FRENCH ORANGE POACHED PEARS (POIRE AVEC ORANGE)
A lovely version of poached pears that I learned when visiting France. The syrup creates a marmalade flavor! It's perfect!

Steps:
- In a large saucepan over medium heat, mix together the orange juice, brown and white sugar, vanilla extract, and cinnamon. Bring the mixture to a boil, stirring to dissolve the sugar. Place pears into the syrup, and cover; simmer pears for 1 hour and 15 minutes, spooning sauce over pears every 10 minutes, and turning pears over twice during cooking time.
- Transfer pears to individual serving dishes. Continue cooking the syrup, stirring often, until thickened, about 15 more minutes, then mix in the walnuts. Pour the sauce over the pears to serve.

BAKED PEARS WITH ORANGE CINNAMON SAUCE
The flavours in this dish remind me of Christmas, and for that reason it would be a nice desert around the holidays, but we like it any time of year. It's easily doubled to serve more people.

Steps:
- Core and halve the pears.
- Place them face down in a greased baking dish.
- Whisk together the orange juice, cornstarch, cinnamon, cloves, sugar and water.
- Pour over the pears.
- Sprinkle over the raisins.
- Cover the baking dish with aluminium foil and bake in a 425 F or 220 C oven for 25 minutes.
- This is the time needed to bake fairly hard pears, so if yours are soft you may be able to take them out after 10-15 minutes.
- Take the dish out of the oven.
- Using a spoon, scoop up any juice on the bottom of the pan and drizzle it over the pears.
- Sprinkle over the brown sugar.
- Turn on the top element of the oven and put the pears back in the oven for a couple minutes until they start to brown on top.
- Remove from the oven.
- Divide between two bowls and serve topped with a scoop of vanilla ice cream.

- In a medium saucepan, combine orange juice, sliced orange, cloves, vanilla extract and pears. Set pan over high heat and bring to a simmer. Warm fudge topping in a saucepan or in the microwave until warm. Remove pears from liquid and transfer pears to dessert bowls. Remove cloves from liquid and spoon liquid over pears. Spoon warm fudge sauce over top.
POACHED PEARS WITH ORANGE SAUCE

- 1. In a saucepan large enough to hold the upright pears without crowding, combine the apple cider, water, sugar, orange and lemon zests, and lemon juice. Place over medium heat and cook, stirring often, until the sugar dissolves and the mixture comes to a boil. Remove from the heat and set aside.2. Peel the pears, leaving the stems attached. If necessary, cut a thin sliver off the bottoms so they will stand upright. Place the pears upright in the pan. With a bulb baster or a spoon, drizzle each pear with the syrup. Cover and bring to a simmer over medium-high heat. Cook, basting frequently with the syrup, until the pears can be easily pierced with the tip of a sharp knife, 20 to 25 minutes. Remove from heat. With a slotted spoon, transfer the pears to a shallow serving platter.3. Pour the poaching syrup through a fine-mesh sieve placed over a pitcher. Reserve the zest to use as a garnish. Measure 1 cup syrup and pour it into a small saucepan. (Reserve and chill the remaining syrup for use in other recipes.) Add the orange juice to the saucepan and stir to mix. Place over medium heat, bring to a gentle boil, and boil until reduced to a thick syrup, about 20 minutes. Remove from heat and let cool until just warm. Drizzle 1 tablespoon of the warm sauce over each pear.4. To serve, arrange the pears on individual plates. Place a spoonful of mascarpone next to each pear and spoon the remaining sauce over each pear. Garnish each pear with some of the reserved zest. Garnish each spoonful of mascarpone with 1 tablespoon of the minced ginger and a few flecks of the remaining zest. SPICED PEARS WITH ORANGES AND CARAMEL SAUCE

- Using melon baller and starting from bottom, core each pear. Cut thin slice off bottom of each pear to make level.
- Stir sugar and 1/4 cup water in heavy large saucepan over medium heat until sugar dissolves. Increase heat and boil until syrup is deep amber color, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 5 minutes. Remove pan from heat; whisk in butter, then 2 tablespoons water.
- Stand pears in caramel sauce in saucepan. Sprinkle cinnamon over. Cover and cook over low heat 10 minutes. Uncover; sprinkle with ras-el-hanout. Cover and continue to cook until pears are tender, occasionally spooning caramel sauce over pears and shaking pan so pears don't stick, about 15 minutes. Arrange orange slices around pears; spoon caramel sauce over. Cover and simmer until orange slices soften, about 5 minutes.
- Place orange slices on plates. Stand pears atop orange slices. Spoon caramel sauce over and sprinkle with almonds. Serve warm or at room temperature.

