We love burgers and have them every Saturday in summer. We also have a favorite burrito recipe. One day, we got the bright idea to combine two of our favorite recipe. Voila! Our Southwestern Burgers were created. -Tammy Fortney Deer Park, Washington

1 can (4 ounces) chopped green chilies
4 teaspoons ground cumin
1 teaspoon chili powder
3/4 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon pepper
2 pounds lean ground beef
3/4 pound bulk pork sausage
8 slices Monterey Jack cheese
8 hamburger buns, split, toasted
8 lettuce leaves
1 large tomato, sliced
1 to 2 ripe avocados, peeled and sliced
Mayonnaise or mustard, optional

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef and sausage over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. Top each burger with a cheese slice. , Grill 1-2 minutes longer or until cheese begins to melt. Serve on buns with the lettuce, tomato, avocado and mayonnaise or mustard if desired.

This is similar to the Sante Fe Chicken Sandwich from Carl's Jr, and it's one of the best tasting chicken sandwiches that I have ever made! This recipe has just a little bit of kick as written, but if you really like things hot then you can double the cayenne pepper for a nice spicy sandwich!

24 ounces boneless skinless chicken breasts, halved (typically 2 large breast)
1 cup marinade (Mr. Yoshida's, Lowry's, or similar Teriyaki-style Marinade)
1/4 cup light mayonnaise or 1/4 cup Miracle Whip
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/8 teaspoon cayenne pepper
4 wheat hamburger buns
4 whole canned chili peppers (Poblano preferably, but any mild chili pepper will work)
4 slices colby-monterey jack cheese

Steps:

  • 1. Cut each large chicken breast in half, and pound each half until it is about 1/2 thick throughout the fillet.
  • 2. Lay the chicken breasts in a shallow pan and pour enough marinade to cover them about 1/2 way. Turn over and generously coat both sides of each breast with the marinade, and then cover and let set in the fridge for at least an hour.
  • 3. To make the mayo sauce, mix the light Mayo/Miracle Whip with the cayenne pepper, paprika, and curry power. Mix well, and set aside out of fridge to let the flavors blend.
  • 4. After chicken has marinated for at least an hour, pre-heat the grill on medium heat and place all 4 chicken breasts on the grill.
  • 5. Cook each side for 5-7 minutes, applying extra marinade to each side with a brush if desired.
  • 6. While chicken is cooking, prepare each bun with 1/2 to 1 Tbsp of the Mayo spread on each side of the bun. Place a leaf of lettuce on the top part of each bun. Take 4 whole peppers and slice them open so they lie flat, and set them aside.
  • 6. Once the chicken is almost done (150-160*F internal temp, or 5-6 minutes on each side), place a slice of Colby Jack cheese on each breast and cook for an additional 1-2 minutes until cheese starts to melt.
  • 7. Place the finished chicken breasts on the lower half of the bun and top each one with a pepper, then close up the sandwich and enjoy!

Grilled poblano peppers, sharp cheddar cheese, and chipotle aioli come together with a juicy, grilled hamburger patty and toasted buns to create these majorly flavorful Grilled Poblano Pepper Southwest Burgers. The smokey, charred poblano peppers add a touch of a sweetness and mildly spicy heat that we love, but you could always sub in serrano or jalapeno peppers for even more spice, or cool things down with milder peppers like anaheim or bell peppers.

4 poblano peppers
2 Tablespoons olive oil
2 pounds ground chuck or 80/20 lean ground beef
1 1/2 teaspoon kosher salt
1 teaspoon Freshly ground black pepper
6 slices Sharp cheddar cheese
6 Good hamburger buns
Lettuce
Sliced tomatoes
Sliced red onion
2 egg yolks
Juice of 1/2 a lemon
1/2 teaspoon dry mustard
1/2 teaspoon kosher salt
1 clove garlic (minced)
1 chipotle pepper in adobo sauce (about 1 tablespoon, minced)
2/3 cup olive oil

Steps:

