BRAZILIAN GRILLED PINEAPPLE
Favorite at a Brazilian steakhouse in Dallas. Not sure if this is the exact recipe they use but it tastes very close. Great side for kabobs and steak.

Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
- Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.

These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

Steps:
- Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

- Place corinader seeds, cumin seeds, black cardamom, green cardamom seeds, fennel seeds, 2 pieces cinnamon, 4 pieces cloves, and 8 pieces peppercorn in a heavy bottom frying pan over low heat, stirring constantly until the mixture turn a few shades darker and has a sweet aroma.
- Set aside the mixture and let it cool. Transfer the mixture to a spice grinder, and grind to a fine powder. Stir in nutmeg, turmeric and ginger.
- Set your indoor grill to 450°F Once hot, place skewered pineapple and close lid. Cook for three minutes or until golden brown. Remove from grill, and immediately sprinkle each skewer with 1/2 teaspoons sugar and Masala (2.5 ml).
- Grilled Masala pineapple can be used over freshly made Belgian waffles topped with your favorite yogurt and maple syrup.

- Melt butter, sugar and rum in a small saucepan. Grill pineapple on both sides until golden brown, about 2 to 3 minutes per side. Spoon rum glaze over grilled pineapple.
- Whisk together mascarpone and vanilla seeds. Top each slice of pineapple with a dollop of vanilla mascarpone. Garnish with a few fresh blueberries.

- In a large bowl, combine whipped topping, lemon zest and extract. Refrigerate, covered, until serving. In a small bowl, combine oil and cinnamon. Brush over both sides of pineapple slices., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill pineapple, covered, over medium heat or broil 4 in. from heat 5-7 minutes or until lightly browned, turning once. Place pineapple on dessert plates. - 1. Combine the rum, butter, and sugar in a small saucepan and simmer, whisking often, until the sugar has melted and the mixture is slightly thickened, about 10 minutes. (The glaze can be made a few days in advance, cooled, covered, and kept refrigerated. Bring to room temperature before using.)
