GRILLED PEACHES WITH AMARETTI
Steps:
- Preheat the oven to 375 degrees F.
- Heat a grill with a single layer of charcoal. When the coals are hot, brush the grill with a little oil to make sure the peaches don't stick. Place the peaches, cut side down, on the grill and cook for a few minutes, until they're slightly charred.
- Place the peaches in an oven-proof dish, sprinkle each half with a little vanilla sugar. Combine the rum and amaretto and drizzle 1/2 of it on the peaches. Bake the peaches for about 10 minutes, until they're very tender. Serve hot, at room temperature, or cold with crumbled amaretti cookies on top or with the cookies on the side. I like to serve them with a dollop of creme fraiche or vanilla ice cream.
- Vanilla Sugar:
- Find a jar tall enough to hold 2 vanilla beans. Fill the bottle with sugar and cover tightly. Store on a pantry shelf. After about 3 months you will have a wonderful ingredient for cooking and baking. Keep adding vanilla beans and sugar to the jar and you will have it for years.
GRILLED PEACHES WITH PROSCIUTTO AND BALSAMIC
Steps:
- Put the vinegar in a small saucepan and bring to a simmer over high heat. Cook until thick and syrupy, stir in the honey and season with salt and pepper, if using. Let cool slightly.
- Brush the peach halves with oil and season with salt and pepper, if using. Place on the grill, cut side down and grill until golden brown. Turn over and grill for 1 minute longer. Remove the peaches from the grill and drizzle with the balsamic. Wrap or stuff each half with a slice of the prosciutto. Sprinkle the basil over the top and drizzle with olive oil.

- In a small saucepan, combine vinegar, honey and salt; cook and stir over low heat until blended, 2-3 minutes. Reserve 1/3 cup mixture for brushing peaches., Bring remaining mixture to a boil over medium heat; cook and stir just until mixture begins to thicken slightly (do not overcook), 4-6 minutes. Remove from heat., Brush peaches with some of the reserved balsamic mixture. Grill, covered, on an oiled rack over medium heat until caramelized, brushing occasionally with remaining reserved balsamic mixture, 6-8 minutes on each side. Serve with glaze and, if desired, ice cream.

- In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
- Transfer the peach halves to individual serving dishes, and drizzle with remaining glaze. Sprinkle with crumbled blue cheese.

GRILLED PEACHES WITH APRICOT GLAZE
When I thought about writing a cookbook, I didn't want to create one like many of the ones I saw on the market already-books that had a bunch of made-up barbecue recipes for things like grilled peaches. Then I realized that I actually do grill peaches in the summertime when I want a little something sweet for dessert! You can read other people's versions, but mine is the best. Tip: Make these when you're already smoking something in the smoker, so it's already hot and you can just lay them in there; don't make it hard for yourself. If you are using wooden skewers, they must be soaked in water for at least 12 hours before using. If you have stainless steel or other metal skewers, soaking is not a concern.

- Heat a smoker to 325˚F.
- Pit the peaches and cut each one into quarters. Place the quarters on skewers. Lay the skewers on a large aluminum pan.
- In a small saucepan over medium-low heat, combine the butter, brown sugar, rum, and preserves. Stir to thoroughly combine.
- Glaze the peaches with the preserves mixture, place the pan in the smoker, and cook for 4 minutes on each side or until the peaches are soft. Serve the peaches atop vanilla ice cream, if you like.

- Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
- Cut each sheet of puff pastry into nine 3-inch squares. Dab a small amount of apricot preserves into the center of each square. Fan 3 slices of peach over the preserves, leaving a slim border of pastry exposed. Spoon a small amount of apricot preserves over the peach slices.
- Bake in the preheated oven, 1 baking sheet at a time, until puff pastry turns golden, about 10 minutes.
- Thin remaining apricot preserves with 2 teaspoons hot water in a small bowl to make a glaze.

Steps:
- Add the balsamic vinegar, brown sugar, pepper, and salt to a saucepan.
- Bring to a boil, lower heat, and simmer 2-3 minutes.
- Lay peaches in a shallow glass dish.
- Pour marinade mixture over the peaches; toss gently or turn to coat.
- Let stand 10 minutes.
- Remove peaches from marinade; reserve 2 tablespoons of marinade mixture and set aside what is left.
- In a small bowl whisk the 2 tablespoons marinade and oil until blended well (this will be used as a vinaigrette so set it aside, too).
- Place peach halves, with cut side down on a greased grill rack, over medium heat.
- Cover with grill lid and grill about 5 minutes on each side or until firm and golden, baste with remaining marinade.
- Serve peaches with vinaigrette.