  • Roast the poblano peppers by first rubbing them with a little olive oil. Heat the grill to a medium-high heat, then set the whole poblano peppers over an area of indirect heat area (turn off burners if necessary, or rearrange coals so the peppers aren't directly over the heat source) and close the lid so that they can roast for 10-15 minutes. Turn once or twice to make sure all sides are cooking evenly and the peppers begin to blister.
  • Move the peppers to the direct heat and grill until the skins are charred, turning to get all sides of the peppers. Transfer to a dish or plate and cover tightly with plastic wrap for 10 minutes until cool enough to handle. Peel the charred skin away from the peppers and slice open to remove the seeds and stem. Cut the poblano peppers into large slices to use for topping your southwest burgers.
  • Alternatively, preheat oven broiler to high, then place the poblano peppers on a foil-lined baking sheet and broil about 8 minutes, turning occasionally, until blackened, then continuing to sweat the peppers as described above.
  • To make the burgers, divide the meat into 6 equal portions, about 6 ounces each or roughly the size of a tennis ball. Gently shape into burgers that are slightly larger than the size of the buns you plan to use, about 3/4-inch thick. Make a depression in the center of each patty with your thumb and generously season both sides of each patty with salt and freshly ground black pepper.
  • Heat the grill to medium-high heat, then place the hamburger patties directly over the flames or heat source and grill, covered, for 3-4 minutes on each side for burgers that are medium-rare to medium. If you prefer your burgers to be closer to medium to medium-well done, cook them for 4-5 minutes on each side. During the last few minutes of grilling, top the burgers with the sliced cheese so it can melt and toast the buns.
  • Let the burgers sit for 3 to 4 minutes after removing from the grill so that the juices can redistribute before serving.
  • Assemble the burgers by laying a piece of lettuce on top of the toasted bottom bun, followed by the burger with melted cheese, slices of poblano pepper, tomato slices, onions, and the toasted top bun that has been generously slathered with chipotle aioli.

A recipe for grilled stuffed peppers with poblano peppers that are filled with cheddar and mozzarella cheeses, then grilled until nice and melty. So delicious!

4 poblano peppers
6 ounces cheddar cheese (shredded)
6 ounces mozzarella cheese (shredded)
Oil as needed

Steps:

  • Heat grill to medium heat and lightly oil the grates.
  • Grill the poblano peppers about 10-15 minutes, flipping often, until skins are blackened and charred. Set them into a plastic bag and seal, allowing them to steam and cool.
  • Once cooled, peel away the charred skins. They should come away easily. You do not have to achieve a perfect peel.
  • Slit each poblano pepper from stem to tip and scoop out the innards.
  • Stuff each poblano pepper with 1.5 ounces each of cheddar cheese and mozzarella cheese.
  • Set back onto the grill over indirect heat and cook about 6-8 minutes, or until cheese is nice and melted.
  • Serve!

Number Of Ingredients 13

2 tablespoons extra virgin olive oil
½ cup onions, sliced thick (about half an onion)
½ cup green bell pepper, sliced thick (about half a pepper)
1 small can chipotle peppers in adobo sauce, divided
¼ cup mayonnaise
4 tablespoons fresh cilantro, chopped and divided
1 pound 80/20 ground beef (we love Verde Farms Grass-Fed Beef)
½ teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon chili powder
1 large or two small tomatoes sliced into eight slices
4 slices pepper jack cheese
4 burger rolls (we used brioche burger rolls from our local supermarket but any soft burger roll will work)

Steps:

  • In a medium non-stick sauté pan, heat oil over medium high heat and add peppers and onions and sauté for about five minutes or until they start to soften up and brown slightly.
  • Remove four peppers from the can of chipotle peppers in adobo and chop then add to the cooking peppers and onions.
  • Sauté over medium heat until the vegetables are tender. As it finishes cooking, the mixture may stick a bit so add a little water and scrape the pan with a wooden spoon until finished cooking. Set aside.
  • In a small bowl mix mayonnaise with 2 tablespoons of the cilantro and one teaspoon of the adobo sauce from the can.
  • The remainder of the peppers in sauce can be frozen in a small zip lock bag for some other recipe.
  • Heat an outdoor grill to medium high heat.
  • Mix the ground beef with the remaining cilantro, coriander, cumin and chili powder and form into four patties. Brush a little oil on both sides of each patty along with salt and pepper.
  • Grill to your preferred level of doneness and top with the jack cheese.
  • To assemble, slather the prepared chipotle mayonnaise spread on the bottom half of the roll, then add two slices of tomato per sandwich.
  • Top with the burger with cooked peppers and onions and the other half of the roll.

Kosher salt
Freshly ground black pepper
2 large poblano peppers
2 Tbsp. olive oil
8 slices pepper jack cheese
½ cup chipotle mayonnaise
8 2 oz whole-grain hamburger buns
8 slices curly leaf lettuce

Steps:

  • Preheat oven to 375°F. Place poblano pepper on a baking sheet. Rub each pepper with 1 Tbsp olive oil. Season with salt and pepper. Roast in the oven until the skin of the pepper is blackened, about 15-20 minutes. Remove from the oven, place in a bowl, cover with plastic wrap and steam for 15 minutes. Remove from the bowl, peel, remove the stems and seeds and coarsely chop.
  • Preheat gas or charcoal grill to 400°F. Shape into eight ¾-inch thick patties. Season each side with salt and pepper. Make a small indention in the center of the burger with your thumb. The fire should be quite hot; you should barely be able to hold your hand 3 or 4 inches over the grates. After the coals are gray, spray grates with cooking spray or brush with oil to help keep burgers from sticking.
  • Place burgers on grill and cook about 4 minutes per side for rare, another minute per side for each increasing stage of doneness. Top each burger with a slice of cheese the last 2 minutes of cooking time.
  • Evenly spread 1 Tbsp. chipotle mayonnaise on top and bottom of each bun. Place burgers in buns and top with chopped poblano pepper and lettuce.

