skin side down, on broiler pan and sprinkle with 1/4 teaspoon each of salt and pepper (total).
  • Whisk together remaining ingredients and spread evenly over top of fish. Broil 5 to 7 inches from heat until just cooked through, 6 to 8 minutes.
