GINA'S DRUNKEN GOAT GRILLED CHEESE



Gina's Drunken Goat Grilled Cheese image

Number Of Ingredients 10

4 slices sourdough bread
Roasted Shallot Mayo, recipe follows
1 cup (4 ounces) drunken goat cheese, grated
Baby arugula
Butter, room temperature
1 shallot, peeled
1 clove garlic, peeled
Olive oil
Kosher salt and freshly ground black pepper
1 cup mayonnaise

Steps:

  • Heat a 12-inch cast iron skillet over medium heat.
  • Spread each bread slice with Roasted Shallot Mayo. Add layers of grated goat cheese, a small handful arugula, and finish with more grated cheese, then top with bread. Repeat for the second sandwich.
  • Add the sandwiches to the hot skillet and cook until golden brown and crisp and the cheese is melted, 4 to 5 minutes per side. Cut the sandwich in 1/2 before serving.
  • Preheat the oven to 350 degrees F.
  • Place the shallot and garlic on a square of aluminum foil. Drizzle lightly with olive oil and sprinkle with salt and pepper. Fold up and seal the foil. Place in the oven and roast for 1 hour. Remove and let cool.
  • Add the shallot and garlic to a bowl. Add the mayonnaise and mix together until smooth.

1/2 cup balsamic vinegar
1 tablespoon olive oil
12 slices French bread baguette (1/4 inch thick)
2 medium nectarines, halved
1/4 cup fresh goat cheese, softened
1/4 cup loosely packed basil leaves, thinly sliced

Steps:

  • In a small saucepan, bring vinegar to a boil; cook 10-15 minutes or until liquid is reduced to 3 tablespoons. Remove from heat., Brush oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides. Grill nectarines 45-60 seconds on each side or until tender and lightly browned. Cool slightly., Spread goat cheese over toasts. Cut nectarines into thick slices; arrange over cheese. Drizzle with balsamic syrup; sprinkle with basil. Serve immediately.

½ cup Cabernet Sauvignon
1 cup granulated sugar
½ cup goat cheese
½ cup crumbled Gorgonzola cheese
1 tablespoon milk, or more as needed
4 nectarines
1 tablespoon olive oil

Steps:

  • Combine Cabernet and sugar in a saucepan. Boil until reduced to 1/2 cup. Let syrup cool.
  • Place goat cheese and Gorgonzola in a blender with milk. Blend until smooth. Add additional milk, 1 tablespoon at a time, if necessary.
  • Cut the nectarines in half lengthwise and remove the pits.
  • Lightly brush nectarines with olive oil and place on the grill for 3 to 4 minutes.
  • Once nectarines are cooled, place a spoonful of the goat cheese mousse in the center of each nectarine. Drizzle with Cabernet syrup.