This is one seriously delicious cheeseburger inspired by the flavors of the Southwest, personal favorites of mine. A luscious, gooey queso sauce made with Monterey Jack cheese takes the place of sliced cheese and makes a secure bed for roasted and diced poblano chiles. Blue corn tortilla chips give the burger an unexpectedly perfect touch of salty crunch. The queso sauce would also be wonderful as a dip for chips or fries.

1 large poblano chile
2 1/2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
4 hamburger buns, split; toasted, if desired (see below)
12 blue or yellow corn tortilla chips
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/2 cups whole milk
8 ounces Monterey Jack cheese, coarsely grated (about 2 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the chile on a rimmed baking sheet, rub with 1 tablespoon of the oil, and season with salt and pepper. Roast in the oven until the skin of the chile is blackened, about 15 minutes. Remove the chile from the oven, place in a bowl, cover with plastic wrap, and let the chile steam for 15 minutes. Peel, stem, and seed the chile and then coarsely chop it.
  • To make the queso sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; season with salt and pepper. Keep warm.
  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. I didn't know what to make for dinner the other night so I took a look in my fridge and pantry and put this yummy burger together for dinner and make some home made steak fries to go along with it. My Husband tells me that its a new hit in the house and to take this straight to JAP! :) so here you go :) I always get so nervous when making something new, I then have to figure out the measurements in my head to give to you all since I don't use recipes, I make my recipes up !! Enjoy!

- hamburger buns
1 cup(s) grated monterrey jack cheese
1/2 small onion diced
3 medium poblano peppers
pinch(es) salt and pepper
2 tablespoon(s) adobe powder
1 large egg
2 tablespoon(s) worcestershire sauce
1 clove(s) garlic
- lard or butter for frying on stove top, or take to the grill
4-6 slice(s) monterey jack cheese
1 small red onion sliced (optional)
- mayo (optional)

Steps:

  • pre heat grill to 450* or add lard or butter to a med-large frying pan. (Medium heat)
  • Peppers: Fry peppers in a medium pan with lid with oil or lard, until skins are blackened and peppers have doubled in size, remove from heat and let sit, Cool on paper towels. Once cooled, remove skins with the backside of a knife. Slice into strips(topping) and Diced to add to burger.
  • Mix together, beef,onion (diced), grated cheese S&P,Adobe,egg garlic,Worcestershire, and One - two peppers (keep the seeds if you like heat, otherwise discard) Add to grill or frying pan.
  • Divide the meat mixture into 4-6 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.
  • cook to desired degree of doneness, I personally would NOT eat Ground beef other than Cooked thoroughly.
  • Add slices of cheese and more poblano peppers. Set aside on a plate and grill buns (Optional)

  • Heat 1 tablespoon of olive oil in a skillet. Once hot, add the onion and saute for 1 minute. Then add the bell pepper, poblano pepper, and garlic. Season generously with salt and pepper. Saute for 2 minutes, until the veggies have softened slightly. Then remove from the heat, pour into a mixing bowl, and let cool.
  • Once the sauteed vegetables have cooled, add the turkey, parsley, paprika, garlic powder, and onion salt. Stir to combine.
  • Divide the turkey mixture into four even sections and form them into flat round patties, just larger than the buns.
  • Lightly coat a grill pan with olive oil and heat over medium-high heat. Add the burgers and cook for 4-5 minutes per side, until they are browned and the internal temperature reaches at least 165 degrees (this is the cooking temperature for turkey breast). If you like you can slice the onion and grill the slices alongside the burgers.

  • There are two options for making these stuffed poblano peppers: you can either make two foil packs to hold the peppers, or use a greased cast iron skillet. For the foil pack, simply place peppers on a large sheet of foil and roll up the ends up the foil to secure peppers. You may need to use two foil packets for this to fit all the peppers. Alternatively you can grease two cast iron skillets and use that instead.
  • Place pepper halves in foil packs or cast iron skillets arranging so that they fit well and aren’t falling over. Add beans to each pepper half, being careful not to overfill. Top with shredded cheese.
  • To grill: place foil packet or cast iron directly on grill and grill for 20-25 minutes or until peppers are fork tender. It’s okay if some of the beans spill over the edges of the pepper, they’ll still be delicious!
