GRILLED LAMB WITH BROWN SUGAR GLAZE

Steps:
- In a medium bowl, mix brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. Rub lamb chops with the seasonings, and place on a plate. Cover, and refrigerate for 1 hour.
- Preheat grill for high heat.
- Brush grill grate lightly with oil, and arrange lamb chops on grill. Cook 5 minutes on each side, or to desired doneness.

GRILLED PLANTAINS WITH RUM-BROWN SUGAR GLAZE
Steps:
- Heat grill to high. Place rum, brown sugar, and salt in a small saucepan and cook until the sugar has melted and the mixture reduces and thickens slightly. Stir in butter until melted. Remove from the heat.
- Brush plantains with oil on both sides and grill until golden brown and caramelized, about 3 to 4 minutes per side. Brush with the glaze during the last few minutes of grilling. Remove from the grill and brush with more of the glaze before serving.

- Simmer to a glaze consistency.
- Heat BBQ.
- Peel plantain. Cut each into 3-4 pieces on a diagonal. Brush with oil and grill on all sides.
- Watch your grill so as not to burn but start brushing on your sugar glaze and keep grilling on all sides.
- You may salt & pepper
- Should be ready to eat in 10 minutes.
