- Start charcoal fire or preheat gas grill to medium-high heat.
- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic but not sticky, about 5 minutes.
- Divide dough into 8 portions. Pat or roll dough on a well-floured counter to about 8-inch circles; they do not need to be perfect.
- Brush both sides of crust with additional oil. Using hands, lift each crust carefully and place on grill. Cook for 3 to 4 minutes until bottom is lightly browned and top looks set. Using long handled tongs, remove crust from grill, grilled side up, to a platter or baking sheet.
- Lightly add sauce and top the grilled side of each pizza crust. Excess sauce or toppings makes the pizza hard to handle. Repeat with remaining pizzas.
- Carefully slide each pizza onto the grill. Cook an additional 3 to 4 minutes until bottom of crust is browned and cheese is melted. Remove from grill and serve immediately.

I don't know anyone who can say no to a mini pizza. Here, instead of pizza dough, thinly sliced zucchini rounds provide a healthy base for the marinara sauce and mozzarella. I top each with a small round of pepperoni, which is easily omitted for a lighter, vegetarian snack. These disappear fast, so double the recipe if your crew is extra hungry!

- Line a rimmed baking sheet with aluminum foil, adjust an oven rack to the upper-middle position, and preheat the broiler to high.
- Trim the ends from the zucchini and slice each zucchini crosswise into 1/2- to 3/4-inch rounds (you should get about 24 rounds). Heat the olive oil in a large nonstick skillet set over medium-high heat. Add the zucchini and cook until browned on one side (in batches, if needed), 4 to 5 minutes.
- Transfer the zucchini to the baking sheet, browned side up. Top each zucchini round with 1/2 teaspoon of the marinara sauce, a pepperoni slice (if using), and a piece of mozzarella. Broil the zucchini until the cheese is melted, 2 to 3 minutes (watch the pizza bites closely, as broiler intensities vary).
- Remove the zucchini from the oven and transfer to a platter. Sprinkle with the salt and serve warm.

- Light your grill. It should be medium heat.
- Roll our refrigerated dough (or your own recipe)to desired thickness. Use a biscuit or cookie cutter (can or glass will work too), to make circles of the rolled out dough. (You can re-roll the scraps to use them up too). **** You can have fun by making hearts, stars or other shapes! Place these on wax paper lined pan that has a light sprinkle of flour on it.
- Slice up the cheese and tomatoes. Pull the leaves off of basil bunch stems. Gather up your spices and olive oil... and head out to the grill!
- Put a brushing of olive oil on both sides of dough circles. Place on grill, cook about 3 minutes or until there are nice grill marks. Turn over, sprinkle crusts lightly with garlic powder. Add the tomatoes, then cheese, then basil leaves (one or two leaves). Salt and Pepper to taste. Grill until the cheese melts. (About 3 - 5 minutes), all the while making sure your pizzas aren't burning or near a "hot spot".
- *** If you don't care for these ingredients... make them with cooked sausage bits, pepperoni, veggies that are sauted and a little pizza or spaghetti sauce. How ever your family likes them... *** Don't be afraid of making too many... if they aren't eaten right away... they are good cold or reheated later! *** You can do the prep for this recipe ahead of time so you aren't rushed and can relax and enjoy your family and friends... *** I have made bigger ones using flour tortillas and pita bread... they are good too.

- In a large bowl, combine the flours, yeast, salt and sugar. Add water and oil; mix just until a soft dough forms. Turn onto a floured surface; knead until smooth and elastic, about 5-7 minutes. Grill, covered, over indirect medium heat for 3-5 minutes or until cheese is melted and crust is lightly browned.

- To make dough, mix flour, salt, sugar, and yeast together in a large bowl. Add in oil and water and stir with a large spoon until the dough forms a rough ball.
- Using your hand, dip it in water and vigorously work the dough until it forms a relatively smooth ball. This will probably take 3-4 minutes.
- Let the dough rest for 15 minutes. Then turn it out onto a floured surface and knead it until it is very smooth, but not sticky. It should pass the windowpane test. If it's too sticky, knead in more flour. If it's dry and cracking, knead in water a tablespoon at a time.
- Divide dough into 10 small balls. They should weigh about 4 ounces a piece. Lightly coat each dough ball with olive oil and let sit, covered, at room temperature for 30 minutes. Then transfer to fridge for at least 3 hours or overnight. Remove dough from fridge 90 minutes before making pizzas.
