2 tablespoons minced garlic
20 fresh sage leaves, roughly chopped
3 tablespoons olive oil

Steps:

  • Start wood or charcoal fire or preheat gas grill or broiler.
  • Cut along each side of the breastbone of each bird, then straight down through where thigh meets body to get 2 semi-boneless halves from each bird. (Don't worry if skin holding thigh and drumstick together separates.) Combine with all other ingredients in bowl or heavy plastic bag and stir or shake to coat. If time allows, marinate for an hour or so.
  • Grill quail, turning as needed, until browned and cooked through, about 15 minutes. Serve hot or at room temperature.

2 shallots, roughly chopped
1 tablespoon unsalted butter, plus 2 tablespoons, melted (for brushing on quail)
1 small duck breast, with fat left on
1 egg
1/4 teaspoon salt
Freshly ground black pepper
1 tablespoon brandy
1/2 cup heavy cream
2 tablespoons dried cranberries
4 semi-boneless quails
4 tablespoons lingonberries, stirred in sugar, optional

Steps:

  • Preheat oven to 350 degrees F and grill to medium heat.
  • In a saucepan, over medium heat, sweat the shallots in butter until tender, but not browned. Refrigerate the cooked shallots until cold. Cut the duck breast into 1/2-inch pieces. In a food processor, place the duck pieces along with the egg, salt, pepper, cold shallot, and brandy. Puree until mixture is a very fine paste. Add the cream and dried cranberries and pulse the mixture just until it is well incorporated.
  • Spoon or pipe the duck mixture into the cavities of each quail. Shape each quail into its natural shape and secure with a band of aluminum foil or string. Using a pastry brush, brush each quail with a small amount of melted butter and season very lightly with salt and pepper.
  • Grill the quail lightly on both sides and place them in a buttered baking pan. Finish the quail in the oven for about 15 minutes until cooked.
  • Serving suggestions: place the quail on your favorite rice pilaf, couscous or better yet some freshly made spaetzle. Top with a spoonful of lingonberries stirred in sugar (this product is available in specialty food stores from Sweden packed in small jars.)

1 ounce chopped cooked bacon
1 cup collard greens, stems removed
2 ounces white wine
1 teaspoon Dijon mustard
FRESH PARMESAN
polenta
1 shallot, finely diced
1 ounce olive oil
2 ounces quality bourbon
3 ounces chicken stock or low-sodium chicken broth
2 ounces apple cider vinegar
2 ounces honey
2 ounces molasses
1 pear, peeled and diced
1 tablespoon butter
salt to taste

Steps:

  • COLLARD GREENS: Sauté garlic in a little olive oil over medium heat for about 30 seconds. Add bacon and greens, cook for 1 minute, add wine. Turn off the heat, add mustard, set aside. PEAR-BOURBON SAUCE: Over medium heat sauté shallot with olive oil until soft, about 4 to 5 minutes, remove pan from heat and add bourbon and chicken stock. Replace pan over heat, add vinegar, honey, and molasses and reduce to a saucelike consistency. Finish sauce by whisking in diced pears and butter. Season with salt and keep warm. QUAIL: Season quail with salt and pepper. Over a hot gas grill or mesquite fire, grill quail about 4 to 5 minutes on each side (for medium). Assembly Reheat greens, place polenta on two plates and top with the greens. Using a ladle or a spoon, pour the sauce around the polenta and place two quail on each plate. Garnish with more Parmesan. Serve immediately.

1 (8 ounce) bottle Italian dressing
1/2 cup dry red wine
1 (9 1/2 ounce) jar seedless blackberry spread

Steps:

  • Rinse the quail and pat dry.
  • Place in a shallow dish and pour the Italian dressing over the quail.
  • Cover and marinate in the refrigerator for 8 hours, turning occasionally.
  • In a small saucepan, cook the wine over medium heat about 5 minutes or until it is reduced by half.
  • Stir in the blackberry spread until smooth.
  • Set aside 3/4 c for serving.
  • Remove the quail and discard the marinade.

Salad:

1 1/2 teaspoons minced peeled fresh ginger
1 5-ounce package mixed greens
1 large carrot, peeled, cut into ribbons with vegetable peeler
1/4 cup pine nuts, toasted
2 tablespoons sesame seeds, toasted

Steps:

  • For quail:
  • Whisk first 7 ingredients in bowl. Add quail; cover and chill overnight.
  • For salad:
  • Whisk first 6 ingredients in small bowl. Season dressing with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Prepare barbecue (medium-high heat). Grill quail until brown and cooked through, about 6 minutes per side.
  • Place greens, carrot ribbons, pine nuts, and sesame seeds in large bowl. Reserve 3 tablespoons dressing. Pour remaining dressing over salad; toss to coat. Season salad with salt and pepper.

12 tablespoons fresh thyme leaves
6 tablespoons olive oil
6 garlic cloves, peeled and quartered
Freshly ground black pepper, to taste
1 1/2 cups dry red wine

Steps:

  • Wash and dry quail.
  • Combine remaining ingredients and place in noncorrosive container large enough to hold quail. Place quail in marinade, turning to coat both sides. Cover. Refrigerate for at least 2 hours, or overnight, turning occasionally.
  • To cook, heat broiler(s). Cover broiler pan with 2 layers of aluminum foil and arrange quail on foil. If you have only one broiler, you will have to cook the quail in 2 batches. Broil 2 inches from source of heat for 5 minutes on each side. Remove metal frame holding quail open and serve with polenta (see recipe).

My husband loves grilled quail and this is the recipe he uses. I prefer to marinate 8 hours. When cooking game birds, the juices will be slightly pink when thoroughly cooked.

8 (5 ounce) quail
vegetable oil
1/3 cup dry sherry
1/4 cup vegetable oil
2 tablespoons soy sauce
2 tablespoons light brown sugar
1 1/2 teaspoons five-spice powder
1 teaspoon five-spice powder
1/2 teaspoon dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • To make the marinade: In a small bowl, mix together all the marinated ingredients.
  • Put the quail in a large heavy-duty plastic zip-top bag.
  • Pour in the marinade (if one bag isn't big enough, then use two bags and divide the marinade).
  • Press the air out of the bag and seal tightly.
  • Shake gently to distribute the marinade.
  • Refrigerate 1-8 hours and turn occasionally.
  • Take the quail out of the bag and throw away marinade.
  • Pat quail dry with paper towels.
  • Lightly brush the quail with vegetable oil.
  • In a small bowl, add all the seasoning blend ingredients; stir to combine.
  • Sprinkle seasoning blend over quail.
  • Grill with breast side down over INDIRECT medium heat for 15-20 minutes or until the juices are slightly pink (turn once halfway through grill time).