- In a small saucepan, combine the sugar, cornstarch and zest. Stir in orange juice until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened to a syrup consistency. Remove from the heat; whisk in butter.

- With an apple corer or sharp knife, carefully remove core from bottom of pears to within 1 in. of stem, leaving pears whole with stem. Peel the pears., In a Dutch oven, combine the orange juice, water, brown sugar, butter and orange zest. Bring to a boil; add pears. CHAI-POACHED PEARS WITH SPICY ORANGE SAUCE AND HOMEMADE GRANOLA
This spicy fall recipe is perfect for the changing weather. It is easily dressed up or dressed down depending on the occasion. It makes for an amazing dinner party dessert but it is also great the next day for a breakfast parfait or just as a snack as a if you pull back on the spicy honey toping and alternate the poached pears, granola, and coconut yogurt.

- Mix together 1/2 cup brown sugar, honey, juice and zest of 1 orange, cloves, cinnamon, nutmeg, chili flakes, and salt in a small saucepan over medium heat for the sauce. Bring to a boil, reduce heat, and bring sauce to a very low simmer. Simmer for about 5 minutes, then remove from heat and allow to cool for about 10 minutes.
- Meanwhile, combine 3/4 cup walnuts, 3/4 cup pecans, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, and a pinch of salt in a food processor. Pulse until finely ground, 15 to 20 seconds.
- Heat a skillet over to medium-high heat and melt coconut oil. Chop remaining 1/4 cup walnuts and pecans. Add chopped nuts and oats to the hot oil. Toast, stirring frequently, for 1 minute. Add ground nut mixture and mix until combined. Allow to toast until sugar begins to melt, 2 to 3 minutes. Stir in honey and vanilla extract. Remove from heat and allow to cool in the skillet, mixing a couple times as it cools.
- Bring water to a boil in a large pot, add tea bags, remove from heat, cover, and brew tea for 8 minutes. Remove tea bags and discard. Stir 1/4 cup brown sugar into chai.
- Bring tea/water to a boil again over high heat, add pears, reduce heat, and simmer over low heat for 15 minutes. Gently rotate pears with a spoon (pears will be soft - you don't want to puncture the skin) and continue to simmer another 15 minutes. For a stronger spice flavor, leave pears soaking in the chai for an additional 10 to 15 minutes with the heat off.
- To serve, place a heaping spoonful of coconut yogurt into the hole of the pear. Top with granola and drizzle with orange sauce. Garnish with orange zest.

PEARS IN RED WINE SAUCE
Adopted from Steam It, the way nature intended cookbook. My girlfriend is an excellent cook. She cooks all types of ethnic foods, specializing in italian, indian, and homegrown. She does not like to bake but found this cookbook and is such a happy camper. Steaming foods is so much better for us but I never knew to steam desserts such as these. This is a to die for delectable dessert for 1, 2, or company. It is elegant on theplate and such a simple prep, it belies the end product. Please enjoy. cooking time does not include chill time, times overlap with prep I gave myself an hour and was good with that and had time to prep other things for dinner while waiting.

- bring a pan of water to a boil.(large enough to put your steamer in or a casserole dish).
- Meanwhile put the orange rind, juice, honey, wine, cinnamon stick, apple pie spice, vanilla bean and clove and bring to a boil, stirring frequently.
- Remove from heat.
- Peel pears, leaving stem intact, and cut off a small piece rom the bottom so the poears can stand up.
- Put into heatproof bowl or casserole dish and pour wine mixture over them.
- Cover the bowl or dish with tin foil and tie with kitchen string.
- Put the bowl in the steamer and cover with a tight fitting lid. Set the steamer over hte pan and steam for 35-40 min, until the pears are tender.
- Remove the pan from the steamer and let cool completely.
- Transfer to a serving dish standing upright.
- Remove the cinnamon stick, clove, vanilla bean from the wine mixture and bring to a nboil and cook til reduced by 1/2.
- Put the arrowroot or flour into the wine sauce and simmer gently, will make a paste. Remove from pan and let cool.
- Pour the wine sauce over the pears and chill for at least 3 hours.
- Top with whipped cream.

- Combine first 7 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes. Transfer pears to plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.)
- Arrange 1 warm pear and 1 scoop of ice cream on each of 4 plates. Drizzle some poaching liquid over. Sprinkle with biscotti crumbs. Garnish with orange peel strips, if desired, and serve.
